3 tablespoons ghee (clarified butter), divided
½ cup thinly sliced sweet onion
1 clove garlic, minced
2 teaspoons balsamic vinegar
salt and ground black pepper to taste
2 tablespoons chopped English walnuts
1 pound asparagus spears, woody bases removed

Steps:

  • Melt 1/2 of the ghee in a nonstick skillet over medium-low heat. Add onion; spread out into a thin layer. Cook, stirring occasionally, until soft and beginning to brown, 8 to 10 minutes. Reduce heat if it's browning too quickly; do not allow to burn. Add garlic; cook and stir until fragrant, about 1 minute. Stir in vinegar.
  • Transfer onion-garlic mixture to a bowl; season with salt and pepper. Wipe out skillet and melt the remaining ghee over medium-low heat. Add walnut pieces and stir until crisp and lightly toasted, about 3 minutes. Remove from pan and set aside.
  • Add asparagus to the same skillet and increase heat to medium-high. Cook, stirring frequently, until bright green, tender, but still crunchy, 10 to 12 minutes. Season with salt and pepper. Plate asparagus, add onion mixture, and garnish with walnuts.

1 bunch pencil asparagus, tough bottom stems removed
1 small red onion, finely diced
1 cup coarsely grated aged pecorino
1/2 cup red wine vinegar
Extra-virgin olive oil
Kosher salt

Steps:

  • Cut the asparagus, including the tips into very thin slices, crosswise and place in a medium bowl. Add the red onion and pecorino and toss to combine. Dress with the vinegar, olive oil and salt and toss again. This salad should be fairly heavily dressed. The vinegar will sort of "cook" or tenderize the asparagus.
  • It is best to do this about an hour or so in advance to let the flavors "marry".
  • Semplice!

5 tablespoons olive oil, divided
1 large red onion, chopped

Steps:

  • Place beets in a large resealable plastic bag; add 2 tablespoons oil. Seal bag and shake to coat. Place an 18x12-in. piece of heavy-duty foil in a 15x10x1-in. baking pan. Arrange beets on foil; fold foil over beets and seal tightly. Bake at 400° for 1 to 1-1/4 hours or until tender. , Cool to room temperature. Cut beets into cubes; place in a large bowl. Add onion. In a small bowl, whisk the vinegars, sugar, salt, basil, pepper and remaining oil. , Pour over beet mixture; gently toss to coat. Cover and refrigerate for at least 1 hour, stirring several times. Serve with a slotted spoon.

I had initially envisioned a salad in which the asparagus was cut into short lengths and tossed with the quinoa. But the colorful asparagus got lost in the quinoa, and since I love the look of the bright green asparagus against the red grain (O.K., "pseudograin"), I remade this and garnished it with the steamed asparagus. The quinoa, tossed with chives, parsley, walnuts and a lemony vinaigrette, is sprinkled with dukkah before serving, a surprising touch.

Steps:

  • Put the breadcrumbs, Parmigiano, walnuts, and lemon zest in a large bowl. Add 1 teaspoon salt, a bunch of twists of black pepper, and 1/2 teaspoon chile flakes. Toss to combine everything.
  • Cut the asparagus on a sharp angle into very thin slices and add to the crumb mixture. Add 1/4 cup lemon juice and toss some more. Taste and dial in the flavors by adding more salt, black pepper, chile flakes, or lemon juice.
  • When the flavors are bright and delicious, add the mint and 1/4 cup olive oil and toss. Taste and adjust again, and serve.

2 pounds asparagus, trimmed
1 tablespoon minced shallot
1/2 teaspoon minced garlic
1/2 teaspoon Dijon mustard
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
1/4 cup champagne or white-wine vinegar
1/2 cup vegetable oil
1 tablespoon minced fresh herbs, such as basil, chives, or flat-leaf parsley

Steps:

  • Prepare an ice-water bath; set aside. Place asparagus in a steamer basket set over a pot of boiling water. Cover and steam until just tender. Remove and transfer to ice-water bath until cool. Remove and pat dry. Place asparagus on a platter (or divide between 6 individual plates); set aside.
  • In a medium bowl, whisk together shallot, garlic, mustard, salt, pepper, and vinegar. While whisking constantly, add the oil in a slow, steady stream until completely incorporated. Whisk in the herbs. Drizzle vinaigrette over asparagus. Serve immediately.

1 heart romaine lettuce, chopped
1 can 14 ounces sliced beets, drained and chopped
4 radishes, chopped
1/2 small red onion, chopped
2 ribs celery, chopped
2 tablespoons black cherry, seedless raspberry or apricot preserved
2 tablespoons vinegar, eyeball it
1 teaspoon poppy seeds, optional
3 tablespoons extra-virgin olive oil
Salt and pepper

Steps:

  • Toast nuts in a small pan over medium heat, 3 to 4 minutes, then let them cool.
  • Combine chopped lettuce, beets, radishes, onion, celery and toasted walnuts in a shallow bowl. Place the preserves into a small bowl and whisk vinegar into it. Add poppy seeds to dressing if you are using them. Whisk extra-virgin olive oil into the dressing and season it with salt and pepper. Dress salad and toss to coat evenly then adjust salt and pepper to your taste.

1/4 cup stone ground dijon mustard
1/4 cup white wine vinegar
2 tablespoons honey
1 cup vegetables or 1 cup grapeseed oil
1 garlic clove, minced
2 tablespoons finely chopped basil
salt and pepper
30 asparagus spears, woody ends removed, cut 4-inches long
4 medium sized beets
3 red onions, sliced onto 1/4 inch thick rings
1 cup walnuts, halved, lightly toasted

Steps:

  • Vinaigrette: Mix mustard, vinegar, honey, oil, garlic and basil in bowl. Season with a little salt and pepper and refrigerate for 30 minutes.
  • Salad: Bring a large pan of lightly salted water to boil. Add the asparagus spears to the water and cook for 3 minutes. Drain. Plunge the spears into cold running water to halt the cooking process. When cooled, drain the asparagus on paper towels, toss the asparagus with 1/2 cup of the vinaigrette. Refrigerate for 1 hour.
  • Bring medium saucepan of lightly salted water to a boil. Add the beets and cook until tender when pierced with a sharp knife. Drain. Slip off the skins under cold running water. Slice the beets 1/4 inch thick. You need approximately 24 slices. Toss the beets with 1/4 cup of the vinaigrette. And refrigerate at least 1 hour before serving.
  • To assemble the salad, layer the beets, onions, and asparagus on small salad plates. Drizzle the remaining dressing around the plates and sprinkle with walnuts.

This is inspired by a number of red bean recipes from Georgia (the country, not the state). Walnuts, herbs, garlic and pomegranate juice show up in many Georgian dishes. I used pomegranate molasses, which is more of a Middle Eastern ingredient, in the dressing, and I love the sweet and sour tang it introduces to the dish. I prefer using small red beans that I've cooked myself, but in a pinch you can make this with canned red kidney beans.

1/4 cup finely diced celery
1/4 cup chopped cilantro

Salt and freshly ground pepper
1/2 small red onion, cut in half lengthwise, then cut across the grain in thin slices (optional)
1/3 cup (1 1/2 ounces) walnuts
1 large garlic clove, peeled, halved, green shoot removed
1/4 teaspoon red pepper flakes or 1/2 to 1 teaspoon Aleppo pepper, to taste
1 tablespoon pomegranate molasses
1 tablespoon fresh lemon juice
1 tablespoon walnut (or olive) oil
1 tablespoon extra virgin olive oil

Steps:

  • Place the beans in a bowl and toss with the celery and herbs. Season with salt and pepper.
  • If using the red onion, soak the onion in cold water for 5 minutes, then drain, rinse and drain again on paper towels. Add to the beans.
  • In a mortar and pestle, mash the garlic with a generous pinch of salt and the red pepper flakes or the Aleppo pepper. Add the walnuts and grind together until the walnuts are coarsely ground but still have some texture. Toss with the beans.
  • Whisk together the pomegranate molasses, lemon juice, vinegar and salt and pepper to taste. Whisk in the oils, toss with the beans, and let marinate 30 minutes. Serve.

a large handful of fresh oregano or marjoram leaves
1 garlic clove
juice of 1½ lemons
4 tbsp extra-virgin olive oil
250g bunch asparagus , cut into 3cm/1¼in lengths
2 x 250g packs boiled fresh beetroot , cut into quarters
zest of 1 lemon
2 spring onions , finely sliced
85g bag watercress , large stalks removed
10 green and 10 purple basil leaves (or 20 of one colour)
400g feta or goat's cheese

Steps:

  • The day before: make the dressing. Put the oregano or marjoram, a pinch of salt and the garlic into a food processor and pulse to a paste. Add the lemon juice and whizz until smooth. Stir in the olive oil and season - it should be sharp and a bit salty.Cover and chill.
  • Two hours before serving: bring a pan of salted water to the boil, add the asparagus and cook for 3 minutes. Drain and cool under the cold tap. Cover and keep cool.
  • Put the beetroot in a large bowl and toss with twothirds of the dressing. Add the lemon zest and spring onions, cover and keep at cool room temperature with the remaining dressing.
  • To serve: add the watercress to the beetroot and tear in the basil. Toss in the asparagus and season with freshly ground black pepper. Taste before adding salt as the cheese is quite salty.Mix lightly, so you don't dye everything pink, then pile into a serving dish. Crumble over the cheese and pour the remaining dressing on top.

This dandelion green salad is studded with sweet roasted onions and garlicky walnuts and tossed with a simple lemon vinaigrette. Pair it with this Herb-Coated Beef Tenderloin and Salt-and-Pepper Matzo for a perfect passover meal.

3 small red onions, cut into 1-inch-thick rounds
Extra-virgin olive oil
Kosher salt and freshly ground pepper
1 small garlic clove, minced
1/2 cup walnut halves
Zest of one lemon plus 1 tablespoon juice
1/2 teaspoon red-pepper flakes
Flaky sea salt
4 cups packed dandelion greens

Steps:

  • Preheat oven to 450°F. Drizzle onions with some oil; season with kosher salt and freshly ground pepper. Place on one side of a baking sheet. Mash minced garlic clove and a pinch of salt with the side of a knife to form a paste.
  • Toss walnuts with 1 tablespoon oil and garlic paste; season with salt to taste and spread on other side of sheet. Roast until nuts are toasted, 5 to 6 minutes. Transfer nuts to a cutting board; let cool slightly.
  • Meanwhile, flip onions and continue roasting until just tender, 9 to 12 minutes more. Chop nuts and toss with zest of 1 lemon, 1/2 teaspoon red-pepper flakes, and a pinch of flaky sea salt.
  • Pile 4 cups packed dandelion greens on a platter; drizzle with 1 tablespoon each oil and lemon juice, and season with flaky salt. Top with onions, sprinkle with nut mixture, and serve.

ASPARAGUS, PICKLED BEETS & BLUE CHEESE SALAD



Asparagus, Pickled Beets & Blue Cheese Salad image

I created this salad after perusing some recipes here and using what I had on hand, avoiding anything too sweet. The pickled beets are just the right ouch of sweet & sour. Looks pretty too! The asparagus can be made well in advance. If your onion is too strong, slice and put in an ice water bath for 5 minutes and drain. Cooking time is blanching and ice water bath time.

1/2 teaspoon salt, for boiling water
ice water, bath
1 small red onion, slivered using as much as you like
4 pickled beets, large dice, one per person depending on the size
1/2 cup blue cheese, crumbled use as much as you like, sub. soft goat cheese
salt, to taste
fresh ground black pepper, to taste
12 ounces champagne vinaigrette, I like store bought Girard's light

Steps:

  • Boil water for asparagus, add salt.
  • Make a ice water bath in a large bowl. You will use to shock the asparagus and halt the cooking.
  • Trim tough ends off of asparagus spears, leave whole.
  • Place asparagus spears in boiling water. Blanche for 2-3 minutes.
  • Quickly remove from hot water and place in ice water bath to shock.
  • Prepare onions and pickled beets as suggested.
  • Arrange asparagus spears on a platter or individual salad plates.
  • Sprinkle and arrange the onion slices, beets and blue cheese.
  • Top with a light champagne vinaigrette. I like Girard's brand.

2 medium beets, trimmed and scrubbed
Olive oil
1/2 teaspoon kosher salt, plus more for seasoning
1/3 cup coarsely chopped walnuts
1 head red leaf lettuce, rinsed, dried, and torn into pieces
2 navel oranges
1 tablespoon minced shallot
1/2 teaspoon fennel seeds, crushed in a mortar and pestle
2 tablespoons fresh lemon juice
1/4 cup walnut oil

Steps:

  • 1. Heat the oven to 350°F. Lay the beets on one half of a large piece of aluminum foil. Sprinkle with olive oil and season with salt. Fold the foil in half to make a packet and roll the edges to seal. Lay on a baking sheet and roast until tender, 45 to 60 minutes. Let cool. Peel the beets and slice into 1/2-inch-thick wedges.
  • 2. Keep the oven at 350°F; toast the walnuts on a baking sheet for a few minutes, 5 to 7, until they smell good. Remove the nuts and let them cool while you wash and dry the lettuce and tear it into a salad bowl.
  • 3. Zest one orange-you need 1 teaspoon grated zest. Using a very sharp knife, cut the ends from the oranges, slicing just deep enough to expose the flesh. Cut off the remaining peel and pith. Then, working over a bowl, remove the segments, cutting between the membrane. Place the segments in a strainer to drain off excess juice.

1 red onion , thinly sliced
3-4 tbsp vinaigrette , preferably homemade

Steps:

  • Peel the asparagus bases with a swivel peeler and trim the woody ends. Blanch in boiling salted water for 1½-2 mins until just tender. Drain and refresh under cold running water.
  • Trim the base of the lettuce leaves and arrange on a large shallow bowl or platter. Scatter over the asparagus spears and red onion, season well and drizzle with vinaigrette just before serving.

1 1/2 pounds fresh beets, trimmed and washed
2 whole cloves
2 whole allspice
1 bay leaf
Salt and freshly ground pepper to taste
1/2 teaspoon sugar
2 teaspoons red-wine vinegar
2 tablespoons chopped Italian parsley
1 large red onion, about 1/2 pound, peeled and thinly sliced

Steps:

  • Place the beets in a saucepan and cover with water. Add cloves, allspice, bay leaf, salt and pepper. Bring to a boil and simmer for about 20 minutes or until tender throughout. Let cool in the cooking liquid.
  • Remove the beets and peel them. Slice the beets and place them in a mixing bowl. Add salt, pepper, sugar, vinegar, parsley and onion. Toss well to blend and serve.
