APPLE CRISP CUPS
A yummy one-biter! Whenever I ask 'what can I bring?' these top the list! Sweet cinnamon-scented apples held in a buttery crispy oatmeal cup and crunchy sweet topping. I like to make sweet treats to share with friends. I came up with this recipe so that I could bake and take apple crisp to share easily with everyone.

- Preheat oven to 350 degrees F (175 degrees C). Grease 4 12-cup mini-muffin tins.
- Mix apples, water, white sugar, and 1/2 teaspoon of cinnamon together in a saucepan, and bring to a simmer over medium-low heat, stirring occasionally. Simmer until apples are partially cooked, about 5 minutes; remove from heat.
- Combine flour, oats, brown sugar, 1 teaspoon of cinnamon, and nutmeg in a large bowl; cut the butter into the flour mixture with a pastry cutter until the mixture looks like coarse crumbs. Place a heaping tablespoon of the crust mixture into a mini muffin cup, and press it into the cup so that it covers the bottom and pushes up the sides of the cup. Make the crust go all the way to the top of the little muffin cup, and patch any holes with more crust mixture. There will be crust mixture left over. Place about 2 teaspoons of apple filling in the crust. Sprinkle about 1 teaspoon of the remaining crust mixture on the filling.
- Bake in the preheated oven until golden brown, 15 to 20 minutes.

- Preheat the oven to 350°F (177°C). Spray a 12-count muffin pan very well with non-stick cooking spray and set aside.
- Add the oats, baking powder, cinnamon, and salt to a large mixing bowl and mix until well combined.
- In a separate mixing bowl, whisk together the milk, eggs, maple syrup, and vanilla extract until fully combined. Add the dry ingredients into the wet ingredients and mix until well combined. Add the chopped apple and gently mix it in.
- Evenly distribute the mixture between all 12 cavities in the prepared muffin pan. Bake at 350°F for 25 to 27 minutes, or until the tops of the oatmeal cups are lightly golden brown and firm.
- Remove from the oven and allow to cool in the pan for about 5 to 10 minutes, then remove the oatmeal cups and transfer to a wire rack to finish cooling.

- Preheat oven to 350°F (177°C). Generously spray a muffin pan with nonstick spray. If using muffin liners, spray them with nonstick spray. The oatmeal cups stick to the liners a bit regardless, so I recommend skipping them.
- Whisk all of the ingredients together, except for the apples (and nuts and coarse sugar), in 1 large bowl. Using a spoon or rubber spatula, fold in the apples and nuts (if using). Batter will be a little liquid-y. Spoon batter evenly into muffin cups, making sure both the oats/apples and liquid are in each. Fill all the way to the top. See photo above. If desired, sprinkle the tops with coarse sugar.
- Bake for 25-30 minutes or until the edges are lightly browned and top appears set. If the tops appear to brown very quickly, tent a piece of aluminum foil on top.
- Cool for 5 minutes before serving. Cover leftover oatmeal cups tightly and refrigerate for up to 1 week.

SLOW COOKER BAKED APPLE OATMEAL CUPS
Steps:
- In a small saucepan, add oats and water.
- Bring to a boil, and cook 3-5 minutes, or until thickened.
- Remove from heat, and stir in cinnamon, ginger, vanilla, walnuts, raisins, and maple syrup. Set aside.
- Remove core and seeds of each apple carefully with a pairing knife.
- Scoop out enough flesh to make room for oats.
- Pour 1/2 cup water in slow cooker pan.
- Add apples, and fill each with prepared oatmeal.
- Cook on high for 2 - 2 1/2 hours, or low for 4 hours until apples are softened.
- Top each with additional cinnamon, syrup, or Greek yogurt before serving

- Add all ingredients to a large bowl and mix well until everything is combined then scoop the oatmeal mixture into your muffin tin using a large ice cream scoop. (Spray non-stick spray onto the muffin tin first if you have a non-stick muffin tin)

APPLE SPICE BAKED OATMEAL CUPS
Steps:
- Preheat oven to 350 degrees.
- In a medium bowl stir together rolled oats, cinnamon, nutmeg, baking powder, and salt. Set to the side.
- In another medium bowl crack and lightly beat the eggs. Whisk in the the brown sugar until blended. Whisk in the Greek yogurt, vanilla extract, milk, and coconut oil.
- Stir oats mixture into the wet ingredients until combined.
- Gently stir in the chopped apple and walnuts.
- Spray a 12-cup muffin pan with cooking spray. Drop oatmeal mixture, using a 1/3 measuring cup, into each of the muffin pan cups. Using a spoon press down the oat mixture into the liquid in each of the cups. This is to make sure the liquid is evenly distribute among the oats.

- Take out of the oven and let the oatmeal cups cool for 5 minutes. Remove muffins and serve with pure maple syrup.
