TANGY APPLE CHICKEN LOAF



Tangy Apple Chicken Loaf image

A twist on traditional meatloaf, this dish is sweet and savory with a tangy glaze.

3 tablespoons butter
2 stalks celery, finely chopped
1 onion, chopped
½ teaspoon salt
1 carrot, grated
1 apple - peeled, cored, and chopped
1 ½ pounds ground chicken
1 egg
⅓ cup applesauce
2 tablespoons milk
½ cup dry bread crumbs
2 teaspoons poultry seasoning
1 teaspoon ground sage
½ teaspoon salt
¼ teaspoon ground black pepper
⅓ cup applesauce
1 tablespoon Dijon mustard
2 teaspoons honey

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the celery and onion with 1/2 teaspoon of salt, stirring occasionally, until the onions are soft and browned, about 12 minutes. Stir in the carrot, and cook for 5 more minutes; stir in the apple, and remove the mixture from the heat.
  • In a mixing bowl, lightly mix together the ground chicken, egg, 1/3 cup of applesauce, milk, bread crumbs, poultry seasoning, sage, 1/2 teaspoon of salt, and black pepper. Mix in the cooked vegetable-apple mixture. Form the mixture into a loaf, and place into the center of a 9x12-inch baking dish.
  • In a bowl, mix together 1/3 cup of applesauce, the Dijon mustard, and honey into a smooth mixture, and spread the glaze over the top and sides of the meat loaf.
  • Bake in the preheated oven for 30 minutes, then reduce the temperature to 375 degrees F (190 degrees C) until the internal temperature of the loaf is 180 degrees F (80 degrees C), about 30 more minutes. Allow the loaf to rest for 5 minutes before serving.

1/2 cup applesauce
1 tablespoon brown sugar

  • Combine meat ingredients well.

  • Made a crater or well in center of meat loaf.
  • Mix the sauce ingredients- pour into depression.

1/2 pound ground pork (90/10)
1/2 cup minced onion
1 egg, beaten
3/4 cup applesauce (unsweetened)
1 cup breadcrumbs (fine, plain, unseasoned)
3 tablespoons ketchup
1 1/2 teaspoons salt
1/4 teaspoon black pepper
Optional: 4 tablespoons ketchup or barbecue sauce, for topping

Steps:

  • Preheat oven to 350 F.
  • Lightly grease a 9 x 5 x 3-inch loaf pan.
  • In a large bowl, combine the 2 kinds of ground meat with the chopped onion, egg, applesauce, breadcrumbs, 3 tablespoons of ketchup, salt, and pepper; mix thoroughly with your hands.
  • Pat the meatloaf mixture into the prepared loaf pan.
  • Bake the meatloaf in the preheated oven for 1 1/2 hours.
  • If using the optional topping, take the meatloaf out of the oven about 10 to 15 minutes before it's done. Carefully pour off excess grease and spread the 4 tablespoons of ketchup or barbecue sauce over the top. Return the loaf to the oven and continue baking until it's done.
  • The minimum safe temperature for ground beef and ground pork is 160 F (71.1 C). If in doubt, check the temperature by inserting an instant-read thermometer into the center of the loaf.
  • Let the meatloaf cool for 10 minutes and then remove it to a platter. Slice and serve.

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.

1 green pepper, finely diced
1/2 tsp. minced garlic
6 slices bread, ripped into small pieces
1 egg

Steps:

  • Preheat oven to 350 degrees. Combine all ingredients except ketchup. Mix together with your hands until all ingredients are well blended. Form meat mix into a loaf, and place on a lightly sprayed broiler pan, or in a loaf pan. Spread ketchup over top and sides of loaf. Bake in preheated oven for 2 hours. Turn out of loaf pan or take off the broiler pan, and let sit for 5 minutes. Slice and serve immediately. Serve with Baked Potatoes and Green Beans.
