This is the perfect cake for Sunday mornings reading the paper. Be prepared, it won't last long. Just like potato chips, you can't eat just one.

2 cups all-purpose flour
¾ cup white sugar
2 teaspoons baking powder
½ teaspoon salt
½ cup butter
1 egg
¾ cup milk, or as needed
1 ½ teaspoons vanilla extract
¼ cup all-purpose flour
⅔ cup white sugar
1 teaspoon ground cinnamon
¼ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Make the streusel topping: In a medium bowl, combine 1/4 cup flour, 2/3 cup sugar and 1 teaspoon cinnamon. Cut in 1/4 cup butter until mixture resembles coarse crumbs. Set aside.
  • In a large bowl, combine 2 cups flour, 3/4 cup sugar, baking powder and salt. Cut in 1/2 cup butter until mixture resembles coarse crumbs. Crack an egg into a measuring cup and then fill add milk to make 1 cup. Stir in vanilla. Pour into crumb mixture and mix just until moistened. Spread into prepared pan. Sprinkle top with streusel.
  • Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

1 cup butter, softened
2-3/4 cups sugar, divided
4 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sour cream
2 tablespoons ground cinnamon
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream butter and 2 cups sugar until light fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda and salt; add alternately with sour cream, beating just enough after each addition to keep batter smooth. , Spoon a third of batter into a greased 10-in. tube pan. Combine cinnamon, nuts and remaining sugar; sprinkle a third over batter in pan. Repeat layers 2 more times. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely.

1/2 cup strong black coffee
2 -3 teaspoons sugar
1 tablespoon rum, overproof
300 ml whipped cream
1/2 teaspoon vanilla essence
2 -3 tablespoons slivered almonds, toasted

Steps:

  • Preheat oven to 190 deg C (375 deg F).
  • Cream butter and sugar until light, beat in eggs gradually and fold in flour and salt with metal spoon, turn into greased ring mould cake tin (bundt) and bake 25 minutes.
  • Cool cake and after it is cool return to mould ready for pouring in coffee - sweeten coffee and flavour with rum and slowly pour over cake whilst in tin.
  • Turn onto plate and cover with whipped cream flavoured with vanilla and decorate with toasted slivered almonds.

1 tablespoon dry yeast
1/4 cup lukewarm water
3 tablespoons sugar
2 tablespoons butter
2 cups milk
1 egg, slightly beaten
2 teaspoons salt
5 1/2 cups all-purpose white flour, about
1 lb farmer cheese
2 egg yolks
2 tablespoons heavy cream
1/2 cup sugar
1 lemon, zest of
2 egg whites, beaten until stiff but not dry

Steps:

  • Preheat the oven to 375°F.
  • Proof the yeast in the water with the sugar.
  • Melt the butter, add the milk, heat until lukewarm and add to the yeast sponge. Stir in the egg, salt and flour and blend until you have a rather soft dough.
  • Turn the dough out onto a lightly floured work surface and knead until elastic and not sticky. Place the dough in a large buttered bowl, cover with a towel and let rise for about 1 hour or until doubled in bulk.
  • Meanwhile make the filling: In a bowl, blend the cheese with the egg yolks and the heavy cream and sugar. Add the grated lemon rind, fold in the egg whites and set aside in a draft free place.
  • Now return the dough to the work surface and divide it into 2 equal pieces; shape these into 2 oblong loaves and place in 2 buttered tube forms. Cover with a towel and let stand in a warm place for 45 minutes.
  • Now make a shallow ditch in both cakes and fill with the cheese mixture. Place the two pans in the oven and bake until the cheese starts to turn light brown. This should take about 30 minutes. Cool on a rack. Yield: 2 cheese coffee cakes. Can be frozen.

1 cup brown sugar
1 cup white sugar
1 cup butter, softened
¼ teaspoon salt
1 cup buttermilk
2 eggs, beaten
1 teaspoon baking soda
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix flour, brown sugar, white sugar, butter, and salt together in a bowl until crumbly. Measure 1 cup mixture and set aside for later use.
  • Stir buttermilk, eggs, and baking soda into crumbly mixture until batter is smooth. Pour batter into the prepared baking dish. Sprinkle reserved crumbly mixture over top of batter; top with cinnamon.

2 cups all-purpose flour
2 1/2 tablespoons sugar
3/4 teaspoon salt
4 large eggs
1 1/3 cups milk
1 1/2 cups club soda or seltzer (from a new bottle)
1/2 stick (1/4 cup) unsalted butter, melted

Steps:

  • In a bowl whisk together flour, sugar, and salt. In another bowl whisk together eggs, milk, and club soda or seltzer and add to flour mixture in a stream, whisking. Whisk batter until smooth and chill, covered, 1 hour.
  • Stir batter well. Heat a non-stick skillet measuring 8 inches across bottom over moderate heat until hot. Brush skillet lightly with melted butter. Remove skillet from heat. Fill a 1/4-cup measure three fourths full with batter and pour into skillet, tilting and rotating skillet quickly to cover bottom.
  • Return skillet to heat and cook crêpe until underside is golden, 15 to 30 seconds. Slide crêpe onto a kitchen towel to cool. Make more crêpes in same manner with remaining batter, brushing skillet lightly with butter for each and stacking cooked crêpes on another kitchen towel as they cool. Crêpes may be made 3 days ahead and chilled, stacked and wrapped well in plastic wrap.

  • While the cakes are cooking, make the syrup: place the coffee and sugar in a heatproof bowl and then add the boiling water. Stir until both the coffee and sugar have dissolved. You will need to stir briskly to ensure this.
  • When the cakes are cooked, leave in the tins, on a wire rack. Prick them all over while they are still hot ,and spoon the syrup over both sponges, trying to distribute it as evenly as possible.
