1 teaspoon salt
⅓ cup vegetable oil
⅔ cup buttermilk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet.
  • In a large bowl, mix together flour, baking powder and salt. Use a fork to blend in the oil. Add buttermilk and stir until the dough comes together.
  • Roll dough out on a lightly floured surface. Cut dough into biscuits.

1 cup all-purpose flour ( sifted )
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 tablespoon butter (softened)
1/2 tablespoon vegetable shortening
1/2 cup milk

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F and grease a baking sheet .
  • Mix the flour, baking powder, and salt in a medium-size bowl.
  • Work in the butter and shortening with a fork.
  • Slowly mix in the milk until a soft dough is formed. Mix the dough by hand with a large wooden or plastic spoon. The dough is too stiff for most electric mixers and it's likely that you'll burn out the motor. Also, your biscuits should not be mixed until the dough is perfectly smooth. A few lumps are actually a good thing in this type of dough, so don't stress about getting it perfect.
  • Turn the dough out onto a floured board.
  • Pat the dough down until it is about 1/2 inch thick.
  • Cut the dough into four to five equal-sized biscuits and place them on the greased pan.
  • Bake for 12 to 15 minutes, or until lightly golden.

These are great! Nice and easy, and light and yummy. I get about 16 biscuits with this recipe. I like the versatility as well. I add cheese or garlic; whatever hits me at the time. I almost always add extra sugar.

2 cups flour
1/2 teaspoon salt
4 teaspoons baking powder
1 tablespoon sugar
1/2 cup vegetable shortening
2/3 cup milk

Steps:

  • Preheat oven to 425 degrees. Grease two 8-inch cake pans.
  • Put the flour, salt, baking powder, and sugar in a bowl.
  • Cut in the shortening until mixture resembles coarse meal.
  • Add the milk all at once and stir just until the dough forms a ball around the fork.
  • Turn dough out onto a lightly floured board and knead 14 times.
  • Pat until 1/2-inch thick.
  • Cut into rounds with a 2-inch cookie cutter.
  • Place, touching each other, in the cake pans and bake for 15-20 minutes.
  • CRUSTY BISCUITS.
  • Roll biscuits to 1/4-inch thick and place 1-inch apart in pan.
  • Bake in a 450 degree oven for 12 minutes.
  • Yields almost double the biscuits.
  • BUTTERMILK BISCUITS.
  • Use 2/3 cup buttermilk instead of sweet milk, 1/2 teaspoons baking soda and only 2 teaspoons baking powder.
  • CHEESE BISCUITS.
  • Add 1/2 cup grated sharp cheddar cheese to dry ingredients.
  • DROP BISCUITS.
  • Add additional 1/3 cup milk and use a baking sheet.

1/2 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
2 tablespoons shortening
3 tablespoons milk
2 tablespoons butter, melted, divided

Steps:

  • Preheat oven to 450°. In a small bowl, combine the flour, baking powder and salt; cut in shortening until mixture resembles coarse crumbs. Add milk, tossing with a fork until a ball forms. , Turn onto a lightly floured surface; knead 5-6 times. Roll or pat to 1/2-in. thickness; cut with a 2-1/2-in. biscuit cutter. Place on a greased baking sheet. Brush tops with 1 tablespoon butter. Bake until golden brown, 9-11 minutes. Brush with remaining butter. Serve warm.

This recipe actually came in the instruction manual of my kitchenaid mixer. I have modified it a little as I have experimented with making biscuits. In the south biscuits are the building blocks of any good breakfast. Once you've made a good biscuit, the options are endless. I usually make these on the weekend. My favorites are sausage gravy over biscuits, bacon or sausage egg and cheese, and jelly/jam biscuits.

2 cups flour
4 teaspoons baking powder
1 teaspoon salt
1/3 cup butter, softened (shortening or margarine is an acceptable substitute)
3/4 cup buttermilk (or 2/3 cup milk)

Steps:

  • Preheat oven to 40.
  • In mixer combine flour, baking powder and salt.
  • With mixer on low speed, cut in butter until mixture is crumbly.
  • Slowly add buttermilk until mixture forms a dough.
  • Replace mixing blade with dough hook and allow dough to be kneaded on a low speed for 3-5 minutes (or knead by hand until all lumps are gone and dough is firm but elastic).
  • Sprinkle rolling board or table with flour.
  • With rolling pin, roll dough out to about 1/2 an inch thickness.
  • Using a biscuit cutter or the top of a glass (I use a beer pint glass) cut out as many biscuits as you can. Place biscuits on a greased baking sheet.
  • Knead dough several times until you have an unbroken ball. Roll out again to 1/2 an inch thickness, cut out biscuits. Repeat as many times as necessary to use dough.
  • Bake for 12-15 minutes until top of biscuits are golden.

These rich, flaky biscuits are best eaten warm from the oven. As with all biscuits, it's important not to overwork the dough while you are patting it out.

Yield makes 1 dozen

Number Of Ingredients 6

4 cups all-purpose flour, plus more for dusting
2 tablespoons baking powder
2 teaspoons sugar
1 teaspoon salt
2 sticks (1 cup) unsalted butter, cold, cut into small pieces
2 cups heavy cream, plus more for brushing

Steps:

  • Preheat the oven to 400°F. In a large bowl, whisk together the flour, baking powder, sugar, and salt. Using a pastry blender, cut in the butter until the mixture resembles coarse crumbs with a few larger clumps remaining.
  • Pour in the heavy cream; using a rubber spatula, fold cream into the dough, working in all directions and incorporating crumbs at the bottom of the bowl, until the dough just comes together. The dough will be slightly sticky.
  • Turn out the dough onto a lightly floured work surface. With floured fingers, gently pat the dough into a round about 1 inch thick, pressing in any loose bits. Do not overwork the dough. Use a floured 2 1/4-inch round biscuit cutter to cut out the biscuits as close together as possible. (Use one cut edge as the edge for the next biscuit.)
  • Place the biscuits on an unlined baking sheet about 1 1/2 inches apart. Generously brush the tops of the biscuits with cream. Bake, rotating the sheet halfway through, until the biscuits are golden and flecked with brown spots, 20 to 25 minutes. Transfer the biscuits to a wire rack to cool.
  • Follow instructions for Baking Powder Biscuits, adding 1/4 cup of finely chopped herbs, such as rosemary, oregano, thyme, or parsley, to the flour mixture after the butter has been cut in. Proceed with the recipe.
  • Follow instructions for Baking Powder Biscuits, increasing sugar to 1/2 cup, and reducing butter to 1 1/2 sticks (3/4 cup). Pat dough to about 1 1/4 inches thick before cutting out rounds. Before baking, brush rounds with 1 lightly beaten large egg (do not brush with cream), and sprinkle generously with sanding sugar, if desired.
  • While biscuits bake, slice 3 pints hulled fresh strawberries in half (or in quarters, if large). In a medium bowl, toss to combine with 1 tablespoon freshly squeezed lemon juice and 1/3 cup granulated sugar. Let mixture macerate for 20 minutes.
  • After baking biscuits, cool them on a wire rack for 15 minutes, and then split in half horizontally with a serrated knife. Place the bottom halves on serving plates, and top each with a dollop of Vanilla Whipped Cream (page 391). Spoon strawberries and juice over each, and cover with the biscuit tops. Serve immediately, with additional strawberries and whipped cream on the side, if desired.
