1 teaspoon kosher salt
2 sticks unsalted butter, sliced, frozen
7 tablespoons ice cold water
2 teaspoons distilled white vinegar
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon dried thyme
½ teaspoon dried sage
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon freshly grated nutmeg
¼ teaspoon ground allspice
¼ teaspoon ground mustard
⅛ teaspoon ground cloves
1 pinch cayenne pepper
1 large russet potato, peeled, quartered
1 teaspoon kosher salt
1 tablespoon butter
1 large onion, finely chopped
1 pinch salt
4 cloves garlic, crushed
½ cup finely diced celery
1 pound ground pork
1 pound ground beef
1 cup potato cooking water, plus more as needed
1 large egg
1 tablespoon water

Steps:

  • Place flour, salt, and frozen butter slices into the bowl of a food processor. Pulse on and off until butter is about the size of peas, about 30 seconds. Stir vinegar into cold water; drizzle water/vinegar into the flour mixture. Pulse on and off until mixture is crumbly and holds together when you pinch a piece off, about 10 seconds. If dough isn't pressing together, drizzle in another teaspoon of water.
  • Transfer mixture to a work surface. Press it together until it becomes a lump of dough. Wrap in plastic wrap. Refrigerate until chilled, at least 1 hour.
  • Mix salt, pepper, thyme, sage, cinnamon, ginger, nutmeg, allspice, mustard, clove, and cayenne together in a small bowl.
  • Place potato quarters in a saucepan; cover with cold water. Add 1 teaspoon kosher salt. Bring to a boil over high heat; reduce heat. Simmer until cooked through, 10 to 15 minutes. Scoop out potatoes and transfer to a bowl; save cooking liquid. Mash potatoes with a potato masher.
  • Melt butter in a skillet over medium heat. Add chopped onion and a pinch of salt. Cook and stir until onions turn golden, 10 to 15 minutes.
  • Stir garlic, celery, and spice blend into the skillet with onions. Stir until onion mixture is evenly coated with the spices, about 30 seconds. Add ground beef and ground pork. Ladle about 3/4 cup of the potato cooking liquid into the skillet.
  • Cook and stir until meat is browned and has a very fine, almost pastelike texture. Continue cooking, stirring occasionally, until meat is tender and most of the liquid has evaporated, about 45 minutes. Stir in mashed potatoes. Remove from heat and cool to room temperature.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Divide chilled dough into 2 pieces, one just slightly larger than the other. Roll the larger piece out into a 12-inch circle on a lightly floured work surface. Place in a 9-inch deep dish pie plate. Roll top crust out into a circle about 11 inches in diameter. Cut small slits in the top crust to allow steam to escape.
  • Fill bottom crust with the meat mixture; smooth out the surface. Whisk egg and water together to make egg wash. Brush edges of the bottom crust with egg wash. Place top crust on the pie and press lightly around the edges to seal. Trim excess dough from the crust. Crimp the edges of the crust. Brush entire surface of the pie with egg wash.
  • Place in preheated oven. Bake until well browned, about 1 hour. Let cool to almost room temperature before serving.

1 pound ground beef
1 pound ground pork
1 large onion, thinly sliced
1 cup mashed potatoes
2 teaspoons ground allspice
1 teaspoon salt

Pastry for double-crust pie (9 inches)
1 large egg, beaten, optional

Steps:

  • In a Dutch oven, cook the beef, pork and onion over medium heat until meat is no longer pink; drain. , In a small bowl, combine potatoes and seasonings. Roll out half of pastry to fit a 9-in. pie plate; trim pastry even with edge of plate. Fill with meat mixture. , Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in pastry. Brush with egg if desired. Bake at 375° for 30-35 minutes or until golden brown.

2 sheets frozen puff pastry
5 ounces brioche bread, diced
1/2 cup milk
1 large onion, finely chopped
2 garlic cloves, minced
2 lbs ground pork
1/4 cup chopped parsley
3 sprigs fresh thyme
1/2 teaspoon ground coriander
1/4 teaspoon ground nutmeg
3 eggs, divided
2 tablespoons olive oil
1 1/2 teaspoons salt
1 teaspoon fresh ground pepper

Steps:

  • Preheat oven to 400F.
  • Remove puff pastry from package and wrapping. Allow to thaw for approximately 40 minutes until it can be opened without cracking.
  • Place brioche in a bowl, add milk and mix. Set aside.
  • Begin sweating onions in olive oil. Make a well in the onions, add garlic and saute for a minute. Continue cooking, stirring occasionally, until onions are translucent. Set aside to cool.
  • Separate two of the eggs. Add the remaining whole egg to the whites.
  • Add a splash of water to the two yolks and mix together. Set aside.
  • Place ground pork, soaked brioche, onions (reserve the dirty saute pan), salt, pepper, coriander, nutmeg, whole egg plus two whites, in bowl. Strip leaves from thyme sprigs into bowl. Mix until combined.
  • Saute a teaspoon or two of the pork mixture in the saute pan. Taste and correct seasoning as necessary.
  • Roll out first sheet of puff pastry with a dusting of flour and place in a greased 9-inch pie plate. Trim.
  • Spoon pork filling into crust in pie plate.
  • Roll out second sheet of puff pastry. Place on top of pie and trim to the edge of the pie plate or a bit wider than that. Tuck the cut end of the crust between the pie plate and the bottom crust. Cut a 1-inch vent in the center of the top crust. Brush the top of the pie with the egg yolk-water mixture. If desired, cut decorative pieces of puff pastry from the trimmings and place on top of the pie. Brush the decorations with the egg yolk-wash.
  • Bake for 45 minutes at 400°F Use an instant-read thermometer to verify that the filling temperature is 160°F Cook longer if necessary.
  • Remove from oven and allow to rest for 10 minutes.
  • Slice and serve with a salad and beer.

1 partly baked 10-inch tart shell (see recipe)
1 tablespoon, plus 2 teaspoons, butter
1/2 cup finely chopped onions
1 pound ground lean beef
1/4 pound mushrooms, finely chopped, about 1 1/2 cups
1/2 cup finely chopped green pepper
1 cup finely chopped celery
2 teaspoons dried marjoram
Salt to taste, if desired
Freshly ground pepper to taste
1 whole egg
1 egg yolk
1 cup heavy cream
1/2 cup milk
1/4 cup finely chopped chives or scallions

Steps:

  • Prepare the tart shell and set it aside.
  • Preheat the oven to 375 degrees.
  • Heat two teaspoons of the butter in a skillet and add the onions. Cook, stirring, until they are wilted. Add the beef and cook, stirring and breaking up any lumps with the side of a heavy metal spoon. Cook until the meat has lost its raw look. If any fat has accumulated, drain it off in a sieve and discard it.
  • Add the remaining butter, the mushrooms, green pepper, celery, marjoram, salt and pepper.
  • Combine the whole egg, egg yolk, cream, milk and chives or scallions in a mixing bowl and beat thoroughly. Add the meat mixture and stir to blend.
  • Pour the mixture into the tart shell. Place a baking sheet in the oven. Put the filled tart shell on the sheet and bake 30 to 35 minutes or until the custard is set.

Kosher salt and freshly ground pepper
1 cup heavy cream
5 cloves garlic, crushed with the flat side of a large knife
1/2 teaspoon freshly grated nutmeg
2 tablespoons unsalted butter
1 medium leek, white and light-green parts only, halved lengthwise, thinly sliced crosswise and well washed
1/4 cup chopped fresh flat-leaf parsley, plus a few small sprigs for topping (optional)
1 large egg yolk
All-purpose flour, for work surface
1 sheet frozen all-butter puff pastry (about 14 ounces), such as Dufour, thawed
1 1/2 cups grated Comté or Gruyére

Steps:

  • Cover potatoes with water in a medium saucepan. Bring to a boil over high heat. Add a pinch of salt; cook until just tender, 13 to 15 minutes. Drain. Let cool.
  • Bring 3/4 cup plus 3 tablespoons cream, garlic, and nutmeg to a boil in a small saucepan over medium-high heat. Cook until mixture is reduced by half. Season with salt and pepper.
  • Melt butter in a skillet over medium heat. Add leek; cook, stirring occasionally, until softened, about 5 minutes. Remove from heat. Stir in parsley; season with salt and pepper.
  • Preheat oven to 400°. Whisk egg yolk and remaining 1 table- spoon cream in a small bowl; set aside. On a lightly floured surface, divide puff pastry into two 6-by-13-inch rectangles. Set one rectangle on a baking sheet lined with parchment. Top with half of potatoes, leaving a 1/2-inch border all around and overlapping slightly, then half of leek mixture and 3/4 cup cheese; season with salt and pepper. Repeat layering with remaining potatoes, leek mixture, and cheese. Brush edges of pastry with egg wash. Cover with remaining pastry rectangle; gently press edges with a fork to seal. Cut 2-inch slits lengthwise in center of crust, 2 inches apart. Brush with egg wash and sprinkle with parsley sprigs. Refrigerate until cold, about 30 minutes.
  • Bake until golden brown and puffy, about 35 minutes. Remove from oven; pour cream mixture into pie vents with a funnel. Bake 10 minutes more. Let stand 15 minutes before serving.

Inspired by the robust cooking of Alsace, a region in northeastern France bordering Germany, this flaky pie features a rich filling of potatoes, Comté (or Gruyère) cheese, leeks, and garlic-infused cream. Rather than adding the cream to the filling at the beginning, it is poured through the vents on top of the pie only after the pastry has turned golden brown, and then the pie is baked ten minutes more. This allows the crust to crisp properly and keeps the potatoes from soaking up all the cream before the pie has finished baking.

Nothing fills you up more then one of Albania's most tasty and comforting classic dishes. This flaky pastry pie is stuffed full of mince, onion and potatoes with a warming hint of paprika.

2 homemade discs phyllo pastry or 12 -16 sheets of premade phyllo pastry
750 g beef mince
1 diced onion
2 finely diced potatoes
3 tablespoons tomato puree
1/2 pint beef stock
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
olive oil
220 ml water

Steps:

  • In a saucepan add the olive oil and fry the onions for 2 minutes before adding the mince and browning.
  • Add the tomotoe puree, salt, pepper, paprika, potatoes and beef stock. Bring to the boil, leave to simmer for 10 minutes/ When the mixture has thickered and water boiled away turn off the heat and leave to cool for 10 minutes.
  • If using homemade pastry, place a filo pastry disc in a large baking tray and add filling on top the add the second disc on top and seal the edges by tucking them down.
  • For premade pastry, layer sheets of filo pastry on top of each other brushing a layer of olive oil after each one before the next one is place down. Once 6/8 sheet are laid add the filling on top. Repeat the layering until a further 6/8 sheets are on top of the filling - olive oil brushed on each one.
  • Put a thin layer of oil over the top.
  • Bake in the oven at 180 degrees for 1 hour or until golden brown.
  • Once removed from the oven, pour half a cup of water over the top and half a cup of water around the edges. Cover the meat byrek with two tea towels and leave to stand for 1 hour before serving. You can skip this step if you prefer a crisper pie.

2 tablespoons sugar

2 tablespoons chilled solid vegetable shortening, cut into 1/2-inch pieces
3 tablespoons (about) ice water
Filling
3 large eggs
3/4 cup sugar
1/2 cup whipping cream
1/2 cup whole milk
1 teaspoon kirsch (clear cherry brandy)
1/2 teaspoon ground cinnamon
Generous pinch of ground nutmeg
4 tablespoons (1/2 stick) unsalted butter
4 medium Golden Delicious apples, peeled, cored, cut into 1/2-inch-thick wedges

Steps:

  • For crust:
  • Blend flour, sugar, and salt in processor. Add butter and shortening; cut in using on/off turns until mixture resembles coarse meal. Blend in enough ice water using on/off turns until dough begins to form clumps. Gather dough into ball; flatten into disk. Wrap in plastic and refrigerate 1 hour.
  • For filling:
  • Whisk eggs and 1/2 cup sugar in large bowl to blend. Whisk in cream, milk, kirsch, and spices. Cook 2 tablespoons butter in heavy large skillet over medium-high heat until butter begins to brown, about 2 minutes. Whisk into cream mixture. Set custard aside.
  • Melt remaining 2 tablespoons butter in same skillet over medium heat. Add apples and remaining 1/4 cup sugar; sauté until apples begin to soften, about 8 minutes. Increase heat to medium-high; sauté until apples are tender and golden brown, about 7 minutes longer. Cool.
  • Roll out dough on lightly floured surface to 12 1/2-inch round. Transfer to 9-inch-diameter pie dish. Fold dough edges under and crimp decoratively. Pierce crust all over with fork. Freeze 20 minutes.
  • Preheat oven to 400°F. Line crust with foil. Fill with dried beans or pie weights. Bake 10 minutes. Remove foil and beans. Bake until crust is golden, about 15 minutes longer. Cool slightly. Reduce oven temperature to 350°F. Arrange apple mixture in pie shell. Pour custard over. Bake until knife inserted into center comes out clean, covering crust with foil if browning too quickly, about 40 minutes. Transfer pie to rack and cool slightly. Serve warm.
