A cold and savory salad that will be the hit of your next gathering!

1 4 ounce box brown and wild rice mix (cooked according to package directions and cooled)
6 oz can water chestnuts - drained and coarse chopped
1/2 cup cashews - coarsely chopped (hold out a few whole ones for garnish if you would like)
1/2 cup sliced green onion
1/2 cup chopped baby corn
1/3 cup teriyaki sauce (store bought, bottled)
1/2 cup mayonnaise
1/4 cup dijon mustard
1/2 cup plain greek yogurt
Salt and pepper to taste

Steps:

  • Cook brown wild rice according to package. Cover and refrigerate until chilled - about two hours.
  • In medium bowl, combine yogurt, mayo, dijon and Yoshida sauce with a wire whisk until well blended.
  • In a large bowl, combine rice, cashews, onions, baby corn and water chestnuts and stir. Toss with dressing and stir.
  • Top with additional cashews and onions for garnish if desired.
  • Store in refrigerator.

400 g (2 cups) long-grain rice
2 tablespoons olive oil
1 large red onion, finely chopped
4 garlic cloves, crushed
1 tablespoon finely chopped fresh ginger
1 long red chilli, seeded and thinly sliced
4 spring onions (scallions), finely sliced
2 tablespoons soy sauce
1/2 teaspoon sesame oil/
2 teaspoons black vinegar
1 tablespoon lime juice
50 g (1 cup) roughly chopped coriander (cilantro) leaves

Steps:

  • 1. Bring 1.25 litres (5 cups) of water to the boil in a large saucepan. Add the rice and cook it, uncovered, for 12-15 minutes over low heat, or until the grains are tender. Drain and rinse the rice under cold running water, then transfer it to a large bowl. 2. While the rice is cooking, heat the oil in a frying pan over medium heat. Add the onion, garlic, ginger and chilli, and cook them for 5-6 minutes, or until the onion has softened, but not browned. Stir in the spring onion and cook for another minute. Remove the onion mixture from the heat and add it to the rice with the soy sauce, sesame oil, vinegar, lime juice and coriander, and mix well. Cover the rice salad and refrigerate until you are ready to serve.

15-MINUTE ASIAN RICE SALAD



15-Minute Asian Rice Salad image

This comforting salad is ready in just 15 minutes. To keep the prep time to a minimum, grate fresh ginger instead of finely chopping it, use kitchen shears instead of a knife to snip off the stems of the shiitake mushrooms and purchase pre-cooked brown rice, grated carrots and shelled edamame.

2-inch piece ginger
1/3 cup extra-virgin olive oil
1/3 cup rice wine vinegar
3 tablespoons soy sauce
4 teaspoons toasted sesame oil
Kosher salt and freshly ground black pepper
6 ounces shiitake mushrooms (about 4 cups), stems removed
2 scallions
1 cup frozen shelled edamame, thawed
4 cups store-bought pre-cooked or leftover brown rice
2 breasts from a rotisserie chicken
1 cup shredded carrots
5 ounces baby arugula

Steps:

  • Peel the ginger and finely grate it in to a large mixing bowl. Whisk in the olive oil, vinegar, soy sauce and sesame oil. Season with some salt and pepper. Reserve 2 tablespoons of the dressing and set aside. Thinly slice the mushrooms and scallions, keeping the white and green parts of the scallions separate. Add the sliced mushrooms, scallion whites and the edamame to the dressing in the large mixing bowl. Stir to combine and then marinate at room temperature (the mushrooms will become more tender while they sit in the dressing) while you prepare the rest of the ingredients, stirring occasionally. Reserve the sliced scallion greens to use as garnish.
  • Place the rice in a glass mixing bowl and break it up using a fork. Place a damp paper towel directly on top of the rice and place in the microwave; cook until just warmed through and softened, about 3 minutes.
  • Meanwhile, remove the skin from the chicken and shred the meat in to large bite-size pieces, about 2 cups. Toss the chicken, warm rice and carrots with the mushrooms and edamame. Season with some salt and pepper.
  • Toss the baby arugula and reserved dressing in a large mixing bowl. Season lightly with salt and pepper. Divide the arugula among 4 large plates and top each with 2 cups of the salad mixture. Garnish with the reserved scallion greens.

2 cloves garlic, minced
1 2-inch piece ginger, peeled and grated
3 tablespoons toasted sesame oil
1/4 cup rice vinegar
2 tablespoons soy sauce
Pinch of sugar
3/4 pound large shrimp, peeled, deveined and halved lengthwise
1 large carrot, shredded
2 stalks celery, thinly sliced
2 cups snow peas, thinly sliced
1 tablespoon vegetable oil
2 cups cooked white or brown rice
1 bunch scallions, thinly sliced
1/4 head iceberg lettuce, shredded
1 cup mung bean sprouts
1/2 cup chow mein noodles and/or chopped peanuts

Steps:

  • Whisk the garlic, ginger, sesame oil, vinegar, soy sauce and sugar in a large bowl. Transfer 2 tablespoons of the dressing to a medium bowl, add the shrimp and toss. Add the carrot, celery and snow peas to the remaining dressing and toss.
  • Heat a large skillet over high heat and add 2 teaspoons vegetable oil. Add the shrimp and stir-fry until they turn pink, 3 to 4 minutes, then transfer to the bowl with the vegetables. Add 3 to 4 tablespoons water to the skillet and scrape up the browned bits with a wooden spoon, then add the liquid to the bowl with the shrimp. Let the skillet reheat, then add the remaining 1 teaspoon vegetable oil and stir-fry the rice until toasted, about 2 minutes. Remove from the heat and let cool.
  • Add the rice and scallions to the shrimp-vegetable mixture and toss. Divide among bowls and top with the lettuce, sprouts, chow mein noodles and/or peanuts.

1/4 cup minced fresh parsley

  • Place bulgur in a small bowl. Stir in boiling water. Cover and let stand for 30 minutes or until most of the liquid is absorbed. The best thing about this salad is how it comes together in no time at all. Asian rice noodles generally cook more quickly than wheat noodles and with the addition of the precut coleslaw mix the prep time is very minimal.

1 (8-ounce) box Asian brown rice (whole-grain) noodles
1/4 cup soy sauce (preferably reduced-sodium)
1 tablespoon rice vinegar
2 teaspoons fresh lime juice (from 1/2 lime)
2 teaspoons honey
2 teaspoons toasted sesame oil
1 teaspoon minced fresh ginger
1 garlic clove, minced
3/4 cup fresh cilantro leaves, chopped
3/4 cup chopped salted, dry-roasted peanuts or cashews
2 1/2 cups coleslaw mix (shredded green and red cabbage plus carrots, found in the produce aisle)
Red pepper flakes (optional)

Steps:

  • Cook the noodles according to the package directions. Drain and set aside in a large bowl to cool (a few minutes in the freezer can help!). Cut the noodles up a bit with kitchen shears or a knife to make them easier to toss.
  • In a small bowl, whisk together the soy sauce, vinegar, lime juice, honey, sesame oil, ginger, and garlic.
  • Add the sauce, cilantro, peanuts, and slaw mix to the bowl with the noodles and toss until well combined. If desired, sprinkle in red pepper flakes to taste. Serve at room temperature or refrigerate for later.

1 1/2 to 2 cups short-grain brown or white rice
Salt and freshly ground black pepper
1/2 cup chopped scallion
1 small or 1/2 large red or yellow bell pepper, cored, seeded and chopped
1/4 cup finely chopped or shredded celery
1/4 cup finely chopped or shredded carrot
1 cup firm tofu, preferably baked, optional
6 tablespoons miso paste
3/4 cup warm water or sake
1 teaspoon sugar
1 tablespoon mirin or honey
1 tablespoon rice vinegar, or more to taste
2 sheets of nori, lightly toasted
2 tablespoons black or white sesame seeds, toasted

Steps:

  • Cook rice in abundant salted water, as you would pasta, until it's just done; white rice will take 10 to 15 minutes, brown 30 or a little longer. Drain, rinse in cold water, drain again, then combine with vegetables and tofu in a large bowl.
  • Put black pepper, miso, water or sake, sugar, mirin or honey, and vinegar in a small bowl, and whisk together. Taste, and add more vinegar and a pinch of salt, if needed.
  • Combine rice mixture with miso dressing with 2 big forks, fluffing rice and tossing gently to separate grains.
  • Crumble nori over salad and sprinkle with sesame seeds, taste, and adjust seasoning or moisten with a little more dressing. Serve at room temperature, or refrigerate for up to a day, bringing salad back to room temperature before serving.

This recipe occurred semi-accidentally. I was studying various Thai recipes and examining the flavors, and went home to stare at my fridge, and out came this recipe. A wonderful condiment to eat with this dish, and many other asian dishes, is Sambal Oelek, a garlic-chili paste you can find in the asian section of most groceries and asian specialty stores. It's quite spicy, and quite tasty.

4 cups uncooked jasmine rice
2 teaspoons unsalted butter
2 teaspoons minced fresh ginger root
2 (14 ounce) cans coconut milk
2 cups water
½ teaspoon salt
1 tablespoon peanut oil
2 cloves garlic, minced
1 shallot, minced
1 Thai chile pepper, seeded and minced
1 teaspoon minced fresh ginger root
1 teaspoon minced lemon grass
½ pound peeled and deveined medium shrimp (30-40 per pound)
½ red bell pepper, sliced
1 tablespoon chopped fresh basil
1 tablespoon fish sauce
1 teaspoon soy sauce

Steps:

  • Bring the rice, butter, ginger, coconut milk, water, and salt to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, about 20 minutes. Remove from the heat, fluff with a fork, and refrigerate until cold.
  • Heat the peanut oil in a large skillet over medium-high heat. Stir in the garlic, shallot, minced chile pepper, ginger, and lemon grass; cook for 1 minute until the shallot begins to go limp. Add the shrimp; cook and stir until the shrimp has turned pink, then stir in the red bell pepper slices. Continue cooking until the shrimp is no longer opaque in the center. Season with basil, fish sauce, soy sauce, and lime juice.
  • Stir the shrimp mixture into the chilled rice along with the pineapple and sugar. Sprinkle with cilantro to serve.

A refreshing crisp and crunchy vegetable and rice salad, with a delightfully fragrant lemon, soy sauce and sesame salad dressing. A terrific way to entice the children to eat their vegetables, and a keen way to use up leftovers. It's wonderful alongside some your favorite BBQ meat, or grilled teriyaki chicken. With the addition of some leftover turkey, or some pressed seasoned tofu, it's a great main dish salad! You can change out the nuts (try pine nuts!), add your favorite and freshest garden vegetables and make this salad your own. If you like your dressing a little more lemony, add 1/2 tsp. of finely grated fresh lemon zest. I'd love to hear your new combinations.

Steps:

  • Place all the prepared vegetables and fruit in a large salad bowl. Toss with the cooled rice. Sprinkle with 1/2 the nuts, reserving the rest for garnish.
  • Combine the dressing ingredients in a jar with a screw top, shake until combined. Taste for balance. If it needs a little more lemon drizzle in another teaspoon at a time, and retaste. Add a little more soy sauce if you prefer too.
  • Drizzle 1/2 the dressing on the salad, toss. Sample the salad - depending on what kind of rice you use, you may require more dressing. Add more as necessary. Top the salad with the remaining chunky nuts, and serve.
