1½ cups plus 2 tablespoons all-purpose flour
Salt
1¼ cups beer (heineken)
Vegetable oil, for deep-frying
4 Golden Delicious or which ever apples you got available
Granulated or confectioners' sugar, for dusting

Steps:

  • Peel and core the apples slice in ¼ inch rings
  • In a bowl, whisk the all-purpose flour with a pinch of salt; gradually whisk in the beer until completely smooth. Allow the batter to rest for at least 30 minutes or up to 1 hour.
  • In a large deep skillet, heat 3 inches of the vegetable oil to 370° over moderate heat. Stir the batter. Working in batches, dip the apple rings in the batter and fry them, turning occasionally, until golden and crisp, about 6 minutes.
  • Using a slotted spoon or a wire skimmer, transfer the beignets to a baking sheet lined with paper towels to drain. Keep the cooked beignets warm in a low oven while frying the rest. Sprinkle the beignets with granulated sugar or sift confectioners' sugar over them and serve hot.

Yield 12 Dutch Apple Fritters

Number Of Ingredients 12

1 cup all-purpose flour (125 gram)
1/3 cup cornstarch (50 gram)
1 egg
3/4 cup lukewarm milk (175 ml)
1/8 teaspoon salt
1/2 teaspoon dry yeast (2 gram)
1 teaspoon sugar (5 gram)
1 1/2 tablespoon melted butter (20 gram)
1 teaspoon sunflower oil
2-3 apples (firm sour or sweet and sour apples)
3 tablespoons cinnamon sugar (3 tablespoons sugar mixed with 1/2 tsp cinnamon)
sunflower oil (enough to fill your deep fryer or a pan.)

Steps:

  • In a bowl, mix flour, cornstarch yeast and sugar
  • Add egg and while whisking continually, add the lukewarm milk. Mix until combined.
  • Add melted butter, oil and salt and mix till fully incorporated. Cover the batter with a damp cloth and leave to rest in a warm place for at least an hour.
  • While the batter is resting (roughly 20 minutes before the batter is done) you can prepare your cinnamon sugar and apple slices. Peel and slice your apples about 0.4 inch/1 cm thick. Coat your apple slices with cinnamon and sugar.
  • Heat up your oil to 356°F / 180°C.
  • When your batter is ready, dip an apple slice in the batter. Tap on the side of the bowl to tap off any excess batter, you should see the hole in the slice of apple. Slowly drop your coated apple slice into the hot oil.
  • Don't overcrowd your deep fryer or pan, the batter will expand slightly around the apple slices. It takes about 5 minutes to cook the apple fritters, make sure to turn them over halfway. When they're golden brown all way around, they're done.
  • Serve warm or cold dusted with a little bit of confectioners' sugar.

6 baking apples (Spy, Red Delicious and Granny Smith work well)
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1/2 cup milk

Steps:

  • Peel and core apples, cut into slices to form rings about 1/2 inch thick.
  • Beat egg into milk and add to dry ingredients. result should be the consistency of pancake batter.
  • Dip apple rings into batter and deep fry at 350* until golden brown on both sides. do not overcrowd, fry 3 or 4 slices at a time allowing plenty of space to flip the slices over.
  • Drain on paper towels and let cool for 30 minutes.
  • Place on a tray and sprinkle with icing sugar. (also good plain).

6 -8 firm tart apples
2 cups beer
2 cups flour
1 pinch salt
oil or vegetable shortening, for deep frying
vanilla sugar (granulated)

Steps:

  • Peel and core apples and cut into lengthwise slices between 1/3 and 1/2 inch thick.
  • Mix beer with flour and salt until smooth and free of lumps.
  • Dip apple slices into batter and let excess drip off.
  • Fry a few slices at a time in fat heated to 370 F.
  • turn once so they become golden brown on both sides--about 4 minutes in all.
  • Drain one a paper towel and serve warm sprinkled with sugar.
  • Makes 6 to 10 servings.
  • *VANILLASUGAR: Place 1 pound confectioners' or granulated sugar in a jar with 2 or 3 vanilla beans.
  • Close jar tightly and let stand for 48 hours before using.
  • Replenish sugar as it is used up.
