GRILLED TOFU SKEWERS WITH SRIRACHA SAUCE
Chunks of firm tofu are marinated with vegetables in a sauce made with sriracha, soy sauce, sesame oil, onion, and jalapeno.

Steps:
- Place tofu, zucchini, red bell pepper, and mushrooms in a bowl. Mix sriracha sauce, soy sauce, sesame oil, onion, jalapeno, and pepper in a small bowl, and pour over tofu and vegetables. Toss lightly to coat. Cover, and allow to marinate at least 1 hour in the refrigerator.
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Thread tofu and vegetables on to skewers. Grill each skewer 10 minutes, or to desired doneness. Use any remaining marinade as a dipping sauce.

Steps:
- Soak wooden skewers in a shallow dish filled with water to prevent burning.
- Place tofu on a paper towel-lined plate. Top with another paper towel and another plate. Microwave for 3 minutes.
- Slice tofu into 9-12 cubes and set aside
- Combine water, maple syrup, soy sauce, BBQ sauce, oil, garlic powder, Sriracha, and pepper then stir.
- Place tofu in the marinade and refrigerate for at least 1 hour.
- Remove tofu from marinade. Heat marinade over a low heat and cook for about 10 minutes, until it reduces and thickens.
- Assemble skewers, alternating between tofu and veggies.
- Heat a pan or grill and cook each skewer for 3-4 minutes per side.
- Enjoy!

- Remove tofu from packaging. Place about 4 paper towels on a plate. Set tofu on top of plate and cover with more paper towels. Place a cast iron pan or something else that is heavy on top. Let sit 30 minutes.
- In a medium bowl, stir together Hoisin sauce, soy sauce, sugar, ginger, garlic, and red pepper flakes.
- Cut tofu into bite-sized pieces. Place in bowl with sauce and toss to coat. Let sit 30 minutes.
- Heat olive oil in a medium cast iron pan over medium-high heat. Once really hot, add tofu. Once nicely seared on the bottom, flip over. Continue to cook until seared on bottom.
- Drizzle with sesame oil and remove from heat.
- Sprinkle with green onions and serve with rice.

TOFU SKEWERS WITH SATAY SAUCE

- Cut the block of tofu into long slices, approx 15mm x 25mm x 100mm, and insert a skewer into each along the long length, and lay in a dish.
- Drizzle sesame oil and and soy sauce over the tofu skewers, and sprinkle over lemon grass and chopped chilli. Marinade for an hour, turning and basting occasionally.
- Meanwhile, make the satay sauce. Fry finely chopped onion for a couple of minutes in the olive oil, then add finely chopped garlic for another minute.
- Add the peanut butter, coconut milk, sugar and soy sauce, then stir until thickened.
- Place the skewers under a hot grill on a baking sheet, and cook for a couple of minutes, or until browned. Turn and cook the other side.
- Re-warm the satay sauce if necessary - add a little water or some of the marinade if it has become too thick. Serve in a small dish on each plate with the tofu skewers.

- Start by pressing your tofu. I like to use a tofu press for this but you can also do it by wrapping the tofu in a towel or paper towels, placing it on a plate, and then weighing it down with a heavy skillet for 30 minutes. Cut the tofu into 1 inch wide cubes.
- Make the tofu marinade by whisking together the soy sauce, olive oil, apple cider vinegar, garlic powder, fine sea salt, black pepper, and optional liquid smoke.* Place the tofu in a sealable container and cover with the marinade. Then marinate for a few hours or even overnight. When possible, I like to flip the tofu pieces over and move them around so that all of the tofu is getting soaked in the liquid.

- Prepare your grill by lightly oiling the grates and setting it to a medium heat. This will vary depending on your grill. If using wooden skewers, we suggest soaking them in water for 30 minutes so they don’t burn while grilling.
- Slice the pressed tofu into 8 long sticks. We did this by cutting the tofu in half lengthwise and then cut the two large rectangles into 8 even pieces. Thread the tofu onto the skewers lengthwise, being sure to skewer almost to the top without going through. Using a basting brush, coat all the sides of the tofu with barbecue sauce.
- Add the tofu onto the grill and cook for about 2 minutes on each side, or until there are visible grill marks. If the tofu begins to burn, lower the heat on your grill. Each time you flip the tofu, brush it with more barbecue sauce. We flipped our tofu 4-5 times, to ensure that the barbecue sauce had caramelized on the tofu. If you aren’t sure what this means, just take a look at our tofu on the grill vs. the final product and you’ll be able to eyeball it from there!
- Remove from heat and serve with your favorite sides. We served ours in a buddha bowl with a salad, rice, and beans. Enjoy!
