AIR FRYER COCONUT MACAROONS
Nutty, sweet, and exactly what you expect from a coconut macaroon! The texture is crispy on the outside and somewhat sticky and chewy on the inside. The chocolate adds a nice bitterness that cuts through the sweetness. These are so easy to prepare and would make great gifts, plus, they're easy to freeze!

- Preheat an air fryer to 320 degrees F (160 degrees C) for 10 minutes. Cut a piece of parchment paper to fit the air fryer basket, leaving 1 inch on each side to use as handles.
- Mix coconut, condensed milk, salt, and vanilla together in a large bowl.
- Beat egg whites in a medium bowl with an electric mixer with a whisk attachment on medium-high speed until stiff peaks almost form, about 90 seconds. Fold egg whites into the coconut mixture.
- Working in batches, spoon level tablespoons of the coconut mixture into rounds and place on the parchment paper, about 6 at time. Carefully transfer the parchment with coconut rounds into the air fryer basket.
- Cook until golden brown and set, 9 to 10 minutes. Remove parchment from basket, transfer macaroons to a wire rack, and repeat the process with remaining coconut mixture using the same piece of parchment paper.
- Microwave chocolate in a medium microwave-safe bowl on high power for 30 seconds, then stir. Continue microwaving and stirring in 30 second increments, until melted and smooth, about 90 seconds total.
- Dip flat bottoms of macaroons into melted chocolate and transfer to a parchment-lined baking sheet to set. Let rest until chocolate firms, about 30 minutes.

- Stir together flour and pepper in shallow dish. Lightly beat eggs in a second shallow dish. Stir together coconut and panko in a third shallow dish. Hold each shrimp by the tail, dredge in flour mixture, and shake off excess. Then dip floured shrimp in egg, and allow any excess to drip off. Finally, dredge in coconut mixture, pressing to adhere. Place on a plate. Coat shrimp well with cooking spray.
- Preheat air fryer to 400 degrees F (200 degrees C). Place 1/2 the shrimp in the air fryer and cook about 3 minutes. Turn shrimp over and continue cooking until golden, about 3 minutes more. Season with 1/4 teaspoon salt. Repeat with remaining shrimp.
- Meanwhile, whisk together honey, lime juice, and serrano chile in small bowl for the dip.
- Sprinkle fried shrimp with cilantro and serve with dip.

- In a small bowl, mix together the garlic powder, paprika, salt, cayenne, and black pepper.
- Place the shrimp on a cutting board and pat dry on both sides with a paper towel. Season on both sides with the spice blend.
- Add the flour, eggs, and coconut flakes to 3 separate shallow bowls. Add the panko to the bowl with the coconut flakes and mix to combine.
- Dredge the shrimp in the flour, shaking off any excess. Dip the floured shrimp in the eggs, then in the panko-coconut mixture. Transfer the breaded shrimp to a clean cutting board or baking sheet.

- Spray the basket of a 3.5-quart air fryer with cooking spray and set aside. Pat the shrimp dry between a couple of paper towels, then season with a pinch of salt and a few grinds of pepper.
- Pulse the coconut and panko in a food processor until finely chopped and uniform in size. Transfer to a shallow bowl.
- Whisk the flour with 3/4 teaspoon salt and few grinds pepper in another shallow bowl or a baking dish. Whisk the eggs with a pinch salt in a third shallow bowl. Dip a shrimp in the seasoned flour, shaking off any excess, then dip in the beaten egg. Dredge in the coconut-panko mixture, turning until evenly coated. - Preheat a 6-quart air fryer to 375 degrees F. Bring a large pot of salted water to a boil.
- Zest the lemon in strips using a peeler, making sure to avoid the white pith. Cut the lemon in half, then cut one half into wedges for serving. Reserve the other half for squeezing.
- Put the lemon zest, shrimp, thyme, garlic, bay leaf, 1/2 teaspoon salt and 1/4 teaspoon pepper in a cake pan and toss to combine. Spread the mixture out in the pan and dot the butter on top. Cover the pan tightly with aluminum foil.
