  1. Wash your oranges thoroughly. Because marmalade is made with the entire orange, peel and all, it is important to get them clean. Remove any stickers. I recommend cutting off any stickers, so there is no residue left. I also cut off the knobby ends where the stems come out. I do recommend using room temperature oranges vs ones right out of the refrigerator.
  2. Grate the entire orange. Some people cut the oranges or chop but I find that to get the perfect balance of sweetness and tang that marmalade offers, making sure the peel is grated rather than chopped is the best method.
  3. Add orange slices and water to Instant Pot. Do NOT add sugar during this step or it will burn. Cook on high pressure for 10 minutes. When the time is up, use the natural release method to release steam.
  4. After the steam is released, add in the sugar and turn Instant Pot to sauté. Cook for 20-25 minutes. It is very important that you stir frequently. If you don’t the marmalade will burn. Once the marmalade it thickened and the temperature is between 223-225 degrees it is finished (this is your “setting point”).

  1. Rinse the oranges under running water. Cut them in a half and squeeze the juice, then collect it in a jar. Remove any white skin remained inside the oranges and cut the zest into thin strips. Put the zests in a large bowl and pur in the orange juice. I got 500 ml of juice and 700 g of zests. Add 2 liters of water and let stand overnight.
  2. The next day, pour the entire content of the bowl into a large pot and bring to the boil. Let it simmer gently covered on low flame for about 1 hour and a half, until the zests become soft.
  3. Add the lemon juice and the sugar and stir with a wooden spoon to melt. Bring it back to the boil and let it simmer gently for at least forty minutes. Check if it is ready: pour a drop of marmalade on a cold saucer from the fridge. If it solidifies and does not slip away when you tilt the saucer, it is ready to be put into sterilized jars.

  1. Preheat the oven to 425°F. Line 8 muffin tins with paper cupcake/muffin liners. In a large bowl, combine the marmalade, grated orange zest, orange juice, vanilla extract, butter flavoring, 8 tablespoons of the butter (melted), and the beaten eggs together using a rubber spatula.
  2. Sift the flour, baking powder, baking soda, salt, and granulated sugar into a separate bowl, then whisk them all together. Gently fold the dry ingredients into the wet ingredients just until it's all combined and the flour is no longer apparent. Try not to over-mix the batter; over-mixing makes muffins dense.
  3. Scoop the batter into the prepared muffin tins, filling the paper cups all the way to the top. In a small bowl, combine the remaining tablespoon of butter (melted) with the brown sugar and nutmeg. Lightly sprinkle the tops of the muffins with this mixture before baking the muffins at 425°F for 5 minutes. Reduce the heat to 375°F, without opening the oven door, and continue letting the muffins bake for another 15 minutes.
  4. Insert a toothpick in the center to test for readiness; the toothpick should come out clean. Let the muffins rest in their pan for about 10 minutes before removing and serving.
