1 medium apple, sliced
1/3 cup pecan halves, toasted
1/4 cup cider vinegar
3 tablespoons honey
2 tablespoons olive oil
1/2 teaspoon honey mustard
1/8 teaspoon salt
1/8 teaspoon pepper
1 cup shredded Parmesan cheese

Steps:

  • In a serving bowl, combine the lettuce, apple and pecans. In a small bowl, whisk the vinegar, honey, oil, mustard, salt and pepper. Pour over salad; toss to coat. Sprinkle with cheese.

1 Granny Smith apple, cored and julienned
1 cup balsamic vinaigrette salad dressing
1 cup crumbled blue cheese
½ cup chopped pecans
4 slices turkey bacon
6 cups torn romaine lettuce

Steps:

  • Place the julienned apple into a bowl with the balsamic vinaigrette. Refrigerate for at least one hour to marinate.
  • Cook bacon in the microwave or in a skillet over medium-high heat until browned. Drain, and crumble.
  • In a salad bowl, combine the blue cheese, pecans, bacon and romaine lettuce, and toss to blend. When ready to serve, pour the apples and dressing over the top.

150g sliced white bread, cut into 2cm chunks 1 tbsp olive oil 50g pecans, roughly chopped 2 royal gala apples, thinly sliced 1 romaine lettuce, torn 100g Stilton, crumbled DRESSING 2 tbsp natural yogurt 1 tbsp lemon juice 1 tbsp extra virgin olive oil 1 tsp Dijon mustard ½ tsp clear honey

Steps:

  • 1 Preheat the oven to 200ºC, gas mark 6. Put the bread on a baking tray and drizzle with the oil. Season, then roast for 10-15 minutes until golden and crisp. Meanwhile, roast the pecans on a separate baking tray for 6-7 minutes, until fragrant. Transfer the croutons and nuts to a bowl with the apples, lettuce and Stilton; mix well. 2 In a small bowl, combine all the dressing ingredients, season and whisk well.
