6 salmon fillets (6 ounces each)
1/4 cup packed brown sugar
1/4 cup maple syrup
3 tablespoons reduced-sodium soy sauce
1 tablespoon Dijon mustard
1/4 teaspoon pepper
4 teaspoons sliced almonds, toasted, optional

Steps:

  • Preheat oven to 425°. Place salmon fillets in a greased 13x9-in. baking dish. In a small bowl, combine brown sugar, syrup, soy sauce, mustard and pepper. Pour over salmon., Cover and bake 10 minutes. Uncover and bake 8-10 minutes longer or until fish flakes easily with fork. Sprinkle with almonds if desired.

Delicious maple-glazed salmon is a little on the sweet side, but not too much. The whole house smells wonderful when this is cooking; it's a great warm winter meal! I have a hard time finding good recipes my family likes with fish, since my husband is not fond of lemon. This is a perfect compromise!

½ cup maple syrup
2 tablespoons soy sauce
1 tablespoon minced garlic

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix maple syrup, soy sauce, garlic, dill, garlic salt, and pepper together in a small bowl.

Salmon baked at a low temperature until medium-rare delivers a silky texture that tastes special enough to make it a festive centerpiece. This easy dish works any night of the week, since it comes together in less than half an hour. Maple syrup sweetens the glaze, which gets a savory pop from whole mustard seeds in Dijon. Even though salmon is naturally fatty, a dollop of mayonnaise adds extra richness while thickening the glaze to help it seal onto the fish. The herbaceous aroma of cilantro stems baked into the sauce brightens the dish, as do tender leaves scattered on top. Fill out your feast with any combination of steamed rice, roasted potatoes, green beans or salad.

1 (1 1/2-pound) skin-on or skinless salmon fillet
12 fresh cilantro sprigs
2 tablespoons pure maple syrup
2 tablespoons whole-grain Dijon mustard
1 tablespoon mayonnaise
Kosher salt and freshly ground black pepper
Lemon wedges, for serving

Steps:

  • Remove salmon from the refrigerator. Heat oven to 325 degrees.
  • Bundle the cilantro sprigs by their stems and hold them tightly, then slice the stems crosswise until you get to the leaves. Reserve leaves for garnish. Transfer sliced stems to a small bowl and stir in the maple syrup, mustard and mayonnaise until well mixed.
  • Season the salmon all over with salt and pepper and place in a baking dish, skin-side down if there is skin. Slather the maple sauce all over the top.
  • Bake until a paring knife slides into the center with only a little resistance, 15 to 20 minutes. When you remove the knife and touch the blade to your upper lip, it should feel very warm but not hot. The salmon will continue to heat through out of the oven while in the baking dish. Top with the reserved cilantro leaves, and squeeze lemon wedges all over just before serving.

2 lb. salmon fillets (about 4 pieces), cut into 3-inch strips
1/4 cup maple syrup
2 tablespoons soy sauce
1 tablespoon olive oil
2 teaspoons garlic, minced
1 tablespoon Italian seasoning
1/2 teaspoon ground black pepper
sesame seeds (optional, for serving)

Steps:

  • In a small bowl, whisk together maple syrup, soy sauce, olive oil, garlic, Italian seasoning, and black pepper. Place salmon fillets into a medium container and pour the maple syrup mixture on top to fully coat. Cover and place in the refrigerator and marinate for at least 30 minutes or overnight. (You can also marinate the salmon in a large ziploc back. Add in all ingredients and then press the air out of the bag and seal tightly. Press the marinade around the salmon to coat).
  • Meanwhile, preheat oven to 400 F. Then, remove the marinated salmon fillets out of the container and place them skin side down on a parchment lined baking sheet. Keep the marinade sauce to brush on later.
  • Bake for 20 minutes, until cooked through and flaky. Brush the reserved marinade over the salmon halfway through baking for extra flavour.
  • Transfer the salmon fillets onto a plate and let rest for 5 minutes. Sprinkle some sesame seeds on top (optional) and serve warm over steamed rice or some creamy mashed potatoes.

3 tablespoons fresh ginger
1/2 teaspoon black pepper
2 tablespoons Grand Marnier
4 lbs fresh salmon
5 tablespoons fresh grated orange peel
2 shallots, minced
2 teaspoons cornstarch
1/2 cup low sodium soy sauce
1/2 cup Grand Marnier
1 cup maple syrup
2 small oranges, sliced thin

Steps:

  • If you use dry rind instead of fresh you will need to rehydrate it with orange just for the best results.
  • Wash salmon and pat dry.
  • Combine ginger, basil, pepper, rind and shallots.
  • Lightly brush salmon with Grand Marnier. Coat salmon on both sides with herb mixture and refrigerate overnight (at least 4 hours).
  • Preheat oven to 350°F.
  • Dissolve cornstarch in enough hot water to make a smooth paste. Slowly whisk in liquid glaze ingredient. Whisk until smooth.
  • Place salmon in shallow baking dishes. Spoon glaze over fish.
  • Cook until done (about 20 minutes for 1 inch fillets or 25 for 2 inch fillets. )Baste the fish once or twice during cooking It should flake easily.
  • Decorate with orange slices. Shown in the picture here with a lemon pig.
  • To make a lemon pig - choose the snout end of the pig and decide which will be the bottom. Cut the bottom off so the pig will sit flat. At the snout end cut two flaps for the ears. Pull them out a little so the will stand out but not too much or it will break. Use cloves for the eyes.
