ASIAN-STYLE COLESLAW
This recipe is versatile, delicious, cooling and light for the warmer months. I love its delicate aroma and piquancy from the use of many fresh herbs and citrus. It is great served as a vegetarian side dish and alongside my roast chicken. You could also team it with cooked and peeled prawns, sticky pork belly, or grilled beef or pork ribs.

Steps:
- Place carrot, onion and salt in a glass or ceramic bowl, mix well. Set aside for 30 minutes. Combine vinegar and sugar in a small heavy-based pan and stir over medium heat until sugar dissolves. Simmer, uncovered without stirring, for about eight minutes, or until reduced and slightly syrupy. Set aside to cool. Drain carrot and onion and, using your hands, gently squeeze out any excess liquid. Place carrot and onion in the cooled syrup to pickle them lightly. Combine pickled carrot and onion and syrup with remaining coleslaw ingredients, adjust seasoning if necessary, toss well and arrange on a serving plate. Serve with Mumma Kwong's roast chicken.
SPICY SRIRACHA ASIAN COLESLAW
This Sriracha Asian Coleslaw is easy to make with only 6 ingredients and 10 minutes of time, but packs in all the flavor! Serve it as a side dish, or try it layered on your fish tacos, BBQ sandwich, burger, or bowls.

- Combine the mayo, sriracha, and lime juice in a bowl and whisk until smooth.
- In a large bowl, combine the coleslaw mix, green onion and cilantro. Pour the sauce over the top and use tongs to toss the mixture until evenly coated.

Quick and delicious, this Asian coleslaw is great with burgers, fish, or any Asian-inspired dish. A creamy dressing with peanut butter and rice vinegar brings it all together.

- Prepare the dressing: Place peanut butter in a medium bowl. Add the vegetable oil and the toasted sesame oil and whisk until nicely smooth. Whisk in the seasoned rice vinegar and do a taste test. Depending on how you like your dressing, how salty your peanut butter is, how seasoned your rice vinegar is, you may want to add a little more vinegar, a little more sugar, or a little salt. (Makes about 3/4 cup of dressing.)
- Toast the peanuts: Although the roasted peanuts from the store may already be cooked, you'll get even better flavor with just a little toasting. Heat a small skillet on medium high heat and add the nuts to the pan. Do not ignore or the nuts can easily burn. Stir a little with a wooden spoon until the peanuts begin to get browned in spots and you can smell the toasting aromas. Remove peanuts from pan to a dish.
- Toss the salad together: In a large bowl, toss the sliced cabbage, grated carrots, and peanuts together, and any other optional garnishes, such as a little chopped cilantro or green onions. Right before serving, mix in the dressing.

I often make this as a quick side salad, quicker if you buy pre packaged coleslaw which I do if there are only 2 of us. You can replace the dressing with Nuoc Cham and some black pepper for a vietnamese style.

Steps:
- Finely shred the red and white cabbage and toss together with carrots, spring onion and beansprouts.
- Splash in the rice wine vinegar, sesame oil and fish sauce. Toss together.
- Just before serving, shred the herbs and toss together with the coleslaw mix and toasted sesame seeds.
- Lay down a base of snow pea tendrils and top with the tossed cabbage mix.
