Hot Fudge Sauce

 

1/2 cup cocoa powder

2 Tbs cornstarch

1 1/4 cups cream, milk, non-dairy milk or coconut milk

1/4 cup maple syrup

1 tsp vanilla

 

Sift the cocoa powder and cornstarch into a small saucepan and whisk the milk and maple syrup in. Cook over medium heat while whisking constantly for 3 minutes or until thick. Remove from the heat and whisk in the vanilla.  Makes 1 1/2 cups.

 

 

Italian Seasoning

 

1 part sage

1 part onion powder

1 part garlic powder

2 parts oregano

2 parts marjoram

2 parts basil

 

Mix thoroughly and store in a sealed jar. You in place of Italian Seasoning called for in any recipe.

 

 

Enchilada Sauce

 

3 Tbs flour of your choice

3 Tbs coconut oil

3 Tbs chile powder

3 cloves garlic, finely minced

1 large onion, finely minced

1 Tbs ground cumin

½ tsp oregano

3 cup beef or chicken stock

 

Blend flour and oil to make a roux. Cook over medium heat for 3 minutes. Add spices and blend thoroughly. Whisk in stock to make a smooth sauce. Cook until thick, about 15 minutes.

 

 

Breakfast

 

KerryAnn’s Coconut French Toast

 

2 tbs coconut flour

pinch salt

1/2 tsp cinnamon

dash nutmeg

1/4 cup cream, milk or coconut milk

4 eggs

1/4 tsp vanilla

1-2 tsp maple syrup or honey, optional

6 slices bread of your choice

4 tbs coconut oil or butter

 

In a small bowl, sift the coconut flour, salt, cinnamon and nutmeg together. Set aside. In a blender, combine the cream, eggs, vanilla, and maple syrup. Turn blender on lowest setting and pour in the flour mixture. Blend until combined. Pour into a shallow pan. Dip in bread slices one at a time, allow to drip, and fry in the coconut oil or butter until golden brown on each side, turning once.

 

 

Green Smoothies

 

2 pears, peeled, cored and chunked

2 kiwi, peeled

1 large handfull frozen berries

4 leaves dinosaur kale, stems removed

1/2 small bunch parsley

1/2 head romaine, roughly chopped

1 cup water

10-20 drops Concentrace, optional

 

Place all in blender and blend until smooth. Add more water to thin to desired thickness. This one comes out a dark purple when mixed berries are used.

 

 

1 cup frozen Strawberries

1/2 large banana, chunked

1/2 bag baby leaf spinach

1 cup water

10-20 drops Concentrace, optional

 

Place all in blender and blend until smooth. Add more water to thin to desired thickness.
