2 cups almond meal
¾ cup white sugar
1 teaspoon ground cinnamon
1 teaspoon instant espresso powder
½ teaspoon ground cardamom
1 teaspoon vanilla extract

Steps:

  • Mix milk, almond meal, sugar, cinnamon, espresso powder, and cardamom in a large saucepan; bring to a simmer. Cook, stirring often, over low heat until slightly thickened, 20 minutes. Remove from heat and stir in vanilla extract. Chill in refrigerator until thickened, at least 3 hours.

I just made up this recipe. I had a lot of leftover jasmine rice, and decided to try an experiment. My mom used to make rice pudding from leftovers all the time, but I added my own flavors for this one. The quantities are approximate, and you can modify according to your taste or according to the amount of leftover rice you have.

1 1/4 cups cooked rice
1/4 cup sugar
1 1/2 cups milk (or enough to cover the rice)
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1/4 teaspoon ground cardamom
2 tablespoons ground flax seeds

Steps:

  • Put cooked rice, sugar, and milk in a saucepan.
  • Add extracts, cardamom, and flax.
  • Heat to just before boiling, or to an early boiling point, stirring constantly.
  • Remove from heat, cool, and serve.
  • Store remaining quantities in the refrigerator.

Almond Pudding image

This is a milk pudding that is served in India at open houses or for dessert. To keep a "skin" from forming on the top of the pudding while it is cooling, carefully place a piece of clear plastic wrap or waxed paper directly on the surface of the hot pudding. After the pudding has cooled, remove the paper and spoon the pudding into dessert dishes. Chilling time is not included in cooking or prep time.

4 cups milk or 4 cups light cream
2 tablespoons long grain rice
1/4 teaspoon ground cardamom
1/4 cup sugar
1/4 cup almonds or 1/4 cup pistachio nut, toasted and chopped
2 teaspoons rose water (optional)
ground nutmeg
12 strawberries

Steps:

  • In a heavy 3 quart saucepan, combine the milk or light cream, rice, and cardamom. Bring to boiling. Reduce heat. Cook, uncovered over low heat, stirring occasionally about 1 hour or until the milk mixture is reduced to about 2 cups. Remove from heat.
  • Stir in the sugar and chopped almonds or pistachio nuts, continue stirring till the sugar has dissolved. Cool for 30 minutes; stir pudding. Stir in the rose water, if desired.
  • Spoon the mixture into 4 to 6 sherbet or dessert dishes. Chill in the refrigerator. To serve, sprinkle with ground nutmeg and garnish each serving with 2 whole strawberries.

1 cup sugar
1/4 cup water
1/2 cup light corn syrup
1/4 teaspoon salt
1-1/2 cups unblanched almonds
2 tablespoons butter
1/2 teaspoon pumpkin pie spice
1/4 teaspoon cayenne pepper
1/4 teaspoon dried rosemary, crushed
1/8 teaspoon ground nutmeg
1 teaspoon baking soda

Steps:

  • Line a 15x10x1-in. pan with parchment. (Do not spray or grease.), In a large heavy saucepan, combine sugar, water, corn syrup and salt. Bring to a boil, stirring constantly to dissolve sugar. Using a pastry brush dipped in water, wash down the sides of the pan to eliminate sugar crystals. Cook, without stirring, over medium heat until a candy thermometer reads 260° (hard-ball stage). , Stir in almonds, butter and seasonings; cook until thermometer reads 300° (hard-crack stage), stirring frequently, about 8 minutes longer., Remove from heat; stir in baking soda. (Mixture will foam.) Immediately pour onto prepared pan, spreading as thin as possible. Cool completely., Break brittle into pieces. Store between layers of waxed paper in airtight containers.

1/2 cup butter, softened
3/4 cup sugar
1/4 cup egg substitute
1/2 teaspoon almond extract
1-1/4 cups all-purpose flour
1/4 teaspoon each ground cinnamon, nutmeg and cloves
1/4 teaspoon baking powder
Dash salt
1/2 cup chopped almonds

Steps:

  • In a bowl, cream butter and sugar; add egg substitute and extract. Combine dry ingredients; add to the creamed mixture. Stir in almonds. Drop by rounded teaspoonfuls onto baking sheets coated with cooking spray. Bake at 350° for 9-11 minutes or until edges are golden brown. Remove to wire racks to cool.

A fruity pud, served with orange custard cream, makes the perfect end to the traditional Christmas meal

175g each raisin, currants and sultanas
140g whole glacé cherry
50g mixed peel
50g whole blanched almond
zest 1 orange and 1 lemon
1 medium carrot, peeled and finely grated
150ml brandy
50ml/2fl oz orange liqueur, such as Grand Marnier
175g light muscovado sugar
175g fresh white breadcrumb
125g self-raising flour
1 tsp mixed spice
¼ tsp grated nutmeg
175g butter, frozen
2 eggs, beaten
butter, for greasing
holly sprig, to decorate

Steps:

  • Mix the fruit, almonds, citrus zests and the carrot with the brandy and orange liqueur in a large mixing bowl. Cover and leave to soak overnight.
  • Mix all the dry ingredients together, then add to the soaked fruit mixture. Grate in the butter, then add the eggs and stir. Don't forget to make a wish!
  • Grease a 1.5-litre pudding basin with butter and line the base with greaseproof paper. Spoon in the mixture, press down well and make a hollow with the back of the spoon in the centre. Cover the surface with a round of greaseproof paper, then cover the bowl with double-thickness greaseproof paper and foil and tie at the rim with string. Lower the pudding into a pan with an upturned saucer in the base, then fill with water until it comes halfway up the sides of the bowl. Steam for 6 hrs, topping up with water as necessary.
  • Alternatively, steam in the oven. Stand the pudding basin in a roasting tin filled with water, then cover with a tent of foil and cook for the same length of time at 160C/fan 140C/gas 3. Check roasting tin occasionally as the water may need to be topped up.
  • To store, allow to cool, then store in a cool, dry cupboard. The pudding will keep for up to a year.
  • On the day, steam for 1 hr before turning out, decorating with holly and serving with extra-thick double cream or vanilla ice cream. Alternatively, try my Orange custard cream (below).
