CURRIED CHICKEN SALAD
A brilliant make ahead curried chicken salad with tart granny smith apples, and sweet raisins, finished with cilantro, this is one you will make over and over!

Steps:
- In a small bowl, blend together the mayo, curry and water until will combined.
- In a larger bowl, add the chicken, apple, celery, raisins, and cilantro.
- Mix the dressing into the chicken mixture.
- Do a quick taste test, and add salt and pepper to taste (I use about ½ tsp each of salt and pepper).
- Chill, until needed.
- Devour.

CURRIED CHICKEN SALAD
Steps:
- Preheat the oven to 350 degrees F.
- Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and dice the chicken into large bite-size pieces.
- For the dressing, combine the mayonnaise, wine, chutney, curry powder, and 1 1/2 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth.
- Combine the chicken with enough dressing to moisten well. Add the celery, scallions, and raisins, and mix well. Refrigerate for a few hours to allow the flavors to blend. Add the cashews and serve at room temperature.

- Assemble the salad by adding all salad ingredients to a large mixing bowl.
- Mix up the curry yogurt sauce in a small bowl by combining the greek yogurt, mayo, lime juice, curry powder, salt and pepper until it forms a smooth thick pale yellow or orange sauce.
- Pour the dressing over the salad and toss everything together.
- Top with more lime juice, cashews and chopped cilantro.
