4 Ingredient Flourless Healthy Oatmeal Cookies image

A quick and easy recipe that produces healthy soft and chewy oatmeal cookies.

1 cup mashed ripe bananas ((approximately 3 small bananas))
1/2 cup natural creamy peanut butter (unsweetened)
2 cups rolled oats
1/2 cup chocolate chips (or dried fruit)

Steps:

  • Preheat oven to 350°F. Line 2 baking sheets with silicone baking mats or parchment paper.
  • In a large bowl add bananas and peanut butter. Stir until evenly mixed. Add in oats. Stir until evenly combined.
  • Add in chocolate chips or dried fruit. Stir until evenly combined.
  • Using a 1 ½ tbsp cookie scoop, scoop cookie batter and place onto prepared cookie sheets, spacing them about 2 inches apart. Use the palm of your hand to press down and flatten cookie. Cookies will not spread during baking so shape the cookie batter to your desired cookie shape.
  • Bake cookies about 10 minutes or until set. Let cookies cool completely before removing from baking sheets.

This is a no-nonsense oatmeal cookie recipe-no raisins, chocolate chips, nuts, or anything else that might divert attention from the comforting classic.

Number Of Ingredients 10

1¾ cups old-fashioned rolled oats
¾ cup all-purpose flour
¾ teaspoon cinnamon
½ teaspoon baking soda
½ teaspoon salt
1¼ sticks unsalted butter, softened
⅓ cup packed light brown sugar
⅓ cup granulated sugar
1 large egg
½ teaspoon vanilla

Steps:

  • Preheat oven to 375°F. Grease and line 2 baking sheets with parchment.
  • Stir together oats, flour, cinnamon, baking soda, and salt in a medium bowl. Beat together butter, brown sugar, and granulated sugar in a stand mixer or in large bowl with a hand mixer until light and fluffy. Add egg and vanilla and beat until combined well. Add flour mixture and beat until just combined.
  • Drop dough by heaping tablespoons 2 inches apart onto prepared baking sheets and flatten mounds slightly with moistened fingers. Bake cookies in upper and lower thirds of oven, switching position of sheets halfway through baking, until golden, about 12 minutes total. Transfer to wire racks to cool.

  • In a large saucepan over medium heat, melt the butter. Add the brown sugar and oats, stirring and cooking for about 2 minutes. Remove from heat and allow to cool a bit.
  • With a KitchenAid or hand mixer, beat egg whites until stiff, but not dry. Add to cooled saucepan with oats mixture and stir until combined.
  • Using a mini cookie (or ice cream) scoop, place cookies about 2 inches apart on baking sheet. Do not flatten, they will flatten themselves in the oven.
