BACON-PROVOLONE CHICKEN SANDWICHES
Bacon and provolone take this hearty chicken sandwich over the top. Add a little Dijon mustard to spice things up a bit.

- Flatten chicken to 1/4-in. thickness; sprinkle with poultry seasoning. In a large skillet, cook chicken in oil over medium heat for 4-5 minutes on each side or until no longer pink; drain., On roll bottoms, layer the bacon, chicken and cheese. Broil 4-6 in. from the heat for 1-2 minutes or until cheese is melted. Top with romaine and onion. Spread mayonnaise over cut side of roll tops; replace tops.

- Chop bacon into small pieces and cook in a skillet. Remove from skillet and drain on paper towels. Reserve 2 tbsp of bacon grease in skillet to cook veggies in. Cook mushrooms and onions for 5 mins. Meanwhile, boil noodles until al dente. When their are 3 mins left for the noodles, add the frozen peas to the pasta water. Drain noodles and peas. In a lrg bowl combine mushrooms/onion mixture, pasta and peas. chicken, Alfredo sauce. Half the bacon and Parmesan cheese. Pour pasta mixture into greased 13x9 pan. Top with the rest of bacon and the provolone cheese slices. Bake for 20 mins.

- Preheat oven to 375 degrees F (190 degrees C). Coat a baking dish with cooking spray. Brush both sides of each chicken breast with barbeque sauce and place in the baking dish. Top each breast with 2 slices bacon.
- Bake chicken 25 minutes in the preheated oven, until juices run clear. Drain bacon strips on paper towels, and slice breasts in half lengthwise.
- Heat the oven broiler. Spread both halves of each hoagie roll with Ranch dressing. Place 2 breast halves on one half of each roll. Place 2 strips of bacon on each remaining roll half. Top each half with 1 slice Swiss cheese.
- Arrange sandwich halves on the baking sheet, and broil 2 to 5 minutes, until the cheese is melted and bubbly. Layer chicken halves of sandwiches with avocado slices, and top with bacon halves to serve.

- Place the bacon under a preheated hot grill (broiler) and cook for 1-2 minutes or until crispy.
- Place the maonnaise, garlic, lemon juice, chives and chicken in a bowl and mix well to combine.
- Spread both sides of the bread with butter.
- Divide cheese and chicken mixture between 4 slices of bread and sandwich with another slice of bread.
- Heat a large non-stick frying pan over low heat and cook the sandwiches in batches in necessary for 3-4 minutes each side or until golden the cheese is melted.

- Preheat an oven to 325 degrees F (165 degrees C).
- Place the bacon in a large, deep skillet; cook over medium-high heat, turning occasionally, until evenly browned. Drain the bacon slices on a paper towel-lined plate.

- While the grill preheats, place the bacon in a large skillet over medium-high heat.

- Cook for about 6 minutes per side, or until no longer pink in the center.
