CHICKEN ALFREDO MOCK LASAGNA CASSEROLE
This Chicken Alfredo Mock Lasagna Casserole is a delicious way to use chicken, but don't forget about this recipe when you need ideas for leftover turkey!

Steps:
- Cut up about 8 cups of diced chicken, a bit more or less won't hurt.
- Chop up 1 lb. mushrooms, heat the 1 T olive oil in a large frying pan, and cook until mushrooms are nicely browned and any released liquid had evaporated. Remove mushrooms to a plate.
- Add chopped onion (and a little more oil if needed) and cook the onion about 3 minutes.
- Then add Poultry Seasoning (affiliate link), Garlic Powder (affiliate link), and Dried Sage (affiliate link) and cook a minute or two longer.
- Add the mushrooms and diced chicken to the frying pan and gently stir to combine.
- Then add Rao's Alfredo Sauce (affiliate link) or your favorite Alfredo Sauce, stir to combine, and cook at a low simmer about 10 minutes, or until the sauce has thickened and reduced a bit.
- I used my favorite lasagna dish that's 7.5" x 11.5" x 3 inches deep; choose a size that's close to that. Spray the baking dish with non-stick spray.
- Cut the Folios in half and cover the bottom of the dish, putting the straight edge along the side of the dish. (I only needed two Folios per layer for my size dish but bigger casserole dishes might need three.)
- Put half the chicken/mushroom mixture over the Folios, spreading out so it's an even thickness.
- Put 1 1/2 cups grated Mozzarella over the chicken/mushroom layer.
- Make another layer of Folios, chicken/mushroom mixture, and the other 1 1/2 cups grated Mozzarella. (You can get by with a bit less cheese if you prefer.)
- Bake at 375F/190C for 30-35 minutes, or until the mixture is bubbling hot and the top is lightly browned.
- Let it sit for 10 minutes or so before you cut into eight pieces (although it will still taste great if you can't wait that long, it just won't hold together as well.)

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In medium bowl, mix ricotta cheese, eggs, 1/2 cup of the Parmesan cheese, 1/4 cup of the basil, the garlic and salt. In another medium bowl, mix chicken, spinach and remaining 1/2 cup Parmesan cheese.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Cook spinach according to package directions; drain.
- In a medium bowl, combine chicken and one jar of Alfredo sauce, stir together. In a separate bowl, combine ricotta and drained, cooked spinach, and stir.
- In a 9 x 13 baking dish, place one layer of lasagna noodles, edges overlapping. Pour chicken and Alfredo sauce mixture over noodle layer and spread evenly. Sprinkle 1 cup of shredded mozzarella over chicken mixture. Top with another layer of noodles. Spread spinach mixture evenly over noodles. - For the chicken: Preheat the oven to 350 degrees F.
- Sprinkle the chicken breast with the Italian seasoning, salt and pepper. Heat the oil in a pan and cook the chicken on medium heat until it registers 165 degrees F in the middle, about 5 minutes on each side. Cube the chicken and set aside.
- For the alfredo sauce: In the same pan that the chicken was cooked in, melt the butter over low heat. Add the minced garlic and cook until the garlic has softened, about 2 minutes. Add the flour and whisk until smooth. (Be careful not to brown the roux.) Add the milk and heavy cream a little at a time, making sure to whisk until smooth after each addition, and let thicken, about 5 minutes. Add the nutmeg and pepper. Whisk to combine. Turn off the heat and mix in 2 1/2 cups Parmesan. Stir until all the cheese is melted. Add salt and pepper to taste.
- Layer 1 cup of the alfredo sauce on the bottom of a 9-by-13-inch baking pan. Add 3 lasagna noodles. Spread another cup of alfredo, a third of the chicken, a sprinkle of parsley and a quarter of the mozzarella. Then add 3 more noodles and repeat the layering two more times, ending with alfredo sauce, the remaining mozzarella and 1/2 cup shredded Parmesan.
- Bake until browned on top, 40 to 50 minutes. Remove the lasagna from the oven and sprinkle with parsley. Let the lasagna rest for 10 minutes before cutting into it.
ALFREDO CHICKEN LASAGNA

- Place chicken, seasoned salt, and 1 tablespoon garlic in a pot and pour enough broth over top to cover. Bring to a boil over medium-high heat. Cover, reduce heat to medium, and simmer until chicken is cooked through, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a bowl and shred when cool enough to handle. Discard broth.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook lasagna noodles in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Rinse with cold water, drain, and lay out on aluminum foil to cool.
- Mix ricotta cheese, egg, and 1/2 teaspoon Italian seasoning together in a large bowl; set aside.
- Combine Alfredo sauce, Parmesan cheese, remaining 1/2 teaspoon Italian seasoning, and pepper in a pot over medium-low heat. Cook, stirring frequently, until hot, about 10 minutes.
- Meanwhile, heat oil in a skillet over medium heat; stir in onion and mushrooms. Saute until the onion has softened and turned translucent, about 5 minutes. Add spinach and remaining 1 tablespoon garlic; cook until spinach is tender, 1 to 2 minutes. Remove from the heat and add spinach mixture to the ricotta mixture. Add tomato and mix well.
- Preheat the oven to 350 degrees F (175 degrees C).
- Put enough sauce in a 9x13-inch casserole dish to cover the bottom. Place 3 lasagna noodles on top of sauce, followed by all of the ricotta mixture, 3 more noodles, all of the shredded chicken, 1/2 of the mozzarella cheese, 3 remaining noodles, the remaining sauce, and the remaining mozzarella. Cover with aluminum foil.
- Bake in the preheated oven until hot and bubbly, about 45 minutes.

- Preheat the oven to 400˚ F. Butter an 11-by-14-inch or other 4-quart baking dish. Bring a large pot of salted water to a boil.
- Put the chicken in a dutch oven or other large pot, then add the chicken broth, crushed garlic, lemon zest, rosemary sprigs and bay leaves. Partially cover and bring to a simmer over medium-low heat. Cook, partially covered, until the chicken is tender, 20 to 22 minutes. Strain through a fine-mesh sieve (you should have 2 cups liquid; if necessary, add a little water to make 2 cups). When the chicken is cool enough to handle, tear or shred into small pieces. Wipe the dutch oven clean.
- Meanwhile, add the pasta to the boiling water and cook until just al dente, adding the broccoli during the last 2 minutes of cooking. Drain the pasta and broccoli in a colander and rinse with cold water to stop the cooking. Let drain in the colander while you make the sauce.
- Melt the butter in the Dutch oven over medium heat. Add the chopped garlic and cook until sizzling, about 30 seconds. Sprinkle in the flour and stir to make a paste; cook until the flour is no longer raw, 1 to 2 minutes. Whisk in the reserved 2 cups cooking liquid and the heavy cream; season with 1 teaspoon salt and a few grinds of pepper. Return to a simmer, whisking to make a smooth sauce. Cook over low heat until thickened, 3 to 4 minutes.
- Remove the pot from the heat. Stir in 1 cup Parmesan, the parsley and lemon juice. Add the chicken, pasta and broccoli and stir to coat. Transfer to the baking dish and sprinkle with the remaining 1/4 cup Parmesan and the mozzarella. Bake until the top is golden and the edges are bubbly, about 25 minutes. Let rest 5 minutes before serving.

- Preheat oven to 350°F (180°C).
- Slice each chicken breasts in half lengthwise and sprinkle 1 teaspoon of salt, pepper, and garlic powder evenly on both sides of each chicken breast.
- Heat oil in a large pan over high heat, then sear the chicken for about 1 minute per side. They will continue to cook through in the oven later on.
- In the residual oil (drain some if necessary), toss in the garlic and onions, stirring constantly until the mixture has started to brown.
- Pour in the cream, stirring until it starts to boil, then add the parmesan and parsley.
- Cook for 1 additional minute, then remove from heat.
- In a 9" x 13" (23cm x 33cm) rectangular baking pan, spread about ¼ of the cream mixture on the bottom.

- Place enough chicken breasts to cover the sauce, then sprinkle with half of the mozzarella, followed by half of the bacon and half of the parsley.
- Repeat the layers once more, starting with noodles, sauce, chicken, bacon, parsley, and mozzarella.
- Bake for about 25 minutes, until the cheese is golden brown.
- Cool for about 15 minutes, slice, and serve!

CHICKEN LASAGNA ALFREDO
This is one of my all time favorite Pampered Chef recipes. It is out of their Celebrate cookbook...of course I altered it some but it's still close to the original. I often times do not put the chopped red pepper in and I usually use 2 c of mozzarella and 1 c of cheddar. I have posted the ingredients as to the original recipe.

- Preheat oven to 375.
- Cook lasagna noodles according to directions on package. I prefer to use Barilla noodles that do not need to be cooked first.
- In a small bowl, combine alfredo sauce, milk and oregano and mix until blended; set aside.
- Mix chopped chicken, artichokes, red bell pepper and onion. Press garlic over bowl, add cheeses and mix well.
- To assemble, spread 2/3 c of alfredo sauce in the bottom of a 13x9 pan. top with half the noodles, overlapping if need to to make fit. Layer half of the spinach over the noodles and then half of the chicken mixture. Repeat starting with half the remainder of the sauce and ending with the remainder of the sauce.
- Cover with foil, bake 45 minutes. Remove foil and bake for 10-15 minutes or until bubbly.
- Remove from oven and let stand for 15 minutes before serving.

- Preheat the oven to 400˚F (200˚C).
- In a large sauté pan, melt the butter over medium heat. Add the garlic and sauté for 2-3 minutes, until softened.
- Add the heavy cream and Parmesan and stir to incorporate. Once the mixture comes to a low boil, reduce the heat to low and simmer for 10-15 minutes, until the sauce coats the back of a spoon. Season with salt, pepper, and nutmeg. Remove the sauce from the heat.

- Cover the ravioli lasagna with foil and bake for 20 minutes. Uncover and cook for another 20 minutes, until the cheese is golden brown. Let cool for 10 minutes.
- Sprinkle with chopped parsley, then serve.
