These Oven Baked Pork Chops are filled with savory cranberry sausage stuffing. They only take 20 minutes to bake and make a perfect easy dinner!

4 Tablespoons olive oil
¼ cup diced onions (cooked until softened)
¼ cup diced celery (cooked until softened)
½ cup cooked sausage (diced)
6 oz. Martin's Potatobred Stuffing
1/2 can cream of chicken soup
3 Tablespoons butter (melted)
1/3 cup chicken broth
1/3 cup sour cream
¼ cup dried cranberries
2 teaspoons dried rosemary
Salt/Pepper (to taste)
1 teaspoon Rosemary
¾ teaspoon oregano
¾ teaspoon thyme
¾ teaspoon sage
1/8 teaspoon nutmeg
1/8 teaspoon pepper
½ teaspoon salt

Steps:

  • Preheat oven to 400 degrees
  • Use a paring knife to slice into the side of each pork chop to create a pocket for the stuffing.
  • Add all stuffing ingredients to a large bowl until just combined, don't overmix.
  • Scoop the stuffing into each pork chop, you'll be able to stuff it with more than you think! Place the pork chops in a baking dish.
  • Add 4 Tablespoons of olive oil to a medium bowl along with the pork seasoning ingredients. Use a pastry brush to brush it over the pork chops.
  • Bake, uncovered, for 15-20 minutes, until the top of the pork chops begin to turn golden brown.
  • Serve with roasted potatoes and green beans and enjoy!

I got this recipe from a friend and it is awesome! When I want comfort food, this is the one that I turn to. My husband loves it too! We love the stuffing so much I usually double the recipe for the bread crumb mixture, leave everything else the same. For the bread cubes, French bread works best, not sourdough.

4 raw chop with refuse, 113 g; (blank) 4 ounces thick cut pork chops

28 ounces vegetarian baked beans (I like Bush's brand)
1/2 cup green bell pepper, chopped
1/2 cup onion, chopped
1/4 cup mustard (either dijon or yellow according to taste)
1/4 cup brown sugar, packed (optional)
2 tablespoons Worcestershire sauce
1 teaspoon hot sauce (or more)
4 pork chops, boneless and about 1 inch thick

Steps:

  • Preheat the oven to 400 degrees and combine all ingredients, except the pork chops, in a 9x9 baking dish. Mix well. You may drain off some of the juice from the beans, but I like it. Lay the pork chops on top, turning once to cover the chops with the juice from the beans. Bake uncovered for 30 to 35 minutes until the beans are bubbly and the pork chops are done.

1/2 cup kosher salt
3 tablespoons sugar
1 tablespoons light brown sugar
2 quarts water
4 (2-inch thick) pork chops, bone-in rib loin chops, split to bone
2 slices bacon, chopped
2 stalks celery, minced
1 small onion, minced
2 cloves garlic, minced
1 tablespoon freshly chopped rosemary leaves
1 tablespoon freshly chopped sage leaves
2 tablespoons freshly chopped parsley leaves
2 1/2 cups crumbled cornbread
1/4 cup dried cranberries
1/2 cup chicken broth
Salt and freshly ground black pepper

Steps:

  • Whisk salt and sugars in 2-quarts of cold water. Add pork chops and cover. Refrigerate for 1 hour. Remove the pork chops from the brine and dry well.
  • In a large heavy bottomed saute pan, begin to fry bacon. Add celery, onion and garlic to pan and allow to saute with the crispy bacon. Add rosemary, sage and parsley after bacon has cooked for 8 to 10 minutes. Saute until fragrant. Season with salt and pepper.
  • In a large bowl add cornbread, dried cranberries and chicken stock. Stir in the cooked vegetable mixture. Mix well.
  • Preheat grill to medium-high heat.
  • Season the pork chops with salt and pepper. Stuff the chop with about 1/2 cup of stuffing. Use toothpicks to help seal the chops. Grill the chops for 5 to 7 minutes per side. Internal temperature should be 145 degrees F. Allow chop to rest for 5 minutes before serving.

6 boneless pork chops, about 1 1/2 lbs.
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon oil
1 onion, chopped
2 celery ribs, chopped
2 tart apples, peeled,cored,chopped
2 cups chicken broth
1 (10 1/2 ounce) can cream of celery soup, undiluted
6 cups herb-seasoned stuffing cubes

Steps:

  • Sprinkle both sides of chops with salt and pepper.
  • In a large skillet over medium-high heat; brown pork chops in the oil.
  • Removed pork chops and set aside.
  • Cook onion and celery in the same skillet until onion is tender.
  • Add chopped apples and cook another minute.
  • Stir in chicken broth and celery soup.
  • Bring to a simmer.
  • Remove from heat; stir in stuffing cubes until cubes are moistened.
  • Pour stuffing mixture into a lightly greased or sprayed 13x9-inch baking dish.

I found lots of recipes here for pork chops with stuffing but none with the green bean/onion layers which add moisture & flavor to the dish. Of course, the pan drippings left from browning would be a wonderful gravy starter if you're so inclined. This was an invention which pleased our palates immensely!

2 boneless pork chops, butterflied, 1 inch thick
1/2 teaspoon ground thyme
1/4 teaspoon dried rosemary

1 (15 ounce) can green beans or 2 cups frozen green beans
1 medium onion, sliced & separated into rings
1 (6 ounce) package seasoned stuffing mix (made according to package directions)

Steps:

  • Preheat oven to 350º F.
  • Coat an 11"X7" baking dish with cooking spray.
  • Season both sides of pork chops with thyme, crushed rosemary & black pepper. **(note - I chose not to add salt as prepackaged stuffing mixes usually have a very high sodium content).
  • Heat a large skillet over medium-high flame & add the oil. When hot, add the chops. Brown 3-4 minutes per side.
  • Prepare stuffing mix per package directions. Set aside.

1 tablespoon adobo seasoning
1 (.18 ounce) packet sazon seasoning

1 ½ cups water
¼ cup margarine
6 (6 ounce) packages dry stuffing mix (such as Stove Top®)

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Place pork chops in a large bowl and season all sides with adobo seasoning, sazon seasoning, garlic powder, pepper, and salt; add 2 tablespoons Italian dressing and flip to coat.

3 Granny Smith apples, diced
½ cup brown sugar
