BACHELOR'S EASY CASSEROLE
Steps:
- Peel potatoes and boil until fork tender. While potatoes are boiling, cook breakfast sausage in skillet, drain and set aside. Drain potatoes, add butter, milk, salt, and pepper, and beat until creamy.
- Combine all ingredients in layers (in clear glass loaf pan), with potatoes last and on top i.e.: sausage, then sauerkraut with a small amount of juice, diced Velveeta Cheese chunks until your loaf pan is almost full. Spread mashed potatoes on top until fully covered and smooth, this seals the dish.
- Bake on approx. (depending on oven) 375-400°F for approx 30-40 minutes, or until the mashed potatoes look crisp on top and you can see the cheese melted and the juice bubbling. Remove from oven and place more Velveeta cheese on top to melt. Let stand for approx. 15 minutes to set up and cool.

Steps:
- First, cut the keilbasa into 1/2 inch thick medalions.
- Heat a medium sized skillet to medium to medium high heat and melt enough butter to just cover the bottom.
- Add the keilbasa and garlic.
- Once the keilbasa starts to brown on one side, add enough beer to just cover the bottom.
- Turn the keilbasa and cook on the other side.
- Now it becomes a matter of personal taste and trial and error.
- I keep adding beer and garlic to taste, the thing you are really looking for is for the beer/butter/garic to caramalize.
- When done, transfer to a plate and sprinkle with the cheese.
- Drink the rest of the beer with your meal.
EASY COPYCAT CRACKER BARREL HASH BROWN CASSEROLE
As prices increase across the nation, most people are cutting back on eat-out food and are trying to recreate restaurant favorites at home. This casserole is my rendition of the Cracker Barrel® hash brown casserole.

- Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x12-inch casserole dish with nonstick cooking spray.
- Drain hash browns. Combine hash browns, soup, 5 ounces of shredded Colby-Jack cheese, sour cream, Greek yogurt, butter, salt, pepper, and paprika in a large bowl. Pour mixture into the prepared dish. Sprinkle remaining cheese on top.
- Bake in the preheated oven until casserole is bubbling and cheese has melted, 35 to 40 minutes.

BACHELORS TUNA CASSEROLE
This is a budget wise, easy, quick way to feed a group of four to six people a nice casserole dinner. Great to prepare ahead, cover and put in fridge-just heat in oven or microwave later.

Steps:
- In a 5-quart stove-top pot, bring water to a boil. Add pasta and hold at a boil until tender (usually once water starts to boil turn heat down to medium heat and let cook for ten minutes). Then turn off the heat and drain pasta in the 5-quart pot.
- Add tuna, peas, and can of soup. Stir gently to not break the pasta. Pour mixture into a 9x12-inch baking dish or an 8x8 baking dish. Distribute cheese evenly over the pasta mix.
- At this point, you can let it cool and cover it after 20 minutes, refrigerate and prepare for dinner the following evening, or put it directly into a 350°F oven and bake uncovered for 30 minutes.
- Carefully remove from oven with hot mitts and serve. Can be served alone or with hot bread and a green salad.
