ROASTED ASPARAGUS

2 pounds fresh asparagus
Good olive oil
Kosher salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Break off the tough ends of the asparagus and, if they're thick, peel them. Place the asparagus on a sheet pan, drizzle with olive oil, then toss to coat the asparagus completely. Spread the asparagus in a single layer and sprinkle liberally with salt and pepper. Roast the asparagus for 15 to 20 minutes, until tender, but still crisp.

BAKED CLAMS OREGANATA

1 dozen littleneck clams, scrubbed
1 cup plain bread crumbs
2 cloves garlic, smashed and chopped
3 tablespoons finely chopped fresh oregano leaves
2 tablespoons finely chopped Italian parsley leaves
Pinch crushed red pepper flakes
Kosher salt
2 to 3 tablespoons extra-virgin olive oil
1/2 to 3/4 cup chicken stock

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the clams on a sheet tray and put them in the preheated oven for 2 to 3 minutes or until the clams just begin to open. We don't want to cook the clams, we just want them to open a little.
  • Using a butter knife pry the clams open and remove the top shell and discard. Completely pull the clam away from the bottom shell and place it back in the bottom shell. This will allow for easy eating.
  • Preheat the broiler and adjust the rack to the top shelf.
  • In a bowl, combine the bread crumbs, garlic, parsley, oregano, crushed red pepper and some salt. Add the olive oil and stir until well combined. Add chicken stock until the mixture is quite wet. Taste to check the seasoning, add more salt if needed.
  • Pack each clam full of the bread crumb mixture. Pack the bread crumbs down and really secure the edges. This will help the clam stay moist.
  • Place the clams on a sheet tray and add about 1/2 cup of water to the tray. This will also help the clams stay moist. Put the tray under the broiler for 5 to 6 minutes or until the bread crumbs are nice and brown and crispy.

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place asparagus in a 9x13 inch baking dish, and cover with bread crumbs, salt, pepper, garlic powder and Parmesan cheese. Lay slices of butter on top.
  • Bake, covered, for 30 minutes. Remove cover, and bake 5 minutes more, or until browned on top.

1 envelope hollandaise sauce mix
1 cup whole milk
1/4 cup butter, softened
8 bacon strips, diced
1/2 pound fresh mushrooms, sliced
1 pound asparagus, trimmed and cut into 1-inch pieces
3 tablespoons water
12 large eggs, lightly beaten
1 cup shredded part-skim mozzarella cheese

Steps:

  • In a large saucepan, prepare the hollandaise sauce mix with milk and butter according to package directions; keep warm. , In a large skillet, cook bacon over medium heat until crisp; remove to paper towels. In the drippings, saute mushrooms until tender; set aside., Place asparagus and water in a microwave-safe bowl. Cover and microwave on high for 4-5 minutes or until crisp-tender; drain and keep warm., Coat a 10-in. skillet with cooking spray and place over medium heat; add 3/4 cup beaten eggs (3 eggs) to skillet (mixture should set immediately at edges). , As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set, sprinkle a fourth of the asparagus, 1/4 cup cheese and a fourth of the mushrooms on one side and sprinkle with cheese; fold other side over filling. Invert omelet onto a plate to serve. Repeat for remaining omelets. Top with hollandaise sauce and bacon.

When you sauté or roast asparagus in hot olive oil, the asparagus will have a much more concentrated flavor than it would if steamed or blanched. Here I add the garlic to the pan once the asparagus is just about done, so that the garlic cooks only long enough to soften and sweeten. You can serve this skillet dish with grains or pasta, or with eggs -- fried, poached or scrambled. I find this asparagus so hard to resist that I decided to give you a range for the weight. One pound is adequate, but you might want to treat yourself to more than that.

2 tablespoons extra virgin olive oil

  • Separate the garlic bulb into cloves, remove the thick skins from each clove, and cut the garlic into thin slices.

Sauté until the asparagus is tender and the skin has shriveled slightly, about five minutes. Add the garlic, and continue to sauté for another minute until the garlic is translucent. I got this recipe from "Simple Vegetarian Pleasures" by Jeanne Lemlin. I LOVE asparagus and am always on the lookout for new ways to make it. This is such an easy and elegant way to serve it. The asparagus gets a slightly nutty flavor after roasting, which makes it even more yummy.

1 lb asparagus
1 1/2 tablespoons olive oil
1/2 teaspoon kosher salt (or 1/4 teaspoon regular table salt)

Steps:

  • Preheat oven to 425°F.
  • Cut off the woody bottom part of the asparagus spears and discard.
  • With a vegetable peeler, peel off the skin on the bottom 2-3 inches of the spears (this keeps the asparagus from being all "stringy" and if you eat asparagus you know what I mean by that).
  • Place asparagus on foil-lined baking sheet and drizzle with olive oil.
  • Sprinkle with salt.
  • With your hands, roll the asparagus around until they are evenly coated with oil and salt.
  • Roast for 10-15 minutes, depending on the thickness of your stalks and how tender you like them.
  • They should be tender when pierced with the tip of a knife.
  • The tips of the spears will get very brown but watch them to prevent burning.
  • They are great plain, but sometimes I serve them with a light vinaigrette if we need something acidic to balance out our meal.

4 large eggs
1/4 cup sour cream

  • Fill a small saucepan three-fourths full with water; bring to a boil. Add asparagus; cook, uncovered, until crisp-tender, 2-4 minutes. Remove and immediately drop into ice water. This dish features typical Spanish ingredients - garlic, chorizo and bread crumbs - incorporated into soft scrambled eggs, for a hearty breakfast, or a simple lunch or first course.

1 bunch thin asparagus, about 1 1/2 pounds, cut in 1- to 2-inch lengths
1 bunch green onions, chopped

  • Put 3 tablespoons olive oil in a cast-iron skillet over medium-high heat. Add peeled garlic cloves and let them sizzle until lightly browned, then remove. Add bread cubes, season with salt and pepper, lower heat to medium and gently fry until lightly browned and crisp, about 2 minutes. Remove bread and set aside to cool.
  • Add chorizo and fry lightly. Add asparagus, season with salt and pepper, and stir-fry until cooked through but firm, 3 to 4 minutes. Add green onions and minced garlic and cook 1 minute more.

1 bunch asparagus, stems snapped where they naturally want to break
3 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar
2 tablespoons grated Parmigiano-Reggiano
Kosher salt
1 hard boiled egg, white and yellow separated and crumbled

Steps:

  • Bring a large pot of well-salted water to a boil. Set up a bowl of well-salted ice water. Place the trimmed asparagus in the boiling water and let the water come back to a rolling boil. Remove asparagus from the boiling water and plunge immediately into the ice water. Remove from the ice water, pat dry, and reserve.
  • In a small bowl combine the olive oil, red wine vinegar, and Parmigiano-Reggiano. Season with salt. Toss the asparagus in the vinaigrette. Arrange on a serving plate and sprinkle with the crumbled egg white and yellow.

When you hear "oreganata," you may immediately think of clams or oysters - but this recipe is all about the prawns. You'll split them in half, then top with the buttery, garlicky herbed breadcrumbs and broil.

1 cup (2 sticks) unsalted butter
2 tablespoons lemon juice
1 teaspoon chopped garlic
1 teaspoon kosher salt
2 cups finely grated Parmesan
1 cup panko, pulsed in a food processor
1 cup chopped Italian parsley leaves
2 tablespoons chopped fresh oregano
2 tablespoons chopped garlic
1 cup (2 sticks) unsalted butter, melted
4 large prawns with the head on, butterflied in half through the top (see Cook's Note)
Kosher salt and pepper
2 tablespoons chopped Italian parsley, for garnish

Steps:

  • Preheat the broiler to medium-high.
  • For the sauce: Melt the butter in a large skillet over medium-low heat, swirling occasionally, until the milk solids have turned golden brown and the butter smells toasty, about 10 minutes. Let cool slightly, then add the lemon juice, garlic and salt. Set aside and keep warm.
  • For the breading: Combine the Parmesan, panko, parsley, oregano and garlic in a large bowl. Stir in the melted butter. Set aside.
  • For the prawns: Season with salt and pepper. Spread the seasoned breadcrumbs inside the cavity of the split prawn. Broil on a baking sheet until the prawns are cooked through and the breading is brown, 6 to 8 minutes.
  • Transfer the prawns to a serving platter, drizzle with the brown butter sauce and garnish with the chopped parsley.

ASPARAGUS AND PARMESAN OMELET

This is a favorite omelet of mine. I make folded French omelets for one or two, and larger frittatas for a crowd.

Number Of Ingredients 7

5 thin or medium stalks asparagus, trimmed
4 large or extra-large eggs
Salt and freshly ground pepper
1 tablespoon plus 1 teaspoon low-fat milk
1 tablespoon plus 1 teaspoon freshly grated Parmesan
1 tablespoon chopped fresh parsley, dill, chives, tarragon, or a combination
1 tablespoon plus 1 teaspoon extra virgin olive oil

Steps:

  • Steam the asparagus until tender, about 5 minutes. Refresh with cold water, and pat dry. Cut into 1/2-inch slices and set aside.
  • Break 2 eggs into a bowl and beat with a fork or a whisk until frothy. Add salt and pepper to taste (about 1/8 teaspoon salt) and 2 teaspoons milk. Whisk 2 teaspoons of the Parmesan and half the herbs into the eggs and mix well.
  • Heat an 8-inch nonstick omelet pan over medium-high heat. Add 2 teaspoons of the olive oil. When the oil feels hot when you hold your hand above it, pour in the eggs, scraping every last bit into the pan. Swirl the pan to distribute the eggs evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the omelet with the spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking. As soon as the eggs are set on the bottom, sprinkle half the asparagus down the middle of the eggs, then jerk the pan quickly away from you then back towards you so that the omelet folds over on itself. If you don't like your omelet runny in the middle (I do), jerk the pan again so that the omelet folds over once more. Cook for a minute or two longer. Tilt the pan and roll out onto a plate. Repeat with the remaining eggs, Parmesan herbs, and asparagus, and serve.

145g tub fresh pesto
2 x 25g seeds snack packs (we used Munchy Seeds)

Steps:

  • Heat grill to high. Toss the asparagus in olive oil, season and cook in an ovenproof frying pan until softened. Mix the eggs with half the pesto. Take half of the asparagus out of the pan, then spread out the rest. Pour over half the egg mixture. Cook for a few mins on the hob before finishing under the grill. Fold over, then repeat with the rest of the ingredients. Drizzle the remaining pesto over the omelettes and sprinkle the seeds on top.

Great side dish to any meal-garlic and parmesan cheese make this so tasty!! Super simple and delicious!

1 lb asparagus, trimmed
2 cups breadcrumbs
1/2 cup parmesan cheese
4 tablespoons butter or 1 dash olive oil
salt, to taste
pepper
garlic powder

Steps:

  • Preheat oven to 400.
  • Place asparagus in 13x9 dish.
  • Cover with breadcrumbs, salt, pepper, garlic and Parmesan cheese.
  • Layer butter on top or sprinkle with olive oil.
  • Bake covered for 30 minutes.
  • Remove cover and bake 5 more minutes.
  • Top should be brown-eat and enjoy!

2 cups seasoned bread crumbs
salt and pepper to taste
garlic powder to taste
½ cup grated Parmesan cheese
4 tablespoons butter, sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place asparagus in a 9x13 inch baking dish, and cover with bread crumbs, salt, pepper, garlic powder and Parmesan cheese. Lay slices of butter on top.
  • Bake, covered, for 30 minutes. Remove cover, and bake 5 minutes more, or until browned on top.
