Desserts

 

Chocolate Ricotta

 

1/2 cup ricotta cheese

2 tbsp raw honey

2 tbsp cocoa or carob powder

1/2 tsp vanilla

1/2 tsp ground cinnamon

 

Combine all the ingredients in a food processor and process until smooth. Scoop into small dessert dishes and serve. Makes 2 half-cup servings.

 

 

Fruit Drops

 

1 cup raisins, dates &/or cherries

1/2 cup dried apricots

3/4 cup dried cranberries

1 3/4 cup crispy nuts

2 Tbs orange juice or other juice

2 Tbs water

1/2 cup powdered rapadura, optional

 

Combine dried fruit and nuts in a food processor and pulse until the mixture is coarse. Add the juice and pulse again until the mixture sticks together, about 15 seconds. Shape the mixture into balls and roll them in the rapadura.

 

Squash Dessert Pudding

 

1 medium butternut squash, peeled, seeded, cooked and mashed

3 tbs coconut oil, melted

dash cinnamon

1 cup pureed fresh seedless grapes, pineapple or seeded and peeled pears

 

Combine in a blender or food processor. Pour into individual baking dishes, and bake at 350 degrees for about 20 minutes. Serves 4.
