½ cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
⅓ cup unsweetened cocoa powder
½ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon baking powder
3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  • To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

This is an adopted recipe that I haven't yet tried. The original chef comments: "From Tender at the Bone by Ruth Reichl. The better the chocolate you use, the better the brownie you get....Please make sure that your oven temperature is accurate!"

2/3 cup butter
5 ounces unsweetened chocolate (get the good stuff)
2 teaspoons vanilla
4 eggs
1/2 teaspoon salt
2 cups sugar
1 cup flour, sifted

Steps:

  • Preheat oven to 400 degrees.
  • Butter and flour a 9-inch square baking pan.
  • Melt butter and chocolate in a double boiler over boiling water.
  • Remove from heat and add vanilla.
  • Beat eggs and salt in a mixer, add sugar at high speed and beat for 10 minutes until mixture looks white.
  • Add chocolate/butter mixture to the eggs just until blended.
  • Add flour and mix just until it is combined and you don't see any white streaks.
  • Pour in prepared pan and put in oven.
  • Immediately reduce heat to 350 degrees and bake for 40 minutes.
  • Prick with a toothpick to test for "doneness" it should NOT be quite clean when you pull the tooth pick out.
  • Be careful to not over bake - the brownies are fudge-like, not cake-like.
  • Important: cool completely before cutting.

2 cups sugar
Food coloring
1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup cocoa powder
1 cup semisweet or white chocolate chips or a combination of both
1 clear glass quart jar with a tight fitting lid
1 cup (2 sticks) unsalted butter, melted and cooled, plus more for greasing pan
4 large eggs
2 teaspoons vanilla extract

Steps:

  • To color the sugar: Divide the sugar into 4 (1/2-cup) portions. Put 1/2 cup sugar into the jar and add 1 to 3 drops of food coloring. Put the lid on and shake the jar well until the sugar is completely colored. Empty the sugar into a small bowl and continue with the remaining sugar using different food colorings to make different colors.
  • To make the Sand Art: Whisk together the flour and salt and set aside. Layer the dry ingredients into the jar, alternating colors (the sugar) and dark (cocoa powder) and light (flour), making your own design. Don't forget the chips! Screw on the lid and print out this recipe to enclose with your gift jar.
  • To bake: Heat the oven to 325 degrees F. Grease a 13 by 9-inch pan with butter.
  • Dump the contents of the jar into a large bowl. Mix together the melted butter, eggs, and vanilla. Stir the wet and dry ingredients together until well combined. Pour the batter into the prepared pan and bake for 30 to 35 minutes.

OUTRAGEOUS BROWNIES

1 pound unsalted butter
1 pound plus 2 cups semisweet chocolate chips, divided
6 ounces unsweetened chocolate
6 extra-large eggs
3 tablespoons instant coffee powder
2 tablespoons real vanilla extract
2 1/4 cups sugar
1 1/4 cups flour, divided
1 tablespoon baking powder
1 teaspoon kosher salt
3 cups diced walnut pieces

Steps:

  • Preheat oven to 350 degrees F. Grease and flour a 13 by 18 by 1 1/2-inch sheet pan.
  • Melt together the butter, chocolate chips, and unsweetened chocolate on top of a double boiler. Cool slightly. Stir together the eggs, instant coffee, vanilla and sugar. Stir in the warm chocolate mixture and cool to room temperature.
  • Stir together the flour, baking powder and salt. Add to cooled chocolate mixture. Toss the walnuts and chocolate chips with flour to coat. Then add to the chocolate batter. Pour into prepared pan.
  • Bake for about 30 minutes, or until tester just comes out clean. Halfway through the baking, rap the pan against the oven shelf to allow air to escape from between the pan and the brownie dough. Do not overbake! Cool thoroughly, refrigerate well and cut into squares.
  • This was adapted from a recipe for chocolate globs in the Soho Charcuterie Cookbook.

1 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/3 cup baking cocoa
2/3 cup sugar
2/3 cup packed brown sugar
1/2 cup semisweet chocolate chips
1/2 cup milk chocolate M&M's
ADDITIONAL INGREDIENTS:
3 large eggs, room temperature
2/3 cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Combine flour, salt and baking powder. In a 1-qt. glass container, layer flour mixture, cocoa, sugar, brown sugar, chocolate chips and M&M's, packing well between each layer. Cover and store in a cool, dry place up to 6 months. Yield: 1 batch (about 4 cups total). , To prepare brownies: Preheat oven to 350°. Beat eggs, oil and vanilla. Stir in brownie mix. Pour into a greased 8-in. square baking dish. Bake until center is set, 26-28 minutes (do not overbake). Cool on a wire rack.

  • Preheat oven to 400 degrees F. Line a 9 inch square metal baking pan with nonstick foil or parchment paper.
  • Melt butter in a saucepan. Reduce heat to low and add chocolate. Stir until melted; set aside. Alternately, you may melt them together in a double boiler or using the microwave.
  • Beat eggs and salt in a stand mixer with the whisk attachment. With mixer going, gradually add sugar and continue to beat, increasing speed slightly, until mixture is pale and thick (about 10 minutes). Beat in the vanilla.
  • Remove mixer from the stand and with a heavy duty scraper, stir in the melted chocolate. When chocolate is incorporated, stir in the flour.
