AVOCADO AND LIME LOAF
This surprising tea loaf is utterly delicious - you must try it! And it's sweet - not savoury - making it perfect for elevenses with coffee, or for an afternoon tea treat.

Steps:
- Preheat the oven to 180°C/fan oven160°C/gas 4. Grease and line the base of a 900g (2lb) loaf tin with greaseproof paper.
- Using an electric whisk beat together the butter and sugar until light and creamy.
- Add the lime zest and juice to the mashed avocado, then beat this into the butter mixture. Add the eggs one at a time, beating well between each addition. Stir in the vanilla extract.
- In a separate bowl, sift together the flour, salt, baking powder and baking soda. Use a large metal spoon to fold half into the avocado mixture. Stir in the buttermilk, then fold in the remaining flour mixture.
- Transfer the cake mixture to the prepared tin and smooth over the top.
- Bake for 55 minutes - 1hr until a skewer inserted in the middle comes out clean. If the loaf is browning too quickly, cover lightly with a piece of foil.
- Remove from the oven then leave to cool for 15 minutes. Remove from the tin, peel away the paper and leave on a wire rack to cool completely before icing.
- To make the icing, mix the avocado with half the lime zest and the juice.
- Cream the butter using an electric whisk, then beat in the avocado mixture. Slowly add the icing sugar, whisking well to combine. Spread thickly over the top of the cooled cake and sprinkle with the remaining lime zest.
AVOCADO LIMEADE
Steps:
- In a medium pot, combine the sugar, three-quarters of the cilantro (reserve the rest for garnish) and 1/2 cup water. Bring to a simmer over medium heat. Remove from the heat and allow to cool. Strain the cilantro syrup and store in the fridge.
- In a blender, combine the ice water, lime juice, cucumber, avocado and cilantro simple syrup. Puree on high until blended. Strain through a fine-mesh sieve into a pitcher. Chill until ready to serve.
- Divide the mixture among tall glasses filled with ice and garnish with cilantro and lime wedges.
MASHED AVOCADO WITH LIME
Steps:
- Put all ingredients in a mixing bowl and mash with a fork until the avocado reaches the consistency of a chunky salsa. Chill before serving with empanadas.
AVOCADO AND LIME

- Cut the avocados in half lengthways, remove the stones and peel. Put the avocado in a food processor with the lime juice, Tabasco, garlic and sea salt. Blend until you have a light, elegantly pale green cream.

AVOCADO BREAD WITH PECANS AND LIME GLAZE
This is an unique recipe that I have found in a cookbook called "The Best quickbreads". I was kind of scared to try it at first and I'm not much of a lime fan, but it turns out yummy.

Steps:
- Preheat oven to 350 degrees.
- Grease a 9x5 inch loaf pan or spray with nonstick spray.
- Peel and pit the avocado, then puree it in a food processor or blender until just smooth.You should have 1/2 cup.
- In a mixing bowl, combine the beaten egg, avocado, yogurt and nuts.
- Beat with a spoon to mix well.
- Combine the flour, sugar, baking powder, baking soda, lime zest and salt in a small bowl.
- Add the dry ingredients to the creamed mixture and stir with a spatula until smooth and just moistened. Do not overmix.
- Pour the batter into the prepared loaf pan and bake in the center of the oven until golden brown and a cake tester inserted into the center of the loaf comes out clean, about 45-55 minutes.
- Let loaf rest in its pan on a rack to cool.
- To make the Lime Syrup: Combine the sugar and lime juice in a small saucepan.
- Place over low heat until sugar just dissolves.
- Pierce the loaf about a dozen times to the bottom with a bamboo skewer, toothpick, or metal cake tester.
- Immediately pour the hot syrup over the warm loaf.
- Let cool for 30 minutes in the pan before turning the loaf out of the pan onto a rack, then turning it right side up to cool completely.
- Wrap tightly in plastic wrap and let stand at room temperature overnight before serving.

AVOCADO LIME PIE
I made this up by combining a few different recipes when I was looking for a dessert recipe after being newly diagnosed as a diabetic. The ingredients might seem like a strange combination, but it's really yummy. Very light & fluffy. The cooking time is really chilling time. And please ignore the nutritional analysis on the side as I noticed it doesn't take into consideration that the Jello is sugar-free or the Cool Whip is light. And it doesn't contain the yogurt at all.

- Remove the pit from the avocado and scoop pulp into a medium sized mixing bowl.
- Squeeze the juice of the lime into the bowl.
- Using an electric mixer, mash the avocado pulp.
- Add the yogurt and prepared Dream Whip to the mixing bowl and blend together.
- In a small bowl, dissolve the Jell-O and Knox gelatine powders in the boiling water. Add this to the yogurt/avocado mixture and blend well.
- Pour into the prepared graham wafter pie crust and chill for two hours.
