BAKED MACARONI AND CHEESE
A friend of mine sent this recipe to me when I got my first apartment, because she knows how much I hate cooking! It's really easy -- even I can make it -- and tastes great. I'm not sure where she found the recipe, but it included the note 'Good source of protein, vitamin A, B group vitamins, calcium.'

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart baking dish.
- In a large pot of salted water, lightly boil the macaroni for about 5 minutes until half-cooked.
- Whisk the egg and milk together in a large cup. Add butter and cheese to the egg and milk. Stir well.
- Place the lightly cooked macaroni in the prepared baking dish. Pour the egg and cheese liquid over the macaroni, sprinkle with salt and pepper, and stir well. Press the mixture evenly around the baking dish.
- Bake uncovered, for 30 to 40 minutes, or until the top is brown.

BAKED ITALIAN MACARONI & CHEESE
Today as I make my baked mac and cheese I found this on the back of my R&F elbow pasta. It looks very yummy.

Steps:
- Preheat oven to 375°F.
- Cook pasta as package directs; drain.
- Meanwhile, in a large saucepan, over medium heat, cook bacon until crisp; remove and crumble;set aside.
- Pour off all drippings except one tablespoon.
- Add garlic; cook and stir until tender.
- Gradually stir in milk, beat in eggs and Italian seasonings.
- Cook and stir until hot and slightly thickened.
- Stir in cheddar and fontina cheeses; cook and stir until melted.
- Stir in parmesan cheese, pasta and bacon.
- Spoon mixture into a greased 13x9-inch baking dish.
- Top with the bread crumbs.
- Bake 40 minutes or until hot and bubbly.
- Let stand 10 minutes.

BAKED MACARONI AND CHEESE

- For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
- Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
- For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Slowly whisk in 1 cup of the milk and then whisk in the remaining 1 cup milk. Continue to cook, stirring constantly, until the sauce thickens. Add the cheese and stir until it melts. Add the drained macaroni to the cheese sauce and mix thoroughly.
- For the topping: In a small bowl, stir the breadcrumbs with the butter until the crumbs are moistened.
- Transfer the macaroni and cheese to the prepared baking dish and top with the buttered breadcrumbs. Bake until the dish bubbles around the edges, about 15 minutes.
ITALIAN MAC-N-CHEESE

- Bring a large pot of water to a boil. Salt water and cook pasta to a chewy al dente, about 8 minutes.
- In a nonstick skillet, brown and crumble the sausage. Drain cooked crumbles on paper towel lined plate. Return pan to heat and add extra-virgin olive oil, butter, garlic and mushrooms. Season liberally with salt and pepper. Saute 3 to 5 minutes, until mushrooms are lightly golden.
- Preheat broiler to high.
- To mushrooms, add flour and stir, cooking 2 minutes. Whisk in stock, then stir in cream. Bring cream to a bubble, then stir in 2 cups of 4 cheese blend. When cheese has melted into sauce, add tomatoes. When sauce comes to a bubble, remove from heat and adjust seasonings, adding hot sauce if desired.
- Combine cheese sauce with sausage and pasta, transfer to flameproof baking dish, casserole or flameproof serving platter. Sprinkle remaining 1/2 cup of 4 cheese blend and the grated Parmesan over the top and brown under hot broiler.

- Preheat oven to 350 degrees.
- In a large pot, bring 3 quarts of water to a boil. Add the salt and macaroni. Cook pasta al dente. Drain and set aside.
- In a large saucepan, heat 3 tablespoons butter over low heat. Add onion and saute until soft. Add flour and cook for 3 minutes, stirring the whole time. Add the milk. Season with salt and black pepper. Cook over medium heat, stirring constantly, until the mixture begins to bubble. Simmer 2 minutes. Remove from heat and add nutmeg, cayenne, and 2 cups of the cheeses. Stir and add macaroni. Mix well.
- Pour the macaroni mixture into a baking dish about 8 by 8 inches in size and sprinkle with the remaining cheeses. Sprinkle with breadcrumbs and dot with the remaining butter. Bake in oven for 25 minutes or until top is browned.
