This is a recipe for one of King Arthur Flour's best-selling cookies. They are chewy-crisp cookie with an intense almond flavor.

10 ounces almond paste
1 cup sugar
2 large egg whites, lightly beaten
1/4 teaspoon almond extract
1/8 teaspoon lemon oil (optional) or 1/8 teaspoon orange oil (optional)
confectioners' sugar or glazing sugar, for topping

Steps:

  • Preheat the oven to 325°F.
  • Lightly grease (or line with parchment) two baking sheets.
  • Blend the almond paste and sugar until the mixture forms fine crumbs; this is best done in a stand mixer.
  • Add the egg whites gradually, while mixing, to make a smooth paste.
  • Stir in the flavorings.
  • Scoop the dough by heaping tablespoons onto the prepared pans.
  • Sprinkle the cookies heavily with confectioners' sugar, then use three fingers to press an indentation into the center of each cookie.
  • Bake the cookies for 20 to 25 minutes, until they're brown around the edges. Remove them from the oven, and let them cool right on the pan.

  • 1. Preheat oven to 300° F. 2. Combine almond paste and sugar in a food processor or blender and process until crumbly and sand-like. 3. Add in egg whites and salt until combined. 4. Drop by tablespoonfuls onto parchment-lined cookie sheet. 5. Top with sliced almonds, if you would like. If you are comfortable using a pastry bag and tip, it will work like a charm for these cookies. Use a large star tip and pipe out 1 1/2-inch rosettes.

Steps:

  • Preheat oven to 250°C (176°F). Coat baking sheets with cooking spray; flour them lightly and shake off excess.
  • Beat egg whites, salt and cinnamon until soft peaks form. Continue to beat while gradually adding the sugar. Beat until stiff peaks form. Fold in almonds.
  • Drop batter by tablespoonfuls onto baking sheets. Bake about 1 1/2 hours until firm and dry.
  • Store in airtight containers.
  • Yields about 60 cookies; 2 cookies per serving.

  • Cream butter or margarine and sugar together until light and fluffy. Add almond extract and egg. Beat well. Stir in flour, crispy rice and almonds.
  • Shape into balls one inch in diameter and place on ungreased baking sheets. Press with a floured fork to flatten slightly. Bake for 12 to 15 minutes until lightly browned.
