6 large artichokes
2 cups Panko bread crumbs
6 garlic cloves
1 cup grated parmesan
1 cup grated asiago cheese
1 cup grated mozzarella cheese
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
1 tablespoon garlic powder
1 teaspoon crushed red pepper
1/2 cup olive oil
1 1/2 cups dry white wine
1 lemon (sliced)

Steps:

  • Preheat oven to 375 degrees.
  • Cut the stem close to the base of the artichoke so the artichoke sits flat. Remove a few of the bottom leaves. Using kitchen shears, trim the sharp points off of the remaining outer leaves.
  • Carefully cut about 1/2 inch off the top of the artichoke and spread the leaves apart to expose the choke. (this will be the lighter colored leaves with a bit of purple on them.) Using a spoon, scoop out the inner fuzzy choke.
  • Place all the artichokes in a bowl of lemon water to prevent discoloration. Set aside.
  • Add the bread crumbs to a large bowl. Mince 3 of the garlic cloves and add them to the bread crumbs. Whisk in 1/2 cup parmesan, 1/2 cup asiago, 1/2 cup mozzarella, parsley, basil, garlic powder, red pepper and olive oil. Stir to combine. Set aside.
  • In a small bowl, combine the remaining cheeses. Drain artichokes.
  • Spoon 2 tablespoons of cheese into the center of each artichoke and then fill to the top with the bread crumb mixture. Stuff more of the bread crumb mixture in between the leaves and arrange in a large heavy bottomed pot with a fitted lid.
  • Pour the wine in the bottom of the pan. Add the lemon slices and remaining garlic cloves. Cover and bake for 1 hour or until the artichokes are tender enough to easily remove one of the outer leaves. Uncover and bake for an additional 5-10 minutes or until golden brown.
  • Drizzle with the remaining wine and serve immediately with lemon wedges, if desired.

4 artichokes
3 lemons, (plus 1 lemon)
10 ounces mild Gorgonzola cheese, (room temperature)
2 tablespoons cream
2 teaspoons chopped fresh thyme leaves
2 teaspoons chopped fresh parsley leaves, (plus 1 tablespoon)
1 clove garlic, (minced)
1/2 teaspoon freshly ground black pepper
3 tablespoons bread crumbs
1 tablespoon olive oil, (such as Fratepietro)

Steps:

  • Bring a large pot of salted water to a boil over high heat. Trim the artichokes by cutting off the top 1-inch or so. Cut the stem close to the base of the artichoke so the artichoke can sit up straight, and remove some of the bottom leaves. Using kitchen shears, trim the sharp points off of any remaining outer leaves. Add the artichokes to the boiling water. Halve the lemons and squeeze the juice into the boiling water. Toss in the lemons. Cook the artichokes until tender, about 30 minutes. Drain the artichokes and let cool.
  • Meanwhile, in a small bowl stir together the Gorgonzola, cream, thyme, 2 teaspoons parsley, garlic, salt, and pepper. In another small bowl stir together the bread crumbs and remaining 1 tablespoon of parsley.
  • Preheat the oven to 400 degrees F. Remove the center choke of the artichokes using a small spoon. Stuff the cheese mixture into the center of the artichokes. Place the artichokes into a baking dish. Sprinkle the bread crumb mixture over the top of the artichokes. Drizzle the tops of the artichokes with olive oil. Bake until the artichokes are heated through, the cheese is melted, and the bread crumbs are crisp and golden, about 25 minutes. Transfer the artichokes to a serving dish and serve.

  • Using a sharp knife, level the bottom of each artichoke and cut 1 in. from the top. Using kitchen scissors, snip off tips of outer leaves. Place in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 20-25 minutes or until leaves near the center pull out easily. , With a spoon, carefully scrape out the fuzzy center portions of artichokes and discard. , In a small bowl, combine the bread crumbs, cheese, bacon and pepper. 3 tablespoons olive oil
1 cup finely chopped onion
1 large clove garlic, minced
3 tablespoons pine nuts
1 1/2 pounds ground beef, lamb or veal
1 tablespoon minced fresh dill
1 teaspoon oregano
1/2 teaspoon ground cumin
Salt and freshly ground black pepper to taste
1/4 cup sweet vermouth
3 tablespoons tomato paste
1/4 cup grated Parmesan cheese
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
Pinch of nutmeg
4 large artichokes or 6 to 8 medium to small artichokes, cooked as in basic recipe and at room temperature

Steps:

  • Heat two tablespoons of the olive oil in a large skillet. Add the onion and saute until tender. Add the garlic and pine nuts and saute for another minute or so. Stir in the meat, breaking it up with a fork. Cook it, stirring until it has lost its redness.
  • Add the dill, oregano, cumin and salt and pepper to taste. Stir in the vermouth and tomato paste and cook for five minutes. Remove from heat, stir in three tablespoons of the cheese and set aside.
  • For the sauce, melt the butter in a heavy saucepan. Stir in the flour and cook for several minutes. Add the milk, stirring constantly with a whisk, and continue to cook over medium heat until the sauce is thick and smooth. Season with nutmeg and salt to taste.
  • Set the artichokes upright and gently spread the leaves away from the center. Using a tablespoon scoop out the center cluster of leaves and scrape away all the fuzzy ''choke'' beneath them. Do not scrape away any of the fleshy bottom. Each artichoke should have a fairly large center cavity.
  • Preheat oven to 400 degrees. Brush the outside of the artichokes with the remaining olive oil and arrange them in an oiled baking dish. Spoon a little of the sauce into each artichoke and then fill each almost to the top with the meat mixture.
  • Spoon the rest of the sauce on to the top of each artichoke and sprinkle each with remaining cheese. Bake until the topping is lightly brown, about 45 minutes.

6 whole artichokes
3 slices Italian bread, cubed
1 clove garlic, minced
⅛ cup chopped fresh parsley
¼ cup grated Romano cheese
½ teaspoon dried oregano
5 tablespoons vegetable oil, divided
salt and pepper to taste

Steps:

  • Snip the pointed tips of artichoke leaves, and cut off the stems. Wash and drain. Holding artichoke firmly by base, firmly rap the top of it on a hard surface; this will open it so it can be stuffed.
  • In a medium bowl combine bread cubes, garlic, parsley, Romano cheese, oregano, 2 tablespoons vegetable oil, salt and pepper; mix well.
  • Press about 1/2 cup of stuffing into each artichoke. Tightly pack stuffed artichokes together in a large heavy saucepan or Dutch oven. Add enough water to reach half way up artichokes and add 3 tablespoons oil.
  • Bring to a boil over high heat; reduce heat to low and simmer, covered, for 1 hour, or until leaves pull out easily.

1 teaspoon lemon pepper

2 tablespoons chopped fresh chives

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.
  • Melt the butter in a small saucepan over low heat; remove from heat and set aside. Place the Parmesan cheese in a shallow bowl, and set aside.
  • Cut a thin slice from the bottom of each artichoke bottom so it will stand, and gently press your thumb into the center of each to form a depression for the filling. Sprinkle the artichoke bottoms with lemon pepper and garlic salt.

3 large artichokes
8 oz Brie cheese, rind removed, cut into chunks
1/3 cup heavy whipping cream
1 egg yolk
1/2 cup grated Parmesan cheese
Pepper
1/3 cup Progresso™ plain bread crumbs
2 tablespoons butter
1 teaspoon dried thyme leaves

Steps:

  • Heat large pot of salted water to boiling. Cut off and discard top one-third of artichokes. Place artichokes in boiling water; boil 10 minutes, then drain upside down in colander.
  • Grease or spray 8- or 9-inch pie plate; place artichokes upright in pie plate. If needed, trim ends of artichokes so they sit flat in pie plate.
  • In 1-quart saucepan, heat Brie and cream over low heat, stirring occasionally, until smooth and creamy. Turn off heat and, while still stirring, add egg yolk and 1/4 cup of the Parmesan cheese. Season with pepper.
  • Set oven control to low broil, and position rack close to bottom of oven.
  • Fill artichokes with cheese sauce. Sauce should cover tops and fill into artichoke leaves.
  • In medium bowl, mix remaining 1/4 cup Parmesan cheese, the bread crumbs, butter and thyme. Sprinkle over tops of artichokes.
  • Broil 3 to 5 minutes, watching carefully, until golden.

This recipe is a favorite originating from my Mother's large Italian family. It was her job growing up to clean, trim, and stuff the artichokes. My Mom taught me to make these when I was young. Someday when I have a daughter, I will teach her the same. From generation to generation, this recipe is a classic and continues to be a pleaser for all. My husband enjoys this recipe and appreciates the love behind it.

4 medium fresh artichokes
2 -3 cups Italian style breadcrumbs
2 -3 tablespoons of grated parmesan cheese or 2 -3 tablespoons romano cheese
1 tablespoon dried parsley
1 teaspoon garlic salt
1/2 teaspoon fresh ground black pepper
1/4 cup extra virgin olive oil
1 -2 tablespoon extra virgin olive oil (for drizzling)

Steps:

  • Rinse artichokes well, tugging leaves outward to loosen slightly for stuffing.
  • Trim off stems so artichokes sit on a flat surface.
  • Trim off the pointed tips of each leaf.
  • Set aside.
  • In a large bowl combine bread crumbs, cheese, parsley, garlic salt, and pepper.
  • Mix well; slowly add the oil till the crumb mixture is moistened enough to stick together.
  • You may need to adjust the amount of oil depending on the type and amount of bread crumbs used.
  • Stuff each leaf of the artichoke, starting from the bottom and working your way around, with crumb mixture.
  • Stuff desired amount of leaves and shake off excess mixture.
  • Continue this step with remaining artichokes.
  • Place artichokes in a large baking pan and fill bottom of pan with 1/2 to 1 inch of water.
  • Drizzle olive oil over top of stuffed artichokes and cover tightly with heavy duty foil.
  • Cook on 375 degrees for approximately 60-80 minutes (depending on size of artichoke) or until leave comes out easily.

Steps:

  • Preheat the oven to 375 degrees F.
  • Spray a 9 x 13 dish with cooking spray.
  • Mix goat cheese, Italian spices, 1/2 cup breadcrumbs, and half and half together.
