- 1. Dip the rims of 3 margarita glasses in simple syrup and then immediately dip into toasted coconut. Garnish with a fresh lime wedge. Fill glasses with ice; set aside.
- 2. Combine Bai coconut beverage, tequila, triple sec, lime juice, and simple syrup in an ice-filled cocktail shaker. Shake until well combined and chilled. Strain into prepared glasses; serve immediately.

Setting out to duplicate the coconut margaritas we had in Costa Rica, my first attempt was awful! I surfed the internet for a good recipe with little luck. I then took what I'd learned from my first nasty try and the ideas I picked up online and after about 5 or 6 attempts I came up with this. Enjoy!

- First, make the garnish for the rim. Combine the salt, sugar, dessicated coconut and lime zest on a shallow plate. Dampen the rim of a margarita glass and dip into the mixture. Chill the glass until needed.
- Pour the tequila, lime juice and rum into a cocktail shaker and add a handful of ice. Shake until the outside of the shaker feels ice-cold.
- Drop a few ice cubes into the prepared glass, then strain in the drink.
