- Cut chicken wings into three sections; discard wing tip sections. In a small bowl, combine the vinegar, garlic, rosemary, salt and pepper. Pour 1/2 cup marinade into a large resealable plastic bag. Add the chicken; seal bag and turn to coat. Refrigerate for 1 hour. Cover and refrigerate remaining marinade., Drain chicken and discard marinade; place in a greased 15x10x1-in. baking pan. Bake at 375° for 25-30 minutes or until no longer pink, turning every 10 minutes., Meanwhile, combine brown sugar and reserved marinade in a small saucepan. Bring to a boil; cook until liquid is reduced by half., Place wings in a large bowl. Pour glaze over wings and toss to coat. Freeze option: Cover and freeze cooled wings in freezer containers. To use, partially thaw in refrigerator overnight. Reheat wings in a foil-lined 15x10x1-in. baking pan in a preheated 325° oven until heated through, covering if necessary to prevent excess browning.

BAKED GARLIC BALSAMIC WINGS WITH SPICY AVOCADO GREEK YOGURT DIPPING SAUCE
These chicken wings are baked until super crispy and then tossed in a sweet and tangy balsamic-honey glaze along with whole cloves of roasted garlic. Served them with a cool avocado-yogurt sauce for dipping.

- For the dipping sauce: Combine the yogurt, lime juice, avocado, jalapeno, 3/4 teaspoon salt and 2 tablespoons water in a blender and puree until smooth. Cover and refrigerate until ready to serve.
- For the wings: Preheat the oven to 425 degrees F. Drizzle the garlic heads with 1 tablespoon of the oil and wrap in foil. Bake until golden and soft, about 1 1/2 hours.
- After about a 30 minutes, generously oil 2 rimmed baking sheets. Toss the wings with 2 teaspoons salt and a few grinds of pepper and divide them between the two baking sheets, spreading them in a single layer. Bake until very crispy, about 55 minutes.
- Squeeze the baked garlic from the heads into a large bowl. Combine the balsamic vinegar, honey, thyme, red pepper flakes, 1/3 cup water and 1 teaspoon salt in a small saucepan and bring to a boil over medium-high heat. Reduce the heat slightly and simmer briskly until the liquid becomes syrupy and is thick enough to coat the back of a spoon, about 5 minutes. Remove from the heat and whisk in the remaining 3 tablespoons oil. Whisk into the bowl with the garlic.
- Transfer the baked wings to the bowl with the glaze and toss to combine. Serve with the dipping sauce and lime wedges.

Yum yum yum. If you like garlic you will love this. If you don't usually like garlic, you might like this because the garlic is roasted, the flavor mellows and has a sweeter taste (like caramelized). Sour cream may be substituted with plain yogurt to cut some calories. This is great for dipping veggies such as artichokes, asparagus, or whatever, it's really versatile.

Steps:
- Cut off top of garlic bulb to expose most of the garlic cloves.
- Put the bulb in an oven-safe small dish or on top of a sheet of foil.
- Drizzle olive oil on the tops of the garlic cloves, add more if needed to drench the tops and sides of the whole bulb. Sprinkle some salt on the top of the bulb on the oil.
- Wrap or seal up the garlic bulb with foil.
- Roast in oven at 400°F for 30-40 minutes, until tops and sides are browned and roasted.
- Take out of the oven and cool for 10 minutes.
- When cooled enough to handle, squeeze out the garlic cloves from the root or the bottom of the bulb, into a small bowl.
- Add mayonnaise and sour cream, using a fork, stir until blended.
- Add pepper to taste, and salt if needed.

- Preheat oven to 350°F. Place unpeeled garlic cloves in baking dish. Add 2 tablespoons olive oil and sprinkle with salt and pepper; toss to coat. Cover dish tightly with foil and bake until garlic is golden brown and tender, about 45 minutes. Cool.
- Squeeze garlic between fingertips to release cloves. Transfer garlic cloves to blender. Add vinegar and rosemary and puree herb mixture until smooth. With machine running, gradually add remaining 1 cup olive oil. Season to taste with salt and pepper. (Dipping oil can be prepared 1 day ahead. Cover and refrigerate. - Line a cutting board with a double layer of paper towels. Remove the chicken from the packaging and place on the cutting board on top of the paper towel. Be sure to give the chicken wings some space in between them. Next, take more paper towels and blot the chicken wings dry and allow to sit out at room temperature for 30 minutes.
- Turn the chicken wings to a large bowl. Add the olive oil, ranch dressing, lemon juice, red pepper flakes, and garlic to the bowl. Use your hands and toss the chicken wings together with the flavors until evenly coated.
- Spray the cooling rack with non-stick spray. Place the chicken wings onto the cooling rack with about a ½ inch of space between them. They should not be touching. Place in the oven for 45-50 minutes, depending on your crisp preference. Allow to cool slightly before serving. Serve with a side of ranch dressing
