APPLE CRISP - PERFECT AND EASY
I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
- Arrange apple slices evenly in prepared baking dish. Sift flour, sugar, cinnamon, and salt in a bowl. Cut in butter using a pastry blender or 2 knives until mixture resembles coarse cornmeal; sprinkle over apples.
- Bake in preheated oven until topping is golden, 40 to 45 minutes. Cool slightly before serving.

- For the apples: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch glass baking dish with butter.
- Arrange the apple slices in the prepared baking dish in an even layer. In a bowl, mix together the granulated sugar, flour, cinnamon and salt. Sprinkle the mixture over the apples, then pour 1/2 cup water over top.
- For the topping: In a separate bowl, mix the flour, oats, brown sugar, baking powder, baking soda and a pinch of salt. Stir while drizzling in the melted butter. Sprinkle the topping in an even layer over the apples.
- Bake until the topping is slightly crisp and golden brown, about 43 minutes. Serve warm or at room temperature on its own, with ice cream or with frozen custard.
AUNT JIMMY'S STREUSEL APPLE CRISP
Steps:
- Preheat oven to 400 degrees.
- Butter a deep 2-quart baking dish. Place the apples in the baking dish. They should be at least 2 1/2-inches deep; add more if necessary. In a bowl, stir together the flour, sugars, cinnamon and nutmeg. Using a pastry blender or the paddle attachment of a mixer, cut in the butter to make a crumbly, sandy mixture. Sprinkle the topping over the apples. Bake for 30 minutes, until apples are tender and the topping is browned. Serve warm with heavy cream or ice cream.

ANJE'S APPLE CRISP
Ever since I was a kid, crisps have been one of my favourite desserts. So, when I started cooking, I decided I wanted to learn how to make my own! My first crisp was so runny it was like soup! But I practiced and practiced until I came up with my own, delicious recipe. I usually make this without any formal recipe, so the measurements aren't exact... Enjoy!

- preheat your oven to 350 degrees.
- peel and then slice apples into thin slices. fill your favourite pan until it's about 1/2 an inch from the top. i usually use 3-4 apples for a small glass loaf pan.
- make sure to toss apple slices with lemon juice to prevent browning.
- when all the apples have been cut, toss the slices with enough cinnamon to lightly coat. add a little less ginger, and then a little less nutmeg and allspice, if desired. sometimes i leave out the allspice.
- next, make the crumble topping by combining the flour, brown sugar, and oatmeal in a bowl. add cinnamon and ginger to the topping.
- melt the butter in the microwave and then mix with the dry ingredients. you might need a little more butter; i use enough to make sure that the topping is saturated and sticks together.
- before adding the topping, mix in the cornstarch with the apples. this prevents the crisp from becoming runny. make sure it's well mixed inches.
- lastly, add the topping to the apples. make sure that no apples are showing.
- bake in the oven for about 30-45 minutes or until bubbling and the topping is browned.
- i eat this plain, but it can be good with ice cream, whipped cream, or even chocolate sauce.

- After preparing the apples, put them in a large bowl.
- Add Apple Coating to Apples and stir until every slice is coated. Put them into a 9x9 baking dish. Pat down.

YANKEE APPLE CRISP
This is a simple, homey, comfort food that everyone seems to love. I adapted this in the late '70s from a recipe I found in a Yankee Magazine Cookbook. If you like lots of topping add half again or double it (double is pretty sweet). This is the perfect recipe for potlucks and parties as you can make it ahead, and it travels well. I love it for breakfast with a hot cup of coffee or tea.

- Preheat Oven to 375 degrees.Lightly grease or spray a 9x13 pan (pyrex is good) or any other 2 qt baking dish.
- Melt butter in medium pot or bowl, remove from stove or microwave and stir in oats, brown sugar, flour, spices and nuts if using.
- Peel, core and slice apples (thin or a little thicker - I use my corer/peeler/slicer which makes them pretty thin), then place in pan - I like to sprinkle the apples with a little cinnamon.
- Sprinkle crumbs over tops of apples covering as much as possible but a few gaps are ok.
- Bake for 45 minutes, if crumbs start to get too brown before the apples are done, you can float a piece of foil loosely over the top. Apples should be very soft when poked with a thin knife.
- Serve warm or at room temperature, wonderful with fresh whipped cream or vanilla ice cream.
- NOTES:.
- You can use other apples, Granny Smiths are pretty tart but that makes a nice contrast with the sweet topping. You can add a couple of teaspoons of sugar if you think they might be too tart for you or use a combo of apples - you can use your favorites, but avoid ones the go to total mush when baked.
- I often stir 2-3 tsp of flour into to the apples to avoid watery juice in the bottom of the pan after baking.
- I like to use whole wheat pastry flour (not regular whole wheat) for added flavor and nutrition, or a little wheat germ in with the white flour is good too.
- You can use this for other fruits also - sometimes I add in some frozen raspberries or sub peaches for the apples, they like blueberries and raspberries too. Peaches will probably need the extra sugar and flour added to them and a little ground ginger and/or cloves added to the topping is delish!
