Mexican potatoes image

These easy Mexican potatoes are done in no time. Infused with garlic and herbs oil and tasty seasoning to give you the perfect side dish.

Number Of Ingredients 10

300 gram small potatoes
1 tablespoon fajita seasoning
1 tablespoon rosemary
1 tablespoon oregano
2 tablespoons olive oil
1 clove garlic minced
½ red onion
½ teaspoon baking soda
1 teaspoon parsley
1 tsp finely chopped scallion (optional)

Steps:

  • Boil the potatoes with the baking soda for 10-12 minutes
  • Mince the garlic, rosemary, and oregano. Infuse the 2 tbsp olive oil with the garlic, rosemary, and oregano
  • Drain the potatoes and let the potatoes cool for a few minutes
  • Add the potato to the olive oil mixture. Then add the fajitas seasoning to the potatoes and stir to cover all potatoes with the seasoning and herbs
  • Heat the oven 400℉/200℃. Line a baking tray with parchment paper, put the potatoes on the tray, and bake the potatoes for 20-25 minutes. Turn the potatoes midway through the baking time
  • Take out of the oven and sprinkle with some finely chopped red onion, parsley, or scallion. Serve immediate

¾ cup water
¼ onion, halved
1 clove garlic
3 tablespoons vegetable oil
½ onion, chopped
1 serrano pepper
1 clove garlic, minced
1 tomato, chopped
2 pounds lean ground beef
1 (7.75 ounce) can Mexican-style hot tomato sauce (such as El Pato®)
3 potatoes, peeled and cubed
3 medium carrots, peeled and cubed
1 jalapeno pepper, sliced
2 tablespoons chicken bouillon granules
½ tablespoon ground cumin
1 bay leaf
salt and ground black pepper to taste

Steps:

  • Bring 6 whole tomatoes to a boil in a small pot. Transfer to a blender. Add 3/4 cup water, onion halves, and whole garlic clove. Blend until smooth.
  • Heat oil in a large skillet over medium-high heat. Add chopped onion and serrano pepper. Cook until onion is transparent. Add minced garlic; cook until fragrant, about 1 minute. Add chopped tomato and cook for 1 minute more. Add ground beef; cook until browned, about 8 minutes.
  • Pour canned tomato sauce into the beef mixture. Cook for 2 minutes. Mix in potatoes and carrots. Cook for 2 minutes; add the blended tomatoes, jalapeno, chicken bouillon, cumin, and bay leaf. Season with salt and pepper. Mix well, reduce heat, and simmer until most of the liquid is absorbed, about 20 minutes. Let sit for 5 minutes before serving.

1/4 cup reduced-sodium chicken broth
2 tablespoons white wine vinegar
2 tablespoons juice from pickled jalapenos

1-1/2 pounds red potatoes
1 cup sliced carrots
2 celery ribs, thinly sliced
1/2 cup chopped onion
1/2 cup frozen peas, thawed
1/3 cup sliced green onions
1 tablespoon minced pickled jalapeno peppers
1/4 teaspoon pepper

Steps:

  • In a large bowl,combine the first four ingredients; set aside. Place potatoes in a saucepan and cover with water; bring to a boil. Cook about 15 minutes or until almost tender. Add carrots and cook until carrots and potatoes are tender; drain. , When cool enough to handle, cube potatoes. Add potatoes and carrots to broth mixture. Add remaining ingredients; toss to coat. Serve at room temperature or slightly chilled.

1 tbsp olive oil
1 onion , finely chopped
1 garlic clove , finely chopped
½ tsp mild chilli powder
½ tsp paprika
1 tsp cumin
½ tsp cayenne pepper
soured cream , to serve

Steps:

  • Boil the potatoes for 5 mins. Meanwhile, heat the oil in a frying pan and gently fry the onion for 8 mins. Add the garlic and spices, then fry for 2 mins more.
  • Drain the potatoes and tip into the onion mix. Turn up the heat and shake the potatoes around so that they are all covered. Cook for 10 mins more until tender, then serve with soured cream, sprinkled with a little cayenne.

6 large potatoes, chopped
1 tablespoon butter
2 cups diced tomatoes
1 onion, diced
1 tablespoon hot chili sauce
1/4 cup chopped green onion
1 teaspoon garlic powder
salt and pepper
1/2 cup shredded cheddar cheese

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash.
  • Melt butter in a large skillet over medium-high heat. Saute tomatoes, onion, chile sauce, green onion, garlic powder, salt and pepper. Stir in potatoes and cook until heated through.
  • Spoon potato mixture into a 2 quart casserole dish and sprinkle with cheese. Serve when the cheese has melted.

Turn heat to medium-low and cook for about 25-30 minutes. Check from time to time to prevent the potatoes from over-cooking. Cook until potatoes are tender and a paring knife can be inserted easily.
  • While the potatoes are cooking, place 2 tablespoons of oil, 2 Tablespoons of Kikkoman teriyaki sauce, 2 tablespoons of lime juice, and the Arbol peppers into a blender. Process it until you have a very smooth dressing.
  • Once the potatoes are cooked, drain all excess liquid and return the pot to medium heat. Drizzle the other 2 tablespoons of oil over the potatoes and turn the heat to medium-high. This step will add a little bit of crispiness to the potatoes. After 2 minutes, stir in the dressing and toss well. Just before serving, garnish with chopped cilantro.
  • This dish can be made ahead of time, by cooking the potatoes beforehand and just warming up with the dressing before serving. It is excellent to take to potlucks and parties since it can be warmed up in the microwave.
