THE ULTIMATE APPLE GRILLED CHEESE
Take your apple sandwich to new heights by turning it into the most delicious grilled cheese you'll ever make!

- Bacon: In a large non-stick pan over medium heat add 8 slices of bacon. Fry both sides until golden/crispy with the fat fully rendered down. Remove from pan, leave fat behind.
- Apples: Melt 1 tbsp butter into the pan then add the apple slices. Stir to coat and fry for around 5mins until they JUST begin to brown and soften slightly. Pour in 2 tbsp maple syrup along with your fresh thyme (optional). Lower the heat very slightly and stir to coat the apple. Gently fry until the apple is soft (but not breaking apart) and caramelized/sticky. Remove and wipe out the pan.
- Grilled Cheese: Butter one side of each of the slices of bread then flip half of them over. Top with grated cheddar, followed by 2 slices bacon, topped with caramelized apples and finish with gorgonzola (or more cheddar). Top with a second slice of bread butter-side-up.
- Fry: Add to a non-stick pan over medium heat and fry both sides until golden with the cheese just starting to leak out. You may need to do this in two batches. Serve up and enjoy!

This is another one of my creations. I love grilled cheese sandwichs and Im always trying to make new versions! I reallllllly liked this one! Please only use a tart apple like a granny smith; sweet apples may produce an undesireable result. I really loved this sandwich!!!

- First core your apple, and cut it in half.
- Slice very thin slices from the end of one half, until you have enough to cover your bread (not overlapping. Now take your shallot, and shave paper thin slices, about 4 or 5- reserve rest of shallot for another use. Then take your garlic clove, and shave paper thin slices of garlic from the clove, about 4 or 5 slices, reserve rest of garlic for ).
- Heat 1/2 tablespoon butter and lightly fry the apple, shallot and garlic. Fry for about 2 minutes and then remove to a plate.
- Take one slice of bread, butter one side, and then salt it and place it in the pan, and continue by placing 1 slice of cheese on the bread, layer the apple slices evenly over the piece of bread and randomly place the garlic and shallot pieces, place other piece of cheese on top, and then take second piece of bread, butter and salt one side, and place it on top of the cheese slice, butter side up.
- Fry the sandwich over medium heat until browned on both sides, pressing down on the sandwich whiling cooking to slightly flatten it out; When browned nicely, cut in half and serve.

If Cheddar on a slice of apple pie sounds good to you, you will love this twist on a grilled cheese sandwich, which marries salty and sweet elements between two caramelized pieces of buttery bread. Look for dark apple butter, with no added sugar, since it will have the richest flavor. Unlike most grilled cheese recipes, which call for building the sandwiches, cooking them on one side, then flipping, this one calls for cooking the sandwiches open-faced, then assembling them.The cheese melts more quickly and reliably if cooked this way. - Heat a large, 12-inch skillet over medium-high. Add 1 tablespoon butter, then add apples, shallots, rosemary and a pinch of salt. Cook, tossing occasionally, until apples are golden and softened, 8 to 10 minutes, reducing the heat if shallots threaten to burn. Transfer mixture to a plate; set aside.
- Rinse and dry the pan, and set over medium heat. Melt 1 tablespoon butter (2 tablespoons if you're cooking two sandwiches at a time).
