AFRICAN PEANUT SOUP
This oddly wonderful combination of ingredients make a surprisingly different and delicious soup that everyone will enjoy! Serve with a dollop of sour cream on top and some crusty bread for dipping. YUM!

Steps:
- Heat oil in a large stock pot over medium high heat. Cook onions and bell peppers until lightly browned and tender, stirring in garlic when almost done to prevent burning. Stir in tomatoes, vegetable stock, pepper, and chili powder. Reduce heat to low and simmer, uncovered, for 30 minutes.
- Stir in rice, cover, and simmer another fifteen minutes or until rice is tender. Stir in peanut butter until well blended, and serve.

Tomatoes and peanut butter? YES! The first time I tried this at a health food restaurant, I was hooked. About 5 years of tweaking the recipe to my personal taste has created a spicy, sweet favorite amongst my friends and family. Luckily there is always enough for everyone!

Steps:
- Heat olive oil in a large stock pot over medium-high heat. Cook onion, bell pepper, and garlic until lightly browned, about 5 minutes. Stir in tomatoes with their juice, vegetable broth, pepper, and red pepper flakes. Simmer, uncovered, for 15 minutes.
- Add rice to soup and stir. Reduce heat, cover, and simmer 25 minutes, or until rice is tender.
- When rice is cooked, whisk in peanut butter and return to a simmer, and serve. Garnish with chopped roasted peanuts, if desired.

AFRICAN PEANUT BUTTER SAUCE
This sauce recipe comes from some missionaries in Africa. It's usually eaten with rice and I'm sure it would taste nice with some additional vegetables, tofu, or chicken as well.

- In a skillet heat oil, onions, and garlic for about 2-4 minutes.
- Add the remaining ingredients and cook for about 8-10 more minutes.
- Serve hot over rice.
AFRICAN PEANUT SOUP

- Heat 2 tablespoons of peanut oil in a large Dutch oven or stockpot over medium-high heat. Add curry powder and cook, stirring constantly for 1 minute. Add onions and cook, stirring occasionally, for 2 minutes. Add garlic and cook for 1 more minute. Stir in sweet potatoes, chicken broth and tomatoes, and bring soup to a boil. Simmer, covered, 20 to 30 minutes.
- In a large skillet, heat the remaining teaspoon of peanut oil. Add the turkey and cook, stirring with a wooden spoon to break up any clumps until cooked through. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Drain on paper towels.
- Add cooked ground turkey, the remaining 1/2 teaspoon salt, cayenne, peanut butter, and coconut milk to the soup, stirring to combine. Bring mixture to a simmer and cook for 20 minutes.
AFRICAN PEANUT SOUP
Steps:
- In a saucepan heat oil over moderate heat until hot but not smoking and cook garlic, stirring, until golden, about 1 minute. Add tomato paste, peanut butter, cayenne, and 1/4 cup broth and stir until smooth. Stir in remaining 3 3/4 cups broth and simmer, covered, stirring occasionally, 10 minutes. Simmer soup, uncovered, 10 minutes, or until oil floats to the surface, and skim oil.
AFRICAN PEANUT DIPPING SAUCE
This recipe comes from the Moosewood Restaurant. It is a great dip for grilled, roasted, and deep-fried vegetables, as well as strips of roasted chicken. Great for parties and snacking! It stores well, up to 2-3 weeks in the fridge, just reheat and serve!

- Add cayenne, ginger, mashed banana, and saute, stirring frequently.
- After five minutes, add the juices.
- Simmer for 10 minutes more, before stirring in the peanut butter.

- Add meat, peanut butter and tomato paste (and bouillon if using water instead of stock) and reduce to a slow boil (med-high heat).
- Chop onion and place in a mortar with the garlic and crush with a pestle until the juices are released and both the onion and garlic are crushed and softened. Add to sauce. *If you don’t have a mortar and pestle you can use a food processor or simply chop onion finely and crush garlic with a press or chop finely and add to sauce.
- Peel and roughly chop veggies into large chunks and add to the sauce. Add the whole habanero peppers and stir. Allow veggies to cook until tender (about 15 minutes). Cook rice while waiting for sauce to cook.

- In a large cooking pot warm the oil on a medium heat. Once warm, add the chopped onion, ginger and garlic and sauté for about 5 minutes.
- Stir in the cumin, chili flakes and salt and cook 1 minute. Add the sweet potatoes, tomato paste and peanut butter. Finally, add in the vegetable stock. Mix until the stock dissolves the tomato paste and peanut mixture.
- Turn the heat up, cover the pot and bring to a boil. Once boiled remove lid and reduce the heat to a simmer. Let simmer about 15 minutes or until the sweet potatoes are soft and tender. Use the back of wooden spoon to mash up about half the potatoes to thicken the soup.
- Add the collard greens, turn up the heat and boil uncovered for 5 minutes. Taste and season with more salt if needed. Serve with a side of rice, top with fresh cilantro and chopped peanuts if desired and enjoy!
