MY HUSBAND'S FAVORITE BAKED BURGERS
Simple, flavorful hamburger recipe that my husband loves. Ketchup is the binder so no egg is required. They hold together very well. I bake them in the oven and they come out perfect every time! I serve these with a slice of cheese melted on top. Top as desired.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Combine ground beef, bread crumbs, ketchup, Worcestershire sauce, garlic powder, onion powder, mustard powder, salt, and black pepper in a bowl until well mixed. Form into 4 patties and place on a baking sheet.
- Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Serve immediately.

THIRTY-MINUTE BAKED TUNA BURGERS
This is a dish my parents used to be able to make in a half hour when we were children. I added a few additions to make it a little more exciting and fairly low in fat. Serve on hamburger buns with traditional hamburger condiments if desired.

- Preheat oven to 375 degrees F (190 degrees C). Spray a baking sheet with cooking spray.
- Mix tuna, egg, bread crumbs, garlic salt, and black pepper and fold in diced tomatoes and onion. Form the mixture into 4 patties and place onto prepared baking sheet.
- Bake in the preheated oven until burgers are golden brown and crisp, about 10 minutes per side.

GRILLED TUNA BURGERS WITH SPICY MAYO
Steps:
- Add the sesame oil, soy sauce, red pepper flakes and egg to a large mixing bowl. Mix well, then fold in the tuna, red bell pepper and scallions. Mix well to coat everything evenly. Sprinkle with salt and fold in the panko breadcrumbs to lightly bind everything. Carefully form the mixture into 4 even-size patties and set on a platter. Refrigerate so the patties firm up and hold their shape when cooked, 15 to 20 minutes.
- Heat a large nonstick skillet over high heat. Coat the pan with a little vegetable oil and cook the tuna patties 3 minutes per side (when done, the patties will be browned on the outside and medium-rare in the center).
- Grill the hamburger buns over high heat until well charred and crispy.
- Serve the tuna burgers slathered with the Spicy Sriracha Mayo, lettuce leaves and tomato slices on the toasted, seeded hamburger buns, paired with the dry Riesling.
- Combine the mayonnaise, sour cream, Sriracha, sesame oil, lemon juice, honey and scallions in a large mixing bowl. Stir well to combine, season with salt and pepper and place in the refrigerator until ready to serve.

- In a small saucepan saute the onion and garlic in oil until tender (without burning the garlic) and set aside to cool.

- In a large bowl, mix together tuna, ricotta cheese, spring onion, mayonnaise, lemon juice and season with pepper and salt.
- Cut the hamburger buns in half, separating top from bottom. Scoop out some of the bread from inside the buns (top and bottom) to make room for the tuna mixture.
- Fill the buns with the tuna mixture and place both halves back together. Wrap the bun in tin foil and place in a moderate oven (180 degrees Celsius) for 15-20 minutes.
- To serve, cut the buns in half from the top.

- Preheat oven to 375 degrees and spray a baking sheet lightly with cooking spray. In a large bowl place drained tuna, beaten eggs, mayo, green onions, Dijon mustard and Worcestershire sauce and mix until tuna has broken down and everything is well combined.
- Add ⅓ cup of cracker crumbs and stir to combine. Allow cracker crumbs a moment to absorb liquid from mixture before forming patties. Place remaining cracker crumbs into a shallow bowl or plate to coat patties in crumbs.
- Use about ⅓ cup of tuna mixture to form patties that are about ½" thick. Lightly coat the outside of the patty with cracker or breadcrumbs and place on prepared baking sheet. Reshape patties on the baking sheet, if necessary. The mixture should be soft and loose, but not runny. If necessary, add a small amount of crumbs to bind the mixture, just enough to allow patties to be shaped and handled.
- Bake 14–16 minutes or just until patties are firm in center and lightly browned. Allow patties to cool for about 5 minutes before serving. Enjoy!
