Steps:
- Gather all the ingredients.
- In a small mixing bowl, combine salt, pepper, olive oil and soy sauce. Set aside.
- Thinly slice tomatoes and fresh mozzarella into 1/4" thickness. Set aside.
- On a serving plate, lay down tomato slice followed by a slice of fresh mozzarella topped with basil leaves. Keep chilled until ready to serve and drizzle dressing on top before serving!

- Heat oven to 350 degrees F. In four 12- to 16-ounce or one 1-1/2-quart shallow ovenproof dish layer pasta sauce, garlic, and mozzarella. Bake 20 minutes or until mozzarella is melted. Remove from oven; drizzle olive oil. Top with basil. Serve with bread or Parmesan Toasted Baguette slices. Makes 4 servings. Parmesan Toast

Steps:
- Preheat oven to 400°F.
- Place the cherry tomatoes in an 8x10 inch or 2 quart baking dish.
- Peel and smash the garlic cloves and thinly slice the shallots. Add them to the pan with the tomatoes and drizzle with olive oil.
- Sprinkle the tomato mixture with salt, black pepper, and red pepper flakes.
- Roast the tomatoes at 400°F for 25 minutes, stirring halfway.
- Remove them from the oven. Place the fresh mozzarella ball in the center of a plate and spoon the tomato mixture around the cheese.
- Top the tomatoes with chopped fresh herbs and serve with toasted baguette slices on the side.

BAKED SMOKED MOZZARELLA & TOMATO
On our recent trip to Italy, dh and I enjoyed gelato, rice balls, wine, and baked smoked mozzarella. When we were served this in Rome at La Bruschetta's (on Via Sardegna), it was served straight out of the dish and gooey delicisio. Is best when it is kept hot otherwise the mozzarella starts to harden, so try to find a dish that can keep the heat. Mangiare! Recently made inside a foil packet for appetizer while RVIng and it worked great!

- Preheat your oven broiler.
- Grease a small ovenproof dish with 1/2 teaspoon olive oil.
- Layer half of the mozzarella, all the tomatoes, season with basil, garlic, salt, & pepper, top with rest of mozzarella.

- Place 6 Sister Schuberts Mini Baguettes on a baking sheet and bake rolls according to directions on package. Cool baguettes.
- Decrease oven temperature to 375 degrees F.
- Carefully slice each Sister Schuberts Mini Baguette in half horizontally. Spread one side of each baguette with pesto. Continue to layer with tomatoes, fresh mozzarella and sprinkle with salt and pepper. Wrap each sandwich in a large piece of aluminum foil, place packages on baking sheet and bake 7 to 10 minutes or until sandwiches are warm and the cheese has melted. Unwrap sandwiches, open and add fresh basil leaves. Serve.

- Heat the oven to 200C/180C fan/gas 6. Heat half the oil in an ovenproof pan or casserole dish, then stir in the onion and cook over a low heat for 8-10 mins until golden. Scatter over the rice and mix well until coated. Pour over the wine, if using, and cook for 2 mins until absorbed. Pour over the hot stock, then give the rice a quick stir. Put the dish in the oven and bake the rice for 10 mins.
- Remove from the oven and stir through the tomatoes, basil, half of the parmesan and some seasoning. Flatten everything out roughly with the back of a spoon, then nestle the chunks of mozzarella evenly into the risotto. Sprinkle over the breadcrumbs and the remaining parmesan, and drizzle with the rest of the olive oil. Put the dish back in the oven, and bake everything for another 10-15 mins until the rice is just cooked through, heating it under the grill if you want a deep, golden crust. Leave to stand for a few minutes, scatter with a few extra basil leaves and serve scooped straight from the dish.

- 2. Cut tomatoes into thick slices, and place them on a foil-lined baking sheet.
