Salmon Salad with Asian Ginger Sesame Dressing image

3 - 4 salmon fillets (, skinless)
3/4 tsp salt and pepper (, each)
1 tbsp oil
250g / 1.5 cups cherry tomatoes (, halved)
2 cucumber (, sliced (or 1 English/telegraph long cucumber))
1 large avocado (, cut into 1.5cm / 2/3" pieces)
6 red radish (, sliced)
150g / 5 oz leafy crisp lettuce of choice ((6 big handfuls))
1 cup edamame (, cooked per packet (Note 1))
1 green onion (, finely sliced on diagonal)
1/4 cup crispy fried shallots ((Note 2))
2 tbsp soy sauce ((light or all purpose))
2 1/2 tbsp rice vinegar ((aka rice wine vinegar Note 3))
1 tbsp sesame oil ((toasted, Note 4))
3 tbsp olive oil ((or other neutral flavoured oil))
1.5 tsp sugar (, any type)
2 tsp fresh ginger (, grated)
1 garlic clove (, minced)
1/2 tsp black pepper

Steps:

  • Place Dressing ingredients in a jar and shake well.
  • Sprinkle both sides of salmon with salt and pepper.
  • Heat oil in a non stick skillet over medium high heat.
  • Place salmon in upside down (ie skin side up), cook for 3 minutes or until deep golden.
  • Turn and cook for another 2 - 3 minutes, or until cooked to your taste.
  • Remove onto plate and cool for 5 minutes.

Asian-Inspired Wasabi Salmon Salad with a Ginger Dressing (Paleo, Low-Carb) image

I'm a HUGE fan of this tasty Asian-inspired wasabi salmon salad with a ginger dressing! Paleo, dairy-free, gluten-free, grain-free.

Number Of Ingredients 10

2 batches wasabi sauce (click for wasabi sauce recipe)
1 batch ginger citrus sauce
1 16 oz salmon fillet (sliced into 4 servings)
1/2 teaspoon sesame seeds
pinch Salt
1 large head lettuce of choice
8 oz cherry tomatoes
1 large cucumber, sliced and skin removed if desired
4 4 oz cups no-sugar added mandarin oranges
squeeze of lime, if desired

Steps:

  • Preheat oven to 450F.
  • Prep sauces and set aside. These can be made ahead of time to speed up the process.
  • Slice salmon into four servings. Place on a baking sheet, and sprinkle with salt and sesame seeds. Place in oven and bake for 12-14 minutes, or until internal temperature reaches right around 145F.
  • While salmon is cooking, prep salad by chopping lettuce and cucumber. To a bowl, add chopped greens, tomatoes, cucumber and mandarin oranges. Add in ginger citrus dressing and toss to coat. Alternatively, you can drizzle the dressing over each individual serving bowl.
  • Once salmon is done, remove from oven and allow to cool for a few minutes. Drizzle with the wasabi sauce. Place salmon on top of salad, add a squeeze of lime if desired, and enjoy.

A great Asian inspired salad dressing. A friend of mine gave me this recipe after I relentlessly begged him for it. I think its fabulous with a combination of romaine, sprouts, peppers, sweet peas and carrots. Delicious.

Number Of Ingredients 6

2 tablespoons chopped gingerroot
1 tablespoon chopped garlic
1 cup white wine
2 cups canola oil
2 tablespoons sugar
2 tablespoons wasabi powder

Steps:

  • Place all ingredients but oil in blender.
  • Blend for 2 minutes.
  • With blender still running slowly drizzle in the oil until well blended.
  • Refrigerate .
  • Will keep for 2-3 weeks.
