KETO TWICE BAKED LOADED MASHED CAULIFLOWER
Twice baked potatoes was always a favorite side dish. Get excited for Keto Twice Baked Loaded Mashed Cauliflower! It has all the flavors of your the favorite creamy side dish but not all the carbs. Crispy, crumbled bacon, chopped green onions, and cheddar cheese are mixed in fluffy cauliflower faux-tatoes.

Steps:
- Preheat oven to 400 degrees
- Melt butter in a large skillet over medium heat.
- Add garlic and sauté until fragrant, about 1 minute.
- Pour in cauliflower florets and chicken broth. Simmer on medium heat until cauliflower is tender, about 5-8 minutes.
- Drain fluid. Squeeze out excess fluid from the cauliflower by placing it between two paper towels. For thick mashed cauliflower, try to get as much fluid out as possible.
- In a food processor or blender, combine the cooked cauliflower, cream cheese, 1/4 cup parmesan cheese, salt and pepper. Puree until smooth.
- Add cheddar cheese, bacon, and green onions to the mashed cauliflower. Stir to combine. Transfer to a casserole dish and top with remaining parmesan cheese. Sprinkle ground pork rinds on top.
- Bake at 400 degrees for 20 minutes.

KETO CAULIFLOWER BAKE WITH CHEESE
Steps:
- Preheat the oven to 180C/355F.
- Break the cauliflower up into florets and blanch for 5 minutes (boil then quickly run under cold water) and drain well.
- Add the cauliflower to a baking dish.
- Add the sour cream and coat the cauliflower with it evenly.
- Add half of the mozzarella and mix well.
- Cut the bacon into strips and add on top, followed by the onion, herbs and garlic powder.
- Add the rest of the mozzarella followed by the grated cheddar.
- Bake for 25 minutes until golden.
- Remove from the oven and serve hot!

BAKED KETO BACON CAULIFLOWER MASH RECIPE
This creamy (healthy) alternative to traditional mashed potatoes is a hearty side for any main dish. I am not going to say it tastes "just like" mashed potatoes because it doesn't. Steps:
- Place the cauliflower in a microwave safe dish with a lid on high for 8 minutes, or until soft. Remove from microwave and take off the lid to let steam escape. You want the cauliflower to dry out a bit. See the post for tips.
- Transfer the cauliflower and all ingredients except bacon and cheese in a food processor or blender. Pulse until smooth and salt and pepper to taste if you need to. Add almond milk or heavy cream one tbsp at a time if you need more moisture to get it smooth.
- The texture should be smooth. Transfer to an oven safe serving dish or six ramekins. Top with cheese and bacon. Broil for a couple of minutes to get a nice golden crust (watch it closely). See post for alternatives and tips for baked cauliflower mash (yum).

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a large, square baking dish with cooking spray.
- Put cauliflower in a microwave-safe bowl and cook in microwave oven until tender, about 6 minutes.
- Blend cauliflower in a food processor until smooth; add sour cream, yogurt, and butter and process again until smooth.
- Mix blended cauliflower mixture in a bowl with 3/4 cup Cheddar cheese, bacon bits, chives, garlic, and black pepper; spread into the prepared baking dish and top with remaining Cheddar cheese.
- Bake in preheated oven on the middle rack until cheese is melted, about 15 minutes. Switch oven to 'broil' and continue baking until the top is golden brown, 3 to 5 minutes more.
