30 minute ground beef tacos that taste like restaurant tacos. You'll love this recipe for busy nights.

Lean Ground Beef 1.25 to 1.5 pound
3-4 cloves garlic
1 yellow or white onion
1 poblano pepper
1 red bell pepper
1 7 ounce El Tapo de Jalapeno
cumin
salt and pepper

Steps:

  • I prefer chopping my vegetables prior to browning the meat. This is so I can add them right away after browning the ground beef. *If you use anything else you will have to drain the grease after browning, before adding vegetables.
  • Step 1: Finely chop (or use a garlic press) 3-4 garlic cloves. Chop up 1 onion, a polbano pepper (that has been washed and seeded) and a red bell pepper (also washed and seeded).
  • Step 2: Brown ground beef, stirring occasionally and drain if needed.
  • Step 3: Add in garlic, onion and peppers. Saute them until onion is translucent.
  • Step 4: Add El Tapo Sauce and stir until combined.
  • Step 5: Add 1/4 tsp. cumin, 1/4 tsp. black pepper and dash of salt. Then stir and simmer on low about 10 - 15 minutes. I cover mine with a lid when simmering. This keeps meat sauce from drying out.

1 teaspoon minced garlic
1 tablespoon chili powder

Steps:

  • Over medium heat, add the ground beef, 1/2 cup salsa, and a pinch of salt and pepper to a large skillet.
  • Break the meat up into small pieces, and cook 5-7 minutes, stirring often.
  • Remove from heat, and drain any excess liquid or grease off the ground beef.
  • Return the skillet to the heat and stir in the garlic, chili powder, cumin, coriander, salt and pepper, cooking until mixed well and fragrant, approximately 1 minute.
  • Add the remaining salsa and simmer the mixture for about 5-10 minutes, stirring occasionally. Season to taste with additional salt and pepper, if needed.
  • Serve in Good Grains Yellow Corn & Red Bell Pepper Taco Shells and Good Grains Yellow Corn & Spinach Taco Shells, and top with lettuce, tomato, cheese, and Flavor Craver Taco Ranch Taco Sauce

1 cup cooked rice
1 lb lean ground beef
1 red onion (diced)
3 garlic cloves (minced)
½ Tbsp cumin
1 tsp chili powder
1 tsp garlic powder
½ tsp paprika
½ tsp onion powder
¾ cup chickpeas (drained and rinsed)
1 ½ cups shredded cheddar cheese
9-10 hard taco shells (flat bottom work best)
1-2 cups shredded lettuce
1 cup cherry tomatoes
¼ cup sour cream
¼ cup guacamole

Steps:

  • In advance: Cook the rice according to package instructions and the way you normally do (I use a rice cooker). You'll need 1 cup of cooked rice.
  • Preheat the oven to 400°F.Place hard taco shells in a baking dish. Flat bottom taco shells will work best, or if you have a dish with grooves on the bottom like I did. Otherwise the taco shells may not want to stay standing up.
  • Prep all the toppings: shredded lettuce, quartered cherry tomatoes and any sauces you'll be using (sour cream, salsa, guacamole, etc). Shred the cheddar cheese. Set aside for now.
  • Heat a bit of cooking oil in a frying pan over medium-high heat. Add the diced onion and garlic. Cook 1-2 minutes or until onion turns translucent.
  • Add the ground beef and break up into smaller pieces with a wide spatula. Cook until ground beef is no longer pink.
  • Mix in the spices: cumin, garlic powder, chili powder, onion powder, and paprika.
  • Add the cooked rice and chickpeas.
  • Season with salt and pepper if needed.
  • Spoon the ground beef into the taco shells.
  • Add shredded cheese to each taco. Bake in oven for 4-6 minutes.
  • Remove from oven and add toppings: shredded lettuce, sliced tomatoes, salsa, guacamole and sour cream. Serve and enjoy!
  • Leftovers: The rest of the ground beef mixture can be used for more tacos, or added to wraps or taco bowls for lunches.
