Adobong pusit is a squid dish that uses the popular method of cooking the famous pork adobo here in the Philippines.

1 kg squid (cleaned)
1 pc onion (chopped)
4 cloves garlic (minced)
2 pcs tomato (cut into cubes)
½ cup vinegar
4 tbsp soy sauce
1 cup water
3 tbsp cooking oil (for frying)
salt and pepper (to taste)

Steps:

  • In a cooking pot, pour in the water, vinegar, and soy sauce. Bring to a boil.
  • Add in the squid. Simmer for 5 to 7 minutes. Set aside.
  • In a separate cooking pan, pour and heat the cooking oil over low to medium heat.
  • Add in the garlic, onions, and tomatoes. Saute until cooked through and aromatic.
  • Add the squid into the cooking pan. Then pour in the liquid mixture used to cook the squid. Bring to a boil and simmer for 5 minutes.
  • Season with salt and pepper. Stir until well mixed.
  • Transfer to a serving tray or serving bowl. Serve and enjoy!

2 ¼ pounds squid, cleaned
½ cup white vinegar
½ cup water
salt and ground black pepper to taste
2 tablespoons olive oil
1 small onion, minced
2 cloves garlic, minced
1 tomato, chopped
1 tablespoon soy sauce

Steps:

  • Combine the squid, vinegar, and water in a small pot over medium heat; season with salt and pepper. Cook for 10 minutes.
  • Meanwhile, heat the olive oil in a saucepan over medium heat; cook and stir the onion and garlic in the hot oil until softened, 5 to 7 minutes. Stir the tomato and soy sauce into the mixture. Pour the squid mixture into the saucepan and bring to a simmer; cook together another 20 minutes.

2 lbs squids
1 tbsp olive oil
1 onion, sliced
5 cloves garlic, chopped
¼ cup vinegar
¼ cup soy sauce
3 bay leaves
1½ tsp sugar
salt and ground pepper, to taste

Steps:

  • Clean squids by removing eyes, innards and transparent backbone. Keep ink sac intact. You can slice it into small pieces or leave it whole. Rinse thoroughly and drain well. Set aside.
  • Heat oil in skillet set over medium high heat. Add onion and sauté for 2 minutes. Add garlic; sauté for another minute. Add vinegar, soy sauce and bay leaves; bring to a boil. Add squid and sugar; cook for 2-3 minutes or until squids change color. Season with salt and pepper. Transfer to a serving plate.
  • Serve and enjoy!

Adobong Pusit can be prepared with a short ingredients list; you're only going to need soy sauce (toyo), vinegar (suka), garlic (bawang), onions (sibuyas), bay leaf (laurel), ground black pepper (durog na paminta), cooking oil (mantika), and salt & pepper to taste.

1 kg large or small size Pusit
1 head garlic (crushed)
1 small onion
1 cup vinegar
¼ cup soy sauce
2 tbsp peppercorns (crushed)
3 pcs bay leaf
3 tbsp cooking oil
2 stalks Tanglad ((optional))
salt to taste

Steps:

  • To clean Pusit, pull out the head and the innards will come out with it.
  • Keep aside ink sack discard entrails.
  • Remove the teeth and keep aside head and tentacles.
  • Remove the membrane from the body and wash out entrails.
  • Final wash squid and drain.
  • Slice body into ½" crosswise if you bought Large Size Squid (Pusit).
  • Cut tentacles in proportion to sliced body.
  • In a casserole put Pusit including the ink sack and the rest of the ingredients,
  • Add 1 to 2 cups of water simmer for 30 minutes or more until it is soft but firm and sauce thickens.
  • Season with salt.
  • Serve hot with lots of rice.
