2 eggs
1/3 cup melted butter
1 ounce milk
2 mashed bananas
2 cups bread flour (I just used all-purpose flour)
2/3 cups sugar
1.25 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 c . chopped walnuts
1/2 c . chocolate chips

Steps:

  • Pour eggs, butter, milk and bananas into the bread pan and set it aside.
  • In medium bowl stir together all dry ingredients.
  • Add dry ingredients to pan
  • Press "Quick Bread" setting on your machine
  • When cycle is finished, remove bread from pan and place on a cooling rack

2 bananas
1 cup sugar
2 eggs
3 tablespoons milk
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup butter, melted
1 teaspoon vanilla
1/2 cup milk chocolate chips
1/2 cup walnuts, chopped (optional)

Steps:

  • Beat eggs, sugar, and bananas until fluffy (5 min).
  • Add 3 T of milk and continue beating 1 minute.
  • Combine flour, salt, soda, and baking powder.
  • Add dry ingredients slowly to mixture until blended.
  • Melt butter in microwave and add to mixture. Blend.
  • Add vanilla, chocolate chips and NUTS.
  • Bake 350 for 60-65 minutes. Check with a toothpick. Cooking times are much shorter with muffins. Check after 20-25 minutes and they should be done.

3 ripe bananas
⅓ cup butter, melted
½ cup sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
salt, to taste
1 ½ cups all-purpose flour
½ cup mini chocolate chips

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a bowl, add the bananas and mash until smooth. Add in the melted butter and stir until well combined.
  • Add the sugar, egg, vanilla, baking soda, salt, and flour, and stir until the batter is smooth.
  • Add in the chocolate chips and pour the batter into a greased loaf pan. Top with additional chocolate chips.
  • Bake for 50 minutes to an hour, or until a toothpick comes out clean.

Steps:

  • Lightly grease the bottom only of a 9 1/4 by 5 1/4 by 2 3/4 inch loaf pan.
  • Preheat oven to 350 degrees.
  • In large mixing bowl, combine all dry ingredients: flour, sugar, baking powder, salt and baking soda.
  • Add butter, eggs and bananas and blend well on medium speed of mixer.
  • Stir in small chocolate chips and walnuts.

1 1/2 cups all-purpose flour
2/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
2 extra large eggs, lightly beaten
1/4 cup sour cream
1 teaspoon vanilla
2/3 cup mashed banana
1/3 cup pecans or 1/3 cup walnuts, finely chopped

Steps:

  • Into baking pan measure flour, sugar, baking powder, soda, and salt.
  • Add oil, eggs, sour cream, and vanilla.
  • **(follow your machine's instructions).
  • Insert pan securely into unit; close lid.
  • Select"Cake" setting; press"Start."**.
  • When beep sounds after about 5 minutes, add mashed banana and nuts.
  • Press"Start" again.
  • The"Complete" light will flash when cake is done.
  • Using hotpads, remove pan from unit.
  • Turn bread out onto cooling rack.
  • Cool; slice thinly to serve.
  • Makes 1 5x4-inch loaf.

  • Select "Cake" setting, and press Start. Cake cycle time may vary with machines, but should be about "50 minutes". Test bread for doneness, insert a toothpick into center top. Remove toothpick. If bread is done, toothpick will come out clean. If there is dough on toothpick, reset machine on "Cake" setting and continue to bake an additional 10 to 15 minutes. Test again with toothpick to assure the bread is completely baked.
  • Remove pan from machine, but allow bread to remain in pan for 10 minutes. Remove bread to cool completely on a wire rack.

1 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon kosher salt
2/3 cup granulated sugar
6 tablespoons butter
2 large eggs
1/2 teaspoon pure vanilla extract
1 1/4 cups ripe bananas
1/2 cup mini chocolate chip

Steps:

  • Preheat oven to 350°F (176°C). Generously butter a 9-inch loaf pan.
  • Combine flour, baking soda, baking powder and salt in a medium bowl. Reserve.
  • Put sugar and butter into the Cuisinart Stand Mixer mixing bowl. Attach the flat mixing paddle and mix on speed 2 until creamy, about 2 minutes. Scrape the entire bowl.
  • Continuing on speed 2, add eggs, one at a time, and mix until each is incorporated. Scrape the entire bowl. Add vanilla extract and then banana and continue to mix until banana is well combined, about 1 minute. Scrape the bowl.
  • Add flour mixture and mix until just combined. Scrape the bowl well and add chocolate chips and mix to fold. Transfer the batter to the prepared loaf pan.
  • Bake until deep golden brown and a cake tester comes out clean, about 40 to 50 minutes. Remove from oven and cool on wire rack until cool to touch; remove from pan and allow to cool completely.
