TOMATO, ZUCCHINI AND AVOCADO SALAD
Whenever you make a dish with uncooked zucchini, be sure to slice or dice it finely, so that the zucchini can absorb the dressing or seasonings. I like to eat this salsa salad with rice.

Steps:
- Sprinkle the zucchini with salt, and drain in a colander for 15 minutes. Rinse if the zucchini tastes very salty, and drain on paper towels.
- Combine the tomatoes, chiles and cilantro in an attractive bowl. Combine the zucchini, avocado and lemon or lime juice and olive oil in another bowl. Taste and add salt if desired. Add to the tomatoes, and toss together gently. Taste and adjust seasonings. Serve on lettuce leaves as a salad, or serve over rice.

Steps:
- Slice then dice cucumber.
- Slice then dice tomatoes.
- Slice avocado and carefully remove stone. Scoop out inside and dice.
- Peel onion and remove tops. Then slice.
- Chop cilantro and place in a large salad bowl with previous ingredients.
- Toss with olive oil, lemon juice, salt and pepper. Serve in a bowl.
- Enjoy!

CUCUMBER TOMATO AVOCADO SALAD
Steps:
- Place the sliced red onions in a small bowl and cover them with cold water (this helps remove some of the onions' harsh bite).
- In a small bowl or large measuring cup, whisk together the dressing ingredients: Lime juice, olive oil, honey, garlic, salt, and pepper.
- In a very large bowl, place the cucumbers, tomatoes, avocado, half of the feta, and cilantro. Drain the red onion, then add it to the bowl. Pour the dressing over the top, then stir very gently to combine. Sprinkle the remaining feta over the top. Enjoy immediately or cover the bowl with plastic wrap and refrigerate for up to 4 hours. Give the mixture a gentle stir just before serving.

- Core the tomatoes and cut them into slices. Place in a salad bowl.
- Trim the cucumbers and cut them in half, lengthwise. Scrape away and discard the seeds. Slice cucumbers crosswise and add to bowl.
- Peel the onion, cut into very thin slices and add to bowl.
- Peel the avocados and cut them in half. Discard the pits. Cut into wedges and sprinkle with lemon juice. Add to the bowl.

- Add diced cucumbers, cherry tomatoes, and red onion together in a bowl. Toss until well combined.
- Carefully add in diced avocados and feta cheese crumbles.
- Toss gently so that the avocados and cheese do not fall apart.
- In a separate bowl, whisk together balsamic vinegar, olive oil, salt and pepper.
- Pour dressing mixture over salad and toss gently until combined.
- If not serving immediately, wait to add avocados to avoid them browning.
