2 teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
1 cup white sugar
½ cup chopped pecans
2 eggs
1 cup mashed bananas
½ cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x4 inch loaf pans. Set aside.
  • Sift together flour, baking powder, baking soda, salt, and sugar. Stir in nuts, eggs, bananas, oil, and vanilla extract.
  • Pour into prepared pans. Bake for 45 to 60 minutes. Cool on wire rack for 10 minutes before removing from pans.

Steps:

  • Preheat oven to 325. Grease a 9" x 5" loaf pan.
  • In a large mixing bowl, beat together butter and brown sugar until creamed. Beat in eggs, mashed bananas, and vanilla until creamy.
  • In a seperate bowl, combine flour, salt, baking powder, cinnamon and nutmeg. Gradually add this dry mixture into creamed mixture and mix well. Batter will get thick.
  • Stir in chopped pecans.
  • Pour into greased loaf pan. Bake at 325 for 70-80 minutes.
  • Makes 1 loaf.

2 tablespoons 2% milk
1 teaspoon vanilla or rum extract

3/4 cup chopped pecans

Steps:

  • Preheat oven to 325°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in milk and vanilla. In another bowl, whisk flour, baking soda and salt; add to creamed mixture alternately with bananas, beating well after each addition. Fold in pecans., Transfer to a greased 9x5-in. loaf pan. 1 egg, (slightly beaten)
2 cups ripe bananas, (mashed (approximately 4 medium bananas))
1 tsp baking soda
1 3/4 cup all-purpose flour
1/2 cup pecans, (chopped)

Steps:

  • Preheat oven to 350° and spray a 9 x 5 baking dish with a non stick spray. Set aside.
  • In a medium mixing bowl, beat butter and sugar until creamy.
  • Add egg and lightly beat then add bananas and stir until incorporated.
  • Mix baking soda and flour just until combined.
  • Lastly, add chopped pecans and stir.
  • Place into prepared baking dish and bake for 50-60 minutes or until toothpick comes out clean.

My father loves bananas and pecans, so for his birthday this year I whipped up a special treat for him: two of his favorites, wrapped into one, and made into individual loaves so he could easily freeze the extras and have his birthday banana bread whenever he wanted. (Coconut extract helps to bring out the fresh banana flavor - trust!) The flavor is better a day later.

Watch the nuts carefully as they bake, they burn quickly. Once toasted, set the nuts aside to cool to room temperature.
  • Raise the oven temperature to 350 degrees F (175 degrees C). Spray 2 mini loaf pans with cooking spray.
  • Combine the toasted pecans, flour, baking soda, baking powder, and salt in a bowl. In a large bowl, mix the bananas, sugar, eggs, vanilla and coconut extracts, lemon juice, and butter together with a fork or an electric mixer on low speed. Stir the flour mixture into the banana mixture, and pour the batter into the prepared loaf pans, filling them about 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the middle of a loaf comes out clean, about 30 minutes. Let the loaves cool in the pans for 5 minutes before turning out onto a rack to finish cooling. Wrap cooled loaves in plastic wrap.

3 very ripe bananas, mashed

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour a 9-by-5-inch metal loaf pan.
  • Whisk the flour, sugar, baking soda, salt and cinnamon together in a large bowl.

1¾ cups all-purpose flour, spooned into measuring cup and leveled-off
¼ teaspoon salt
1½ teaspoons baking powder
1 stick (½ cup) unsalted butter, melted
¾ cup plus 2 tablespoons sugar
2 large eggs
1 cup very ripe bananas, mashed with a fork until smooth (from about 3 bananas)
1 teaspoon vanilla extract
½ cup shredded unsweetened coconut
½ cup pecans, toasted and chopped (see note below)

Steps:

  • Preheat the oven to 350 F. Grease a 9 x 5-inch loaf pan.
  • In a medium bowl, whisk together the flour, salt, and baking powder.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the melted butter and sugar until just combined. Beat in the eggs, bananas and vanilla. Add the flour mixture to the bowl and mix on low speed until just combined. Do not over-mix. Gently stir in the coconut and nuts (the batter will look lumpy).
  • Pour the batter into the prepared loaf pan and bake for 50-55 minutes, until a tester inserted into the center is relatively clean (tester should not be totally dry; the bananas keep it moist) and the top is golden brown. This recipe is a twist on the classic banana bread recipe. Ours is a healthy and moist banana bread made with simple natural ingredients like crunchy pecans and maple syrup. There is no refined sugar added.

2 bananas (well-ripened)
¼ cup butter (melted)
1/3 cup canola oil
¼ cup yogurt (plain)
2 eggs
1 tsp vanilla extract
¼ cup maple syrup (or honey)
1 ½ cup flour (all-purpose or wheat)
1/2 cup pecans (chopped in small pieces)
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
pecans (halved or chopped)

Steps:

  • Place each ripe banana in a bowl and mash them well.
  • Prep an 8 1/2″ x 4 1/2″ loaf pan. You can simply grease the pan with oil or line it with parchment paper.
  • Preheat the oven to 350 F (175 C).
  • Put a quarter cup of butter in a microwave-safe bowl and melt it for 20 seconds or so.
  • In a mixing bowl, combine the melted butter, 1/3 cup of oil, and 1/4 cup of plain yogurt. Add the two eggs, one at a time, and mix well with a whisk. Add the 1/4 cup of maple syrup and teaspoon of vanilla extract. Combine well.
  • In another bowl, sift together the 1.5 cups of flour, 1 tsp of baking powder, 1/2 tsp of baking soda, and 1/4 tsp of salt.
  • Add the wet ingredients into the bowl with the dry ingredients, and mix with a spatula.
  • Add the mashed bananas and combine gently. Stir in the chopped pecans.

  • Bake for 40 to 50 mins, or until light golden brown, and a toothpick comes out clean.

Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350 degrees F and lightly grease a 9 by 5-inch loaf pan.
  • In a large bowl, combine the flour, baking soda, and salt; set aside.
  • Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for a good 3 minutes; you want a light and fluffy banana cream. Add the melted butter, eggs, and vanilla; beat well and scrape down the sides of the bowl. Mix in the dry ingredients just until incorporated; no need to overly blend. Don't get nervous if the banana bread develops a crack down the center of the loaf; that's no mistake, it's typical. Rotate the pan periodically to ensure even browning.
  • Cool the bread in the pan for 10 minutes or so, and then turn out onto a wire rack to cool completely before slicing. Toast the slices of banana bread, dust with confectioners' sugar, and serve.
