2 pounds goat stew meat, cut into 1-inch cubes
2 fresh hot chile peppers, seeded and chopped
2 tablespoons curry powder
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon ground black pepper
3 tablespoons vegetable oil
1 onion, chopped
1 rib celery, chopped
2 ½ cups vegetable broth
1 bay leaf
3 potatoes, peeled and cut into 1-inch chunks, or more as desired

Steps:

  • Combine goat meat, chile pepper, curry powder, garlic, salt, and black pepper in a bowl. Cover and refrigerate to allow flavors to blend, 1 hour to overnight.
  • Remove goat meat mixture from bowl and pat dry, reserving marinade. Heat vegetable oil in a stockpot over medium-high heat. Cook meat in batches, browning on all sides, 5 to 6 minutes per batch. Transfer meat to a plate. Add onion and celery to the stockpot; cook and stir until onion begins to brown, 4 to 6 minutes.
  • Stir browned goat meat into onion mixture. Add reserved marinade, vegetable broth, and bay leaf. Bring to a boil, cover, reduce heat to low, and simmer for 1 hour. Stir in potatoes; simmer until potatoes and meat are tender, 35 to 45 minutes more.
  • Remove stockpot from heat, skim off surface fat, and remove bay leaf.

1 large egg, beaten
1/3 cup milk
1/2 cup dry bread crumbs or rolled oats
1 garlic clove, minced
1 to 2 teaspoons curry powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded carrots
1 medium onion, chopped
1-1/2 pounds lean ground beef

Steps:

  • Preheat oven to 350°. Combine first 10 ingredients. Add ground beef; mix well. Pat meat mixture into a 9x5-in. loaf pan. Bake until no pink remains, 60-75 minutes.

This delicious meatloaf has a hint of cumin and overlaid with the curry sauce cooked on top. Five Roses Flour discovered the great sauce and I added to a regular meat loaf recipe.

1 1/2 lbs ground beef
1 egg
1 tablespoon olive oil
1 teaspoon cumin
1 large onion, finely chopped
3 garlic cloves, diced
1 cup breadcrumbs
1 teaspoon salt
1/2 teaspoon pepper
prepared stuffing
1 cup diced zucchini
1 egg
1/2 cup cut feta cheese
1/2 cup grated yellow cheese
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons flour
1 teaspoon curry powder
1 cup milk

Steps:

  • Meatloaf.
  • Add oil to small fry pan and fry onion and garlic to translucence.
  • Mix ground beef, egg, cumin, breadcrumbs, salt and pepper and then add onions and garlic.
  • Place in eight/ten inch bread pan and form an indentation in the meat for the stuffing.
  • Stuffing.
  • Mix egg, zucchini, cheeses and place in the indentation in the meatloaf. Fold over meat to meet at the top.
  • Curry sauce.
  • Melt butter in saucepan, add flour, stirring constantly. Add curry powder to mix. Add milk and stir till thickened and just before boiling. Remove from heat. Add to meatloaf.
  • Cook at 350 for 1 hour and 15 minutes.

  • Cut goat into 1-2 inch pieces (purchase precut or have the butcher cut it), or to your preference, also removing any excess fat. Soak with the juice of ½ lemon or lime, then rinse several times with water; rubbing the meat with your fingers to remove any slime. Drain.
  • Season goat meat with ½ cup green seasoning, minced cilantro, sliced onion, 2 tbs minced garlic, hot pepper (if using), salt and freshly ground black pepper. Cover and place in refrigerator to marinate up to 24 hours.
  • Make curry mixture: In a small bowl mix curry powder, duck and goat curry powder, amchar masala, 2 tablespoon green seasoning and ½ cup water. Set aside.
  • Heat oil in medium heavy bottomed pot(iron pot). Add reserved onion slices (and hot pepper if using) and cook until the edges are brown. Add curry mixture and cook 3-5 minutes until it’s grainy, separates from the oil and is fragrant.
