10 cups water
2 large onions or 2 bunches scallions, chopped
4 -5 large carrots, peeled and sliced
4 stalks celery & leaves, chopped
10 cloves garlic, unpeeled and smashed
1/4 teaspoon whole black peppercorns or 1/4 teaspoon szechuan peppercorns
6 whole cloves
3 inches fresh gingerroot, sliced (about 1 1/2 ounces)
4 -5 dried shiitake mushrooms (optional)
2 large parsley sprigs
1/2 teaspoon salt

Steps:

  • Combine all the ingredients in a large soup pot, cover, and bring to a boil.
  • Lower the heat simmer for 45 minutes to 1 hour.
  • Strain the stock and use it right away, or refrigerate in a covered container for up to 4 days, or freeze it for up to 6 months.

5 cups cold water
2 (5-g) packages katsuo bushi (dried bonito flakes; 1 cup)

Steps:

  • Wipe any sand or salt from kombu with a dampened cloth. Bring kombu and water just to a boil in a 3-quart saucepan over high heat. Remove kombu with tongs and reserve for another use.
  • Sprinkle katsuo bushi over liquid and remove pan from heat. Let stand 3 minutes, then pour through a cheesecloth-lined sieve into a bowl.

  • Combine all ingredients except salt and ground pepper in a medium saucepan, and bring just about to a boil. Turn the heat a little lower, and simmer, uncovered, 10 to 20 minutes. Strain, taste and adjust seasonings.

2 tablespoons peanut oil
2 small yellow onions, chopped
2 celery ribs, chopped
2 inches fresh ginger
1 small green serrano chili, halved
2 lbs fresh fish bones, from white nonoily fish
12 cups filtered water or 12 cups mineral water
2 cups white wine
1 cup rice wine or 1 cup dry sherry
1 teaspoon kosher salt

Steps:

  • Heat the oil in a large stockpot over medium heat and add the onions, celery, ginger and serrano and saute until golden Add the fish bones and sweat for 10 minutes Add the remaining ingredients and bring the mixture to a boil.
  • Simmer for 1 hour, partially covered Strain and refrigerate or freeze until ready to use I freeze in ice cube trays, and store the cubes in double ziplocks, until ready to use Ask your local fish store to save fish bones, for you.
