Beer Burgers With Beer Braised Onions

BEER BURGERS WITH BEER BRAISED ONIONS

an excellent burger and the onions piled on top of the burger are great. this recipe is one of my dh's favorites.

Time: 60 minutes

Steps:

  • onions: melt butter in saucepan over medium-high heat
  • add onions and saute , stirring frequently , until tender , about 5-6 minutes
  • add 3 / 4 cup beer , sugar , and salt
  • cook until all the beer has been absorbed by the onions and they begin to brown slightly , about 18 minutes
  • add the remaining 1 / 4 cup beer and bring to a simmer
  • keep onions warm
  • burgers: in a large bowl , thoroughly combine the ground chuck , tabasco sauce , worcestershire sauce , and salt and pepper
  • gently form into 4 patties , handling as little as possible so as not to make the burgers tough
  • grill burgers to your desired degree of doneness
  • toast buns on the grill
  • serve burgers on the toasted buns topped with the cheese , beer braised onions and ketchup

  • 1/4 teaspoon Worcestershire sauce
  • salt and pepper
  • 4 hamburger buns
  • 4 slices cheese (your choice)

Steps:

  • 1. Heat a large skillet over medium-high heat and add the butter. Let the butter melt and then turn temperature down to medium-low heat.
  • 2. Add onions and let cook for about 10 minutes, stirring occasionally, until tender and translucent. Season with a little salt & pepper.
  • 3. Slowly add the beer and cover the skillet. Let simmer for about 10 minutes.
  • 4. Remove cover from skillet and cook an additional 5 minutes to allow some of the beer to evaporate.

  3. Pour the beer over the softened onions, stir, scrape any browned bits from the bottom of the skillet. Add the beef stock and stir. Add the brats back and make sure they are nicely submerged. Simmer until beer sauce has reduced and the brats are fully cooked (160 F). About 20-25 mins. If you used pre-cooked brats the temperature doesn't matter, just make sure the sauce has reduced.

Place patties sprayed-side down on the grill then cook for 4-5 minutes per side, or until cooked through. Place brat burgers onto buns then top with beer-braised caramelized onions and serve.

  1. Pat beef dry and tie with kitchen string, about 1½ to 2 inch intervals. Generously season beef all over with kosher salt and 1 teaspoon of fresh cracked pepper. Heat 1 tablespoon oil in large heavy pot until it shimmers. Brown beef on all sides, about 15 minutes. Brown well, you want a good crust, not gray meat, this gives the dish tons of flavor. When done browning, transfer to a plate.
  2. Add remaining tablespoon oil to pot, then the onions and bay leaves. Add a generous sprinkle of salt and cook onions until well browned, scraping up any browned bits from bottom of pan and stirring occasionally, about 20 - 25 minutes. Watch closely, if bottom is getting too dark and starting to burn, deglaze and scrape up the fond with a splash of beer. That's what I did and then the bits came right up.
