CRAB CAKES BALTIMORE-STYLE

This is a classic crab cake inspired by those that were served at Obrycki's Crab House, a rollicking fish restaurant in a former row house on East Pratt Street in Baltimore. They are simply delicious.

BALTIMORE CRAB CAKES

Baltimore Crab Cakes image

This is my late mother's recipe. Do not use imitation or claw meat, backfin only; do not skip the seafood seasoning. My mother used prepared mustard in her recipe; I prefer ground mustard as it gives it more zing. Experiment with different mustards (Dijon, Spicy Brown, etc.) until you find the exact flavor YOU like. :-)

Categories     Seafood

Time 20m

Number Of Ingredients 10

1 tsp old bay or other seafood seasoning
1 large egg
2 Tbsp mayonnaise
1 Tbsp pimientos, chopped
1 tsp worcestershire sauce
1 tsp ground mustard
1 tsp lemon juice
4 ritz crackers, crushed
1 tsp parsley flakes
1 lb backfin crabmeat

Steps:

  • 1. Preheat oven on broiler setting. Lightly grease a baking sheet.
  • 2. Place all ingredients, except crab meat in medium-sized bowl; mix.
  • 3. Fold in backfin, taking care not to break up lumps.
  • 4. Form into 4 patties.
  • 5. Traditional Baltimore crab cakes are preferred broiled. Broil 8-10 minutes on each side until browned.
  • 6. You may also pan fry. In a large saute pan, pour 2 tablespoons oil (my mom used peanut oil). Gently lay the cakes and pan fry until browned, about 5 minutes on each side. Drain cakes on paper towels.

BALTIMORE CRAB CAKES WITH REMOULADE SAUCE

BALTIMORE CRAB CAKES WITH REMOULADE SAUCE image

Food & Wine
This is the best crab cake recipe you will ever find. If you don't overmix, and don't pack your mounds too tightly, you will experience pure, unadulterated crab cake heaven, if you follow the steps to the letter and. For years I searched for a great crab cake recipe. I wanted one that didn't have a lot of filler. Putting a lot of junk in a crab cake is one of the biggest transgressions in American cookery. About 20 years ago, my best friend shared her mother's secret "country club" recipe for crab cakes. This is it, verbatim. I make these in double batches and put the leftovers in the fridge. If you haven't eaten a cold crab cake on toast with sliced tomato and Russian dressing, then you are really missing out.
I also make these as a master batch: Instead of just eight, I make 24 to 26 mini donut-hole-size crab cakes for parties.
-Andrew Zimmern
REMOULADE SAUCE

In a medium bowl, lightly toss the crabmeat with the cracker crumbs. Gently fold in the mayonnaise mixture. Cover and refrigerate for at least 1 hour. 4. Scoop the crab mixture into eight 1/3-cup mounds; lightly pack into 8 patties, about 1 1/2 inches thick. In a large skillet, heat the oil until shimmering. • Preheat your oven to 400°F. Drain the liquid from the crabmeat, using a mesh strainer. You can gently pat the crab meat dry with a paper towel if you wish. Transfer the crab meat to a mixing bowl. Inspect the crab meat closely to make sure there are no shell remnants.
  • In a small separate bowl, whisk the mayonnaise, dijon mustard, worcestershire sauce, lemon juice and dry seasonings together.
  • Add the wet mixture from step 2 to the large bowl of crabmeat. Add the egg, panko breadcrumbs and chopped parsley. Mix everything together with a rubber spatula until just combined. Try not to over-mix because you want the lumps of crab to remain in tact.
