AUNT NANCY'S CARROT CAKE

Every year, the family gets together for three days "up Nort" for fishing and campfire fun. We have potluck meals each day, and my aunt Nancy brought this cake this year. It has to be the best carrot cake I've ever tasted.

2 cups sugar
3 eggs
3 cups grated carrots
1 1/2 cups cooking oil
2 cups flour
3 teaspoons baking soda
3 teaspoons cinnamon
1 teaspoon salt
1 cup chopped nuts (if not using nuts, use about 1 more cup grated carrots)
3 cups powdered sugar
1/4 cup butter, softened
8 ounces cream cheese, softened
2 teaspoons vanilla

Steps:

  • Preheat oven to 350º.
  • Combine eggs and sugar in a large mixing bowl and beat well.
  • Add remaining cake ingredients except the nuts and mix well.
  • Fold in nuts.
  • Grease and flour a 9x13 or Bundt pan.
  • Pour cake mixture into pan and bake for 45 minutes or until done.
  • Combine powdered sugar, butter, cream cheese and vanilla in mixing bowl and beat until creamy.
  • Spread over cooled cake.

1 (8 ounce) package cream cheese, softened
1 small onion, minced
2 egg yolks
1 teaspoon paprika, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine cream cheese, onion, and egg yolks in a large bowl; beat with an electric mixer until blended. Spread cream cheese mixture evenly on bread and lightly sprinkle with paprika. Place on baking sheets.
  • Bake in the preheated oven until cheese puffs start to slightly brown, 10 to 15 minutes.

This recipe might be the reason I was born. While my parents were dating, my mother made this carrot cake recipe from her Aunt Mil for my father. And it was just that good. My family now uses the verb "carrot-caking" as a synonym for "shoveling-it-in-without-stopping-between-bites-because-it's-so-heavenly". Yum. also can make 1 bundt pan.

2 cups sugar
4 eggs
1 1/2 cups oil
2 cups flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
3 cups grated raw carrots
3/4 cup chopped nuts
1/4 cup margarine
3 ounces cream cheese
1 teaspoon vanilla
powdered sugar

Steps:

  • Grate carrots and chop nuts.
  • Mix together sugar, eggs, and oil at a low speed until thoroughly blended.
  • Add dry ingredients, then fold in carrots and nuts.
  • Bake in two greased and floured loaf pans (or one deep bundt pan).
  • Bake at 325 degrees F for 1 hour and 10 minutes.
  • For icing, blend together margarine, cream cheese, and vanilla, slowly adding powerded sugar until the mixture reaches desired consistency Ice when the cake is cooled.

Frosting
8 oz. cream cheese
16 oz. powdered sugar
1 stick butter

A wonderfully rich and flavorful dish that leaves people coming back asking for more! I usually make this for family functions in honor of my Aunt Nancy (it was her recipe) and people always ask for the recipe.

1 pound ground beef
½ pound bacon, cut into bite-sized pieces
2 (28 ounce) cans baked beans, undrained
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can butter beans, drained
1 medium onion, chopped
½ cup dark brown sugar
½ cup white sugar
½ cup ketchup
2 tablespoons dark molasses
1 ½ teaspoons dry mustard

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer beef to a bowl with a slotted spoon. Drain and discard grease.
  • Place bacon in the same skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels. Discard all drippings.
  • Add baked beans, kidney beans, butter beans, onion, brown sugar, white sugar, ketchup, molasses, and dry mustard to the beef. Add bacon and mix all ingredients together. Transfer to a 9x13-inch aluminum pan and cover with aluminum foil.
  • Bake in the preheated oven for 50 minutes. Remove foil and bake for 10 more minutes.
