- Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray. In a large bowl, cream sugar and shortening with an electric beater on low speed. Beat in the eggs, one at a time. Add flour, cinnamon, baking soda, and salt; beat until well mixed. Add applesauce and vanilla; mix well then stir in the walnuts and pour batter into prepared baking dish. Bake 30 to 35 minutes, or until wooden toothpick inserted in center comes out clean. Let cool. Note: For a fancier treat, drizzle with a glaze that's made by mixing 1/2 cup confectioners' sugar and 1 to 2 teaspoons water.
HOT APPLESAUCE CAKE
From an older Amish cookbook I discovered at a thrift store. The name given as credit for this recipe in the book is Mrs. Menno E. Schwartz, Sr. -I would think that homemade, chunky applesauce would be the most delicious in the recipe, but regular would probably be yummy too.

- Cream sugar and shortening, add eggs and blend well.
- Sift dry ingredients together.
- Mix applesauce and raisins.
- Add dry ingredients alternately with the applesauce to the sugar and shortening mixture.
- Pour into 9x13 inch greased and floured pan. Bake at 350 for 45 minutes or until done.
- Sprinkle 1/2 tsp cinnamon and 1/4 cup sugar over batter instead of frosting.

1930'S APPLESAUCE CAKE (DEPRESSION ERA CAKE)
This delicious depression era cake calls for just 1 tablespoons of butter. It's also called Poor Man's Cake. It's a good cake for anyone who wants a reduced fat cake, or one that does not contain eggs. If you don't have applesauce on hand you can substitute 2/3 cup of coffee... can't beat that one for economy. I love these old recipes, it's a glimpse into the past, this one was published in the Los Angeles Times, food section about 20 years ago.

- Cream together butter and sugar in a large bowl, stir in corn syrup and set aside; sift together flour, cinnamon, nutmeg and cloves.
- Dissolve the soda in applesauce;(or coffee if using) add flour mixture and applesauce mixture alternately to creamed mixture.

- Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. - Preheat oven to 350 degrees F (175 degrees C). Spray a fluted cake pan with cooking spray.
- Beat sugar and shortening together in a bowl using an electric mixer until smooth and creamy; beat in eggs until incorporated.
